In a 14-in nonstick saute pan over medium heat, cook salmon for 5 minutes on each side. Heat bri- oche buns in 350° oven for 2 minutes. Spread green goddess sauce on top and bottom of heated buns. Place salmon burger on bottom of each brioche bun. Top with broccoli slaw and roasted red peppers. Dollop any extra green goddess sauce on top of roasted red peppers and serve on a heated plate. Green Goddess Sauce INGREDIENTS ¾ c mayonnaise ¼ c sour cream 3 T chives fresh, chopped 2 T parsley, chopped 1 T capers 2 T lemon zest 1 t lemon juice, fresh tt salt and pepper PREPARATION In a medium bowl, mix together mayonnaise, sour cream, chives, parsley, capers, lemon zest and lemon juice; season to taste with salt and pepper.

Salmon Burger with Green Goddess SauceServings: 6

INGREDIENTS

6 ea Chef’s Line™ salmon burgers

canola oil pan spray

6 ea Hilltop Hearth® brioche buns

1 c green goddess sauce (see right)

¾ c broccoli slaw mix, dry

¼ c roasted red peppers, chopped

PREPARATION In a medium bowl, mix together mayonnaise, sour cream, chives, parsley, capers, lemon zest and lemon juice; season to taste with salt and pepper.
