During the past several weeks, we have held special events recognizing the dedication and hard work of our Legacy members and Past Presidents. These individuals helped make the club what it is today. What will the club look like in the future? How will you chose to leave your mark on the Athletic Club? Here are a couple of ways to do so:

An effective and engaging committee system is a key component in shaping the future of our club. By becoming involved in a committee, you are taking an active role in offering ideas, feedback and important opinions on club business and how we move forward. The committee structure at the ACC is well-developed and well-managed, which allows members to ask questions while searching for a good fit and then outlines the steps to follow to apply for committee involvement once that fit has been identified. Becoming active in the club is a benefit of membership that is available to you any time! Please reach out to Mary Alvarado or Sarah Favara in the Membership Office should you be interested in learning more.

Another active role our members play is that of “Blue Wings.” The Blue Wings program was established in 2012 by the Membership Committee to aid in the club’s retention efforts by engaging new members at the start of their membership tenure. Meet-ups between a new member and their Blue Wing have become a significant part of the orientation process. Currently, over 30 members are active Blue Wings who share their membership experience and insights with those who are in the early stages of “learning the ropes.” If you’d like to learn more about the Blue Wings program, or if you’re an active Blue Wing and would like to share your experiences with others, please consider joining us on Thursday, August 13 for the Blue Wings Reception. See page 5 for details.

Regardless of the season, the discovery of something new is appreciated year round. A new idea for a vacation, a new piece of music or a phone to wear on your wrist - these things aren’t world changing, but they keep our world fresh. At the club, the undercurrent that drives us forward is our desire to create new discoveries for members. It could be a new exercise, a member event, or a new wine, pizza, coffee, and so on. There are many ways we work to keep the energy of discovery coming throughout the ACC. The food and beverage area, however, is probably the most fertile for discovery of simple pleasures.

When considering how to keep the wheels of interest in our food offerings turning, there are competing interests. While some value traditional club fare, others are looking for healthful food menus, and still others may see the absence of modern American fusion a deal breaker if it’s missing from our menu. These preferences reflect the ACC membership and also the challenge that Chef John Wolfe has been working with for four years.

In addition to balancing the varied tastes, Chef Wolfe has to make judgment calls on quality all the time. The decisions are made to bring in high quality products and are typically, maybe mistakenly, not broadcast to you. In the coming communications, we plan to do a better job of letting you know the results of these decisions. As a small example, if you’ve ordered salmon at The ACC in the past 3 years, you’ve eaten Skuna Bay Salmon. This is fish that is farmed in a natural Pacific Ocean environment by craft farmers of Vancouver Island. Their practices and the lengths they go to deliver a sustainable, open water harvested, yet ecologically mindful product are extraordinary and unique in North America. The ACC is among a long list of acclaimed restaurants from Chicago to Las Vegas and San Francisco that sources salmon through Skuna Bay. This example serves as just one of the many among our food options. In future ACCent features, look for insights into our cheese choices, our sourcing partnerships with Ohio farmers, and our continued efforts toward seasonal offerings.

The club keeps even more preferences in mind when building options for our beverage programming. Our wine list has seen a dramatic lift over the past year. New World wine enthusiasts will revel in the improvements put in place by AGM Mike Delcour. I should emphasize that our current wine options are a gold mine for enthusiasts. On the flip side, our beer program has been running at full speed for about a year now. Taking advantage of Ohio’s lopsided talent in craft breweries, the club’s monthly Tap Takeovers (on the last Friday of each month) have been successful with partners such as Fat Head, Homestead, and Rhinegiest to name a few. Our new F&B Director Ben Paulson has been working to propel this program even more. Check out Ben’s letter on sour beer and his idea for a sour beer dinner that’s coming up (see page 7).

My notes here are just the tip of the iceberg when it comes to food and beverage at The ACC. As promised, you will get to know more about the operations in future ACCent articles. Decisions are being made every day at the club to provide you with new experiences – we hope you enjoy the path to discovery!

When deciding on a summer drink, most people will gravitate towards Champagne, a tall gin and tonic, or maybe an ice cold Budweiser. All are delicious in their own right, but in my mind, summer has not officially began until I have enjoyed funky, stinky, and tart sour beer.

If you are unfamiliar with sour beer, here’s some quick information to get you started on your sour beer journey. Sour beers have been brewed for over 100 years primarily out of Belgium, Brussels, and Germany. When making sour beers, brewers intentionally use bacteria to spoil the beer, using the same microbes used to make yogurt and salami. The bacteria creates sharp and sour flavors that separate sour beers from the rest of the brewing world. Many sours are fermented in wine barrels, bringing new depth to an already unique beer style. Michaeleen Doucleff of National Public Radio once wrote that sour beers have, “the complexity of a wine and the zing of a Sour Patch Kid.”

Here at the ACC, we just received our first shipment of two sour beers from Trinity Brewing Company out of Colorado Springs. The two sours we received, the “TPS Report” and “Red Swingline” are very highly rated: “TPS Report” received a gold medal from the Great American Beer Festival in 2009 and a bronze in 2012, and“Red Swingline” was put on Draft Magazine’s “Top 25 Beers in The World” in 2013. So come down to The Booth, order a pizza, and crack a sour...summer is finally here.
