Behind the certifications and labels, we are looking to create human relationships with all the farmers we are working with —because, at the end, all of our producers are first and foremost farmers—to support an idea of farming respectful of the future. Protection of the biodiversity, observation of the natural cycles, enlightened agriculture without the abuse of synthetic chemicals, human-sized farms… these allow our producers to vinify, brew, and distill complex, flavorful ingredients with the fewest additives possible, and to encapsulate a real transparency of place, time and culture in a glass of wine or a cup of tea. ROUGE TOMATE CHELSEA BEVERAGE LIST

If you are what you eat, you are also what you drink. And if today we are paying more and more attention to

the origin of our food, we may still overlook where our beverages come from… At Rouge Tomate Chelsea, the

core of our program is to offer you tasty, complex, exciting wines, spirits, liquors, beers, teas, coffees and any

liquid you can dream of drinking from the most careful, dedicated, responsible producers. Behind the

certifications and labels, we are looking to create human relationships with all the farmers we are working with

—because, at the end, all of our producers are first and foremost farmers—to support an idea of farming

respectful of the future. Protection of the biodiversity, observation of the natural cycles, enlightened agriculture

without the abuse of synthetic chemicals, human-sized farms… these allow our producers to vinify, brew, and

distill complex, flavorful ingredients with the fewest additives possible, and to encapsulate a real transparency

of place, time and culture in a glass of wine or a cup of tea. This is what we are looking for. By our choices, we

are engaged citizens of this world, and it is not only good for the planet, it is also good for us, and good for the

palate! The whole team is excited to share all of these stories, and to cheer with you.

ORGANIC

Organic wines are produced using methods that do not involve modern synthetic inputs such as synthetic

pesticides and chemical fertilizers, do not contain genetically modified organisms, and are processed using a

minimum amount of authorized additives. Low amounts of added sulphites are generally acceptable. Due to

the various food standards agencies throughout the world, there are many different guidelines and regulations

that determine whether a wine can bear an organic seal in a particular country.

BIODYNAMIC

Biodynamic viticulture is a method of organic farming that originated out of the work of Rudolf Steiner in

1920’s Europe. It considers the vines and the winery as a part of the larger environment, balancing the soil,

plants and animals in a self-nourishing, living system. Methods unique to biodynamic farming (not found in

organics) include the use of fermented herbal and mineral preparations as compost additives and the use of an

astronomical sowing and planting calendar. Very few additives are used in the grape growing and winemaking.

Very low amounts of added sulphites are generally acceptable. There are independent certification agencies for

biodynamic products, most of which are members of Demeter International.

NATURAL

There is no official definition or classification system for natural wines. Simply put, natural wine is just

fermented grape juice. No added ingredients whatsoever. While you may not be able to taste the difference

between an organic/biodynamic wine and its mass-produced equivalent, you most certainly will find natural

wines to be unique in both nose and palate.

SAKE

All bottles are 720ml unless otherwise noted. The sakes by the glass are 3 ounces.

NV Senkin “Tsurukame 19” Junmai Daiginjo Muroka Nama Genshu Kiokezake, Tochigi-ken 98

This is very refined and delicate because a full 81% of the rice has been milled away.

NV Huchu Homare “Taiheikai” Tokubetsu Junmai, Ibaraki-ken 8 / 55

Named after the Pacific Ocean near which this brewery lies. Light and fruity, and finishes with a touch of earthiness. We offer this chilled, but it

can also be enjoyed at room temperature.

NV Saiya Shuzou “Yuki No Bosha” Yamahai Junmai, Akita-ken 55

Slightly gamey, with hints of roasted nuts and honey. This can be enjoyed chilled or at room temperature.

NV Shichi Hon Yari Shizuku Junmai Daiginjo, Shiga-ken 125

This is a family-run brewery managed by the 15th generation. It is a particularly special product made essentially from free-run – or “drop” –

sake. It’s light and ethereal, with layers of freshness and complexity woven together.

NV Terada Honke “Katori 90” Junmai Muroka, Chiba-ken 48

Because only 10% of the rice was milled away, you’re essentially drinking liquid rice. Oily and luscious.

1999 Inoue Gomei “Biden” Junmai Yamahai Koshu, Fukuoka-ken 100

Unique because of its age, this exhibits savoury caramel flavours and is the true definition of the notion of umami.

2002 Uehara Shuzo “Taiko No Izanai” Yamahai Muroka Nama Genshu 70

Shinsōsui-jikomi Shizenshu Koshu, Shiga-ken

With organic rice and no added yeast, this brewery has returned to traditional brewing. There is a beautiful, enormous wooden press and

equally regal wooden rice steamer. It was made with seawater, and needed more than 13 years before the salt softened.

SAKE-BASED DELICIOUSNESS

NV Heiwa Shuzo “Tsuru-Ume” Yuzushu, Wakayama-ken 7 / 50

Half yuzu juice, this is the best lemonade you’ve never had.

NV Inoue Gomei “Mii No” Junmai Yamahai Umeshu, Ibaraki-ken (300ml bottle) 7 / 20

Slightly funky, slightly sweet and slightly sour, and great over ice.

WINES BY THE GLASS

SPARKLING 2012 Xarel-lo, Cava, Júlia Bernet, “Ingenius”, Catalunya, Spain 15

Precise, bone-dry traditional method sparkling from the most powerful, herbal, and mineral of the region’s three varieties.

[2011] Pinot Noir / Chardonnay, Champagne, Ruppert-Leroy, "Fosse-Grély", Brut Nature, Aube, France 19

A passionate couple dedicated to the observation and respect of nature—a beautiful blend, floral, savory, extremely complex.

2015 Loire Blend, Rosé Pét’ Nat, Domaine de la Grange Tiphaine, “Rosa, Rosé, Rosam”, Loire Valley, France 14

80 year-old vines go into this refreshing, slightly off-dry, lightly effervescent rosé.

NV Chardonnay / Pinot, Rosé Champagne, P. Doquet, "Anthocyanes ", Brut 1er Cru, Cote des Blancs, France 26

One-third pinot & two-thirds chardonnay grown between Le Mesnil and Vertus, a vinous example made by a poet of Champagne.

WHITE 2015 Chinuri, Iago’s Wine, Kartli, Republic of Georgia 11

Discover the beauty of Georgia’s 7,000 years of winemaking with one of its best ambassadors: white tea, orange peel, ginger.

2012 Melon de Bourgogne, Jo Landron, “Melonix”, Muscadet, Loire, France 12

The no-sulfur version of Jo’s Muscadet, made only in the very best years: textural like a Burgundy with melon’s briny touch.

2014 Sylvaner, Stefan Vetter, Franken, Germany 13

Sylvaner is a misunderstood grape, but in Franken, Stefan shows what it can be: fresh, earthy, and saline.

2014 Albillo, Alfredo Maestro, “Lovamor”, Castilla y Leon, Spain 14

From 105 to 125 year-old vines of a ubiquitous variety usually relegated to blending, here allowed to express itself: rich, full, golden.

2013 Gewürztraminer, Bloomer Creek, “Dry”, Finger Lakes, New York 14

From the pioneers of minimal-intervention farming in the Finger Lakes, unmistakable rose-petal florals and cool-climate freshness.

2012 Garganega, Giovanni Menti, “Riva Arsiglia”, Gambellara, Veneto, Italy 15

The Menti family dedicated its organic work to reveal the complexity of garganega, its honeysuckle touch and its density.

2014 Chardonnay, Matthiasson, “Linda Vista Vineyard”, Napa Valley, California 17

Steve is probably the most thoughtful farmer in California; his chardonnay combines richness and elegance with length.

2014 Sauvignon Blanc, Vincent Gaudry, “Tournebride”, Sancerre, France 17

This is what sauvignon in Sancerre should taste like: aerial, slightly critusy, with a hint of basil leaf and a salty acidity.

2014 Manseng / Courbu, Camin Larredya, “La Virada”, Jurançon Sec, France 24

In the south-west of France grows one of its most underrated grapes: manseng. Give it a chance; you won’t be disappointed.

CHENIN, CHENIN, CHENIN 2009 Chenin, Coulée d’Ambrosia, “O2 de Vigne”, Anjou, Loire Valley, France 14

A very rare occasion to taste a chenin aged under flor like a Jura Vin Jaune – orange peel, caraway, caramelized walnut.

2014 Chenin, Stéphane Bernaudeau, “Les Onglés”, Anjou, Loire Valley, France 15

A tiny, 3 hectares estate where schist meets limestone. Riper, earthier, with more dried mushroom, hay, and spice.

2014 Chenin, Domaine aux Moines, Savennières-Roche-aux-Moines, Loire Valley, France 17

Savennières is very special place for Chenin, and Tessa crafts some of the best examples of this dense, slightly tannic white.

Page 10: ROUGE TOMATE CHELSEA BEVERAGE LIST - The … ROUGE TOMATE CHELSEA BEVERAGE LIST If you are what you eat, you are also what you drink. And if today we are paying more and more attention

10

JAUNE 2007 Savagnin, Stéphane Tissot, Château-Chalon, Jura, France (3 oz) 25

The region’s traditional specialty, salt and spices and zest and fruits and flowers in a bottle.

ROSÉ 2015 Loire Blend, Domaine de la Grange Tiphaine, “Tournage Riant”, Loire Valley, France 11

Trying to capture summer in the glass, this is a perfect dry rosé with the backbone to pair with our cold-weather menu.

RED 2014 Cinsault / Syrah / Grenache, Mas Coutelou, “Cuvée Rouge Tomate”, Languedoc, France 9

Juicy, unsulfured southern blend bottled exclusively for us. Jeff Coutelou has been committed to organics for three decades.

2014 Cabernet Franc & Sauvignon, Mark Angeli, “P’tit Rouge”, Loire Valley, France 11

Pioneer in his region, Mark Angeli’s climate and volcanic soils produce wild, dark-fruited, herbal cabernets on the lighter side.

2014 Gamay, Eminence Road Winery, Catskills / Cayuga Lake, New York 13

Savory and earthy, with a dancing strawberry leaf note, a tribute to Loire Valley gamay with a New York twist.

2014 Barbera, Carussin, “Asinoi”, Barbera d’Asti, Piemonte, Italy 14

Bruna Ferro and her sons are crafting this crunchy, energizing, unoaked barbera in their farm where they also raise donkeys.

2014 Jura Blend, Didier Grappe, “Les Insouciantes”, Côtes-du-Jura, France 15

Didier deserves all the praise for his tremendous vineyard work allowing him to make a wine like this: floral, refined, so complex.

2011 Pinot Noir, Renaud Boyer, “Les Riaux”, Burgundy 16

A talented young vigneron making lower-intervention red Burgundy with a light touch in a cool vintage—no sulfur.

2015 Malbec, Mike Roth / Lo-Fi Wine Company, Santa Ynez Valley, California 16

There is not a lot of malbec in California, but this one is delicious: dark, ripe fruit, no oak, easy to drink on its own or with food.

2013 Sangiovese, Margarita & Francesca Padovani / Fonterenza, Rosso di Montalcino, Tuscany, Italy 20

Imagine a farmhouse in the rolling hills of Montalcino…you can taste it in this complex red, with its distinctive grippy tannins.

ON TAP

WINE & VERMOUTH [NV] Chardonnay, Chris Bates, MS - Element Winery, “This is not a Sherry”, Finger Lakes, New York (3oz) 5

The one-time, somewhat mysterious birth of a barrel of Finger Lakes chardonnay that tastes exactly like Manzanilla sherry.

[2016] Raspberry, Uncouth Vermouth, Red Hook / Saugerties, New York (3oz) 7

Over thirty locally foraged & sourced botanicals go into this bone-dry vermouth. Not just notes of raspberry fruit, but

raspberry leaf and root!

BEER – Arrowood Brewery, Accord, New York Arrowood is a true farmstead brewery about an hour and a half outside of the city: they grow hops and rye, keep bees and

ducks, and source what they don’t grow for their beers from local farms and an organic malthouse. We’re proud to be the

first restaurant in Manhattan to pour them on draft.

“Farmhouse”, American Saison 8

“Sugar Pie”, Pumpkin Ale 9

BEER – Grimm Artisanal Ales, Nomadic, New York “Cube Cuvée #2: Orange Bitters Barrel”, Barrel Aged Sour Ale 11
