Why should you be eating black rice?
Just a spoonful of black rice bran contains more health promotinganthocyanin antioxidants than are found in a spoonful of blueberries, but with less sugar, more fiber, and morevitamin E. Many studies have shown that these antioxidants can reduce blood levels of LDL “bad” cholesterol andmay in fact fight heart disease. Not only does black rice have a rich flavor, but it’s super healthy to boot!
Salmon with Broccoli and Black Rice Recipe
Ingredients for the salmon:
2 salmon fillets1 tablespoon coconut oil1 tablespoon soy sauce
Ingredients for the broccoli:
2 cups broccoli1/2 tablespoon coconut oil1 tablespoon oyster sauce1 tablespoon waterpinch of pepper to taste
Ingredients for the black rice:
1 cup black rice1 3/4 cup water1 tablespoon sesame oil2 teaspoons minced garlic2 teaspoons minced ginger1/2 cup shredded carrots1/4 cup chopped onions
* I’m not a fan of overly salty foods so add soy sauce and oyster sauce to taste.
Directions:
Start by putting 1 3/4 cup of water into a pot with the cup of black rice. Bring it to a boil, cover the pot, and simmer

on low for about 30 minutes. While the rice is simmering mince the garlic and ginger, chop the onions, and shred thecarrots. Add 1 tablespoon of sesame oil to a pan and throw in the garlic, ginger, and onions. Heat on medium for afew minutes (I like my onions to have a stronger flavor and a bit of crunch, but if you like yours browned leave themin longer), then throw in the carrots for about 1-2 minutes.
Set this aside in another dish and place 1/2 tablespoon of coconut oil back in the pan for cooking the broccoli (I liketo wait till I’ve flipped the salmon over once). I like my broccoli to still be a little crisp and firm so I leave it in forjust a minute or two before adding a mixture of 1 tablespoon water and 1 tablespoon oyster sauce to the broccoli. Stirand let cook for another minute or two.
Warm a large nonstick skillet with 1 tablespoon of coconut oil over medium-low heat. Add the salmon fillets andcook for a few minutes on each side. You can drizzle the soy sauce over the salmon but I like to mix it into thecoconut oil once it has melted.
Serve and enjoy!
