HISTO RY

At the end of the 18th century, the busy streets of Jerez de la

Frontera were proof of the bustling activity in the city, which was

thriving thanks to the exports of its renowned wines.

The wine sector’s boom attracted merchants from near and

afar. However, it was a Spaniard, Juan Sánchez de la Torre, who

established the foundations of the firm Sánchez Romate Hermanos,

one of the few remaining wineries in the Jerez Designation of Origin

which is still in the hands of local owners.

In addition to achieving market recognition for the quality of his

wines, Juan Sánchez de la Torre soon earned the appreciation of his

fellow Jerez inhabitants: this wine-producer was restless, educated

and a man of his time – the Age of Enlightenment – who lent firm

support to progress in education and the arts in Jerez.

Over time, the winery grew and adapted to the successive technical advances

that were taking place while maintaining their respect for traditional methods.

Over a century after its founding, the firm reached a milestone when in 1887

the fourth generation of the Sánchez Romate decided to create an exclusive

brandy for the family and their closest circle of friends. This was the beginning

of Cardenal Mendoza Solera Gran Reserva, the firm’s flagship brand.

While maintaining their independence up to today, the winery has witnessed

other important events during its history. For example, in 1909 they were

appointed as Official Purveyor to the House of Lords in the United Kingdom and

shortly afterwards, in 1917, they were appointed as Official Purveyors to the

Sacred Apostolic Palace of the Vatican.

Today, the wines and brandies of Sánchez Romate maintain their international

spirit, with a firm commitment to expansion across the rest of the world.

SPIRITFor over 200 years, the firm’s wines and brandies have maintained an open and proudly cosmopolitan

spirit without losing sight of the traditional roots of their origins.

Sánchez Romate employ painstakingly efficient wine-making techniques, which start with the white

albariza soil, western Andalusia’s sunshine and air, the Palomino, Airen and Pedro Ximénez grape

varieties and a unique microclimate.

All stages of the production process respect the traditional methods: ageing in American oak casks,

brandy distillation in copper stills and the characteristic steps and ladders system.

In the peaceful atmosphere of the wineries, the wine producers recall the ancient wisdom time and

again.

The unique production methods are combined with an ongoing modernisation process. Sánchez

Romate’s installations and production processes have been gradually modernised with a fundamental

objective in mind: to guarantee the quality of their wines and brandies.

From the grapevine to the bottle, the firm is committed to the excellence of their products and

service, guaranteeing highly appreciated organoleptic qualities, maintaining a close relationship with

their clients and offering personalised attention.

With these values and with a strong exportation impetus to share this quality with the rest of the

With evocative names such as Soportales (Arcades), Viñas (Vineyards) or La Sacristía (The Vestry), Sánchez Romate’s different ageing rooms comprise a well-designed complex, as if it were a city in itself within the city of Jerez, the origin of the firm’s wines and brandies and the place which gives them their name – vino de Jerez, or Sherry wine.

Jerez de la Frontera lends personality to the wine. The city’s energy stems from centuries of passionate wine tradition. Surrounded by Europe’s southernmost vineyards, the history of Jerez is the history of its wineries, bright white limestone soil and copper stills.

How did this all begin? Over 3000 years ago, the Phoenicians who disembarked in the Bay of Cádiz brought the first vines with them. These vines adapted perfectly to the fertile limestone soil that is as white as the sunshine which drenches the area. Later civilisations – Romans, Visigoths and Arabs – extended the vineyards under a dry, sunny climate that received the refreshing caress of the sea breeze.

In Sherish – the ancient Muslim name for Jerez – they experimented with the first distillations to make perfumes. Later, these processes were consolidated in Christian Xerez in the 14th and 15th centuries. It was then that the wines of Jerez began to gain international acclaim, as they began to earn fame across Europe. Over time, merchants and wine producers who were attracted by Jerez’s potential flocked to the city from all over, founding wineries that are still trading today. Sánchez Romate is one of the most emblematic of them.

Aside from its renowned wines, Jerez is also the birthplace of flamenco and horse shows, late Gothic convents and churches as well as 18th and 19th century bourgeois architecture. A stroll through the city, along streets lined with lilac and orange trees, stimulates your senses and helps to understand the magic of its most universal gifts, the wines and brandies of Jerez.

CARDENALMENDOZAIn 1887 the owners of Sánchez Romate Hermanos began

to make a unique brandy for their own consumption. The

quality soon earned increasing fame and the winery decided

to market it with the name Cardenal Mendoza.

This name pays tribute to Pedro González de Mendoza

(1423-1495), an historic figure who played a crucial role

in the conquest of the Muslim kingdom of Granada and

especially in the discovery of America, as he mediated on

behalf of Christopher Columbus’ project before the Catholic

Monarchs.

CLÁSICO Bright, transparent and coloured dark mahogany.

Round, clean, elegant with a reminiscent aroma of

wine. Long, warm and balanced on the palate, with

no sharpness. It has personality, a harmony of subtle

flavours followed by an intense finish of raisins and

plums.

This is Cardenal Mendoza Clásico, a Solera Gran

Reserva brandy made from a selection of the finest

distilled holandas, or wine spirits, which are aged using

the traditional “Solera y Criaderas” system. The casks

used to age Cardenal Mendoza, which are previously

treated with Oloroso and Pedro Ximénez sherry, make

up one of the largest Solera Gran Reserva ageing cellars

– a guarantee of this brandy’s age and quality.

LUJO The first Cardenal Mendoza, reserved only for the

consumption of the proprietor’s family and their closest

friends, was kept in beautiful, fine crystal decanters.

A few years ago they recuperated this original bottle for

the Lujo (luxury) brandy, especially created for the most

exclusive occasions. The transparency of this fine bottle

allows for maximum enjoyment of the characteristic

mahogany tones that make this Solera Gran Reserva so

singular.

decades.

NON PLUS ULTRA In the 70s, shortly before the bicentennial of Sánchez

Romate Hermanos, 38 casks of Cardenal Mendoza were

reserved to commemorate the event.

This limited reserve gave birth to Non Plus Ultra, an

inimitable brandy of dark mahogany colours, sleek and

exciting. The aromas, of clean distinction, offer hints of

raisins and plums and are reminiscent of old Oloroso sherry.

Dry and delicate on the palate, the subtle, persistent and

velvety flavours have nutmeg and dried orange aftertastes.

This brandy is, in short, a true privilege that accumulates

the winery’s history in an exclusive presentation.

Simply, a wine with the characteristics of our terroir,

from the vintage and an ageing of at least two years in

the barrel and bottle.

Bohórquez is a unique red made using the best

Tempranillo, Cabernet Sauvignon and Merlot grapes

from our vineyards, located on the Pesquera plateau,

on the Valderramiro slope (at an altitude of 900 metres

above sea level) and on the fertile lowlands of the right

side of the Duero, between Peñafiel and Pesquera. With

limey soil, we have opted for less production but higher

quality grapes, which will be transformed into elegant,

mineral wines.

That is the Reserva Bohórquez 2003, a vintage in which the conditions were rather severe, with abundant rains and snows in winter, drought and heat waves in the summer and temperatures reaching record-breaking highs.

The altitude of the vines, along with the rocky and calcareous soil, kept the amount of grapes produced to a low and thus the quality was considerably better.

After a qualitative analysis of the crop, a concentrated wine with intense colour was obtained.

39,000 bottles of Bohórquez 2003 and some 500 magnums taken from a specially blended tank were commercialised.

Bohórquez 2003 Reserva is no longer available, with the last 500 bottles being sold as a limited edition.

BOHÓRQUEZ 2004

Round, firm yet refined tannins, the red fruits, cherries and raspberries have a strong presence and the light oaky flavour from the barrel offers a sensation of balance. With an after taste of cacao with candied fruit. That is Bohórquez 2004, a year that had a long winter that lasted until March and April, with abnormally low temperatures for this period and a high rate of precipitation over the average for a normal year. Then the weather got back to normal in the second half of May with a progressive and accentuated rise in temperature.

The summer was dry and sunny, and stayed that way until the middle of October, which allowed us to obtain an excellent vintage.

But we still did a great qualitative selection of the grapes, as with every year, in order to create a wine full of perks and take full advantage of the good climatic conditions.

55,000 bottles and some 3000 magnums of Bohórquez 2004 have been commercialised from this vintage.

Long finish with notes of candied fruit, cacao and a good acidity. The Bohórquez 2005 was born in a year that can be described as hot and dry.

In the summer, the temperatures were very high and it barely rained, then luckily in September the contrast between the cold nights and the high daytime temperatures, together with scarce rains and the altitude of our vines, made it possible for us to harvest perfectly mature grapes.

The 2005 vintage has been classified Very Good by the CRDO.

This vintage will be on the market in September 2008, with 58,000 bottles of Bohórquez 2005, 2,800 magnums and 150 double magnums to be commercialised.

BRANDY DE JEREZ:WHAT IT IS AND ITS CHARACTERISTICS

Brandy de Jerez is a brandy made only in the Jerez area, in the south of Spain. Specifically, this area encompasses the towns of Jerez de la Frontera, El Puerto de Santa María and Sanlúcar de Barrameda.

It is characterized by a unique production and ageing process, different from that of any other brandy. The first step is to select quality white grapes in order to produce clean, fruity white wines, ideal for the next step: a meticulous distillation that yields the typical holandas – wine spirits with little alcohol.

The later ageing process employs the traditional steps and ladders system in oak casks of at least 1000 litres. The casks have been previously treated with sherry wine.

A BRIEF HISTORICAL NOTEThe Arabs, who had settled in Jerez in 711, were the first to introduce distilling techniques to obtain alcohol for perfume. Following the Christian reconquest of the area, culminated by Alfonso X, the Wise in 1264, this activity saw gradual development, although it is not easy to determine exactly when wine spirits were first aged in oak casks to produce the prized brandy.

What is certain is that in the 16th century there was already extensive production activity of wine spirits, as is evidenced by the importance of the “Wine Spirit Duties” in municipal documents from 1580.

In the 18th and 19th centuries, production and exportation to northern European countries was consolidated. Holland was the principal market and from there the brandy was exported almost all around the world. It is no surprise, then, that words such as “brandy” and “holanda” originated there. “Brandy” is the English adaptation of the Dutch term “brandewijn” (burnt wine), while the term “holanda” is surely derived from the name of this country, where most of this business was destined.

In the early 19th century the first English and French merchants began to arrive in Jerez. Along with Spaniards who had sharp commercial instincts, they began to establish the characteristic production and ageing processes of Brandy de Jerez and promote its sale.

LAND AND GRAPESToday, approximately 100,000 hectares of vineyards are devoted to the production of grapes used to make Brandy de Jerez. The main variety used is Airen, which produces a fresh, fruity and low-acid white wine with a high alcohol volume (10.5-13%) – in short, perfect for distilling. Although in lesser quantities, the Palomino grape (the primary sherry grape) is also used.

Average annual grape production reaches 300 million kilos, which is transformed into nearly 250 million litres of wine needed for distilling.

IN THE ORIGIN, THE WINEThe wines used to produce Brandy de Jerez must be wines fit for consumption, made from Palomino and Airen grapes, which yield musts with an alcohol volume of 10.5-13%.

To obtain one litre of brandy, three litres of wine must be distilled. These three litres of wine require four kilos of groups. One could say that to produce a litre of brandy we extract the best of the wine and discard two litres.

Brandy de Jerez is distilled from clean wines, i.e. those which have had the leas (bits of grape skin, seeds, etc.) filtered. This is due to the fact that clean Airen wines already have enough strength to transmit their characteristics to the wine spirit. Most other brandies distil their wines with the leas, in the French style, due to the low strength of the wine.

THE DISTILLATION PROCESSThis is a completely natural and very simple process, with which the desired substances are condensed from a raw material and those which are in detriment to the aroma or flavour are discarded. It basically consists of heating the substance to be distilled (in this case wine) in an appropriate receptacle and condensing the subsequent evaporation through cooling.

To distil Brandy de Jerez, two types of systems are used. The oldest is the traditional pot still, called an “alquitara” (another drawback to the days of Arab domination) in Jerez. It is made of copper, functions discontinuously and requires direct heat, for which fires using holm oak wood are employed. The pot still is used to obtain wine spirits with low alcohol volume (around 65%) – what are known as holandas – of high quality. In fulfilment of the Brandy de Jerez Regulatory Council’s regulations, the brandy must be composed of at least 77% wine spirits.

The other, more modern system employs column stills that function with continuous distillation, which is more efficient. These stills obtain alcohol volumes ranging from 70% to 94.8%.

In any case, the human factor plays an important role in achieving a quality distillation. This process could be regarded as a form of art, as it requires “nose”, controlling the pace of the distillation and experience.

Finally, it is important to point out that Brandy de Jerez does not require double distillation, unlike French cognac, for example. Cognac uses wine with a low volume of alcohol (7-8%). The first distillation yields a liquid with an alcohol volume around 35%; it must then be distilled again to obtain wine spirits with a volume of 85%.

THE WISDOM OF THE CASKSBrandy de Jerez must always be aged in oak casks (called “butts” in Jerez). This process allows a series of reactions to take place naturally, giving the brandy new organoleptic qualities that change its colour, aroma and flavour. Prolonged ageing also makes the brandy smoother on the palate.

The 500-litre oak casks used must be previously treated with sherry; that is to say, they must have contained one of the types of sherry wine for at least three years.

This differentiates Brandy de Jerez from those of the rest of Spain or other countries, where new casks are used. The oak gives that special personality which is appreciated in Brandy de Jerez’s organoleptic properties. These vary, depending on the type of wine that the cask has contained: fino or manzanilla (pale straw colours and very dry), amontillado (darker and dry), dry or sweet oloroso (even darker) or sweet wines such as Pedro Ximénez (very dark and sweet). Thus, the final brandy acquires the colour, aroma and flavour characteristics from that wines that the casks contained. These sherry casks are also used, for the same reasons, to age some of the finest whiskies in Scotland.

American oak casks from the Appalachian Mountains are traditionally used. This wood is less porous than other types of oak but the type of cut permits the wood to transfer just the right amount of its properties to the wines, and later the brandies.

THE “ANGELS’ SHARE”Cask ageing can take place, during the entire process or at the end, with the alcohol volume of final consumption. However, brandy is generally aged with a higher volume (50 to 60%), which allows the ageing process or the extraction of the characteristics from the wood to be more intense.

When the brandy is aged for longer periods of time, the alcohol volume is reduced to a certain extent, mainly due to evaporation. The Jerez climate makes this evaporation more intense, about 7% annually. In the world of brandy this evaporation is called “the angels’ share”

THE “SOLERA Y CRIADERAS” SYSTEM:UNIQUE IN THE WORLD The ageing process employed in Jerez is unique in the world and gives the brandies their special characteristics. It is a complex system called “steps and ladders”.

The traditional system of steps and ladders has been used for centuries in Jerez wine production. Later, the winemakers began to employ it in brandy ageing as well. This method consists of a series of brandy casks, organised by the age of the brandy they contain. The casks that hold the oldest brandy are called soleras (because they are the ones closest to the ground, or suelo). They are followed, in decreasing age, by the first criadera, the second criadera, and so on.

A small amount of brandy is extracted from the solera for bottling; this process is called the saca. The brandy extracted from the solera is replaced with the same amount from the first criadera, which is replaced with brandy from the second criadera, and so on. This procedure, known as the rocío, ensures uniform quality and characteristics for each brand.

One of the advantages of this system is a perfect uniformity of the brandies in the production process and in the final product. In addition, the constant transfer from one cask to another allows for greater aeration and oxidation of the brandies, which results in better ageing.

In the third place, it is important to emphasize that this is an ongoing process in which brandies of different ages are blended. The small amount of solera that goes out for bottling always contains a proportion of very old brandy that can reach sixty years of age. In fact, many soleras date from the 19th century.

Finally, the organoleptic evolution in this system is accentuated and it becomes more complex and interesting. The only drawbacks are the difficulty and cost involved.

Most other brandies are aged using what is known as the static system. The wine spirits are put in a container and allowed to stand for a certain period of time without being moved. Before bottling, a “coupage” is carried out, blending brandies from different containers that contain brandies of varied ages.

THE THREE CATEGORIES OF BRANDY DE JEREZThe Brandy de Jerez Regulatory Council establishes three types or categories of brandy, defined by their ageing period and their content of volatile substances:

- Solera: aged for a minimum of six months (the average is a year). It must have a volatile substance content of at least 200gr/hl of pure alcohol.

- Solera Reserva: aged for at least a year, although they are generally aged for two. Their volatile substance content must be a minimum of 250gr/hl of pure alcohol.

- Solera Gran Reserva: at least 3 years of ageing, with an average of eight, and a minimum volatile substance content of 300gr/hl of pure alcohol.

Generally, a brandy from a certain category may not go into a superior category by merely ageing for a longer period of time. From the beginning, brandies are produced as one type or another. This is achieved by selecting and distilling the finest wines for superior categories and depending on the proportion of the different wine spirits. In Solera brandies, this proportion is 50% wine spirits and 50% distillates; the Solera Reserva must have a proportion of 75% wine spirits and 25% distillates; and the Solera Gran Reserva must be made from 100% wine spirits.

However, a longer ageing period does not necessarily mean that the brandy is better. What is important is the balance and harmony amongst all its components and the elegance of the final product. Each firm produces their brandies with a certain type in mind, for which they select the corresponding wine, the distillation, the wine spirits, casks, system and frequency within the steps and ladders process, etc. When the brandy is finally bottled, it is done at its optimum age, as decided by the master oenologist.

If the casks are old but in excellent condition, notes of classical antique varnished furniture appear.

Flavours It is drier, and somewhat pungent tannin notes from the wood may still be detected. Less body than the older brandies. Complex flavours, but lighter due to the shorter ageing period.

Somewhat sweeter and heftier; there is less feeling of alcohol because it is more integrated in the rest of the components.

Unctuous and smooth, with some of the sharpness of the oak tannins blended with the smoothness of the oxidative ageing, whether it has been aged in fino or oloroso casks – more likely – or in Pedro Ximénez casks.

BRANDY IN THE BOTTLEIn the bottle, Brandy de Jerez does not improve nor does it deteriorate before it is opened. Once it has been opened, if the bottle is maintained with half of its contents at a relatively high temperature, part of the alcohol evaporates. This also leads to a higher concentration of sugars, so after seven or eight months the brandy can lose part of its flavours.

With a view to qualitative colour, using a decanter is not essential. It is simply an aesthetical question derived from the colour produced by ageing. The iodized, amber, mahogany and gold tones are more luminous thanks to the reflections produced by the crystal.

GUARANTEE OF AUTHETICITYThe Brandy de Jerez Regulatory Council is responsible for guaranteeing the quality and authenticity of the brandies. It also regulates the Designation of Origin and defends the general interests of Brandy de Jerez in Spain and internationally.

A Designation of Origin is given to those food and drink products whose principal characteristics are acquired due to their production in a certain geographical place or area. In the case of Brandy de Jerez, this personality is acquired from being produced and aged in the Jerez de la Frontera area.

Amongst Spanish brandies, only Brandy de Jerez has a Regulatory Council which guarantees its quality. In the rest of the world there are only two more: Cognac and Armagnac, in France.

Only producers and their brands which meet the requirements of the Designation’s Regulations may belong to the Regulatory Council and use the Designation of Origin. The regulations are approved and ratified by several official institutions: the Andalusian Regional Government, the Spanish Ministry of Agriculture and the European Union.

CONSUMING BRANDY DE JEREZThe perfect time to consume Brandy de Jerez – neat, in its purest form – is after a meal. Yet the truth is, and what is recommended, is that the best time to consume this brandy is when you fancy it.

Brandy is best consumed in a snifter, which is made of fine, transparent crystal or glass. It has enough space between the bottom of the glass and the base for our fingers. Moreover, its shape adapts to the palm of our hand; the heat which our hands give off helps bring the brandy to its ideal temperature, between 17º and 18ºC.

Another alternative is a sherry glass, used in Jerez wineries. These are ideal of wine sybarites, as the smaller size of this glass means that the brandy inside moves less and thus evaporates and oxidates less. We can thus notice the alcohol less and the better perceive the complexity of the distillate and the solera.

In a snifter we should serve only the amount of brandy so that, if we incline the glass horizontally, the brandy will not spill out. The best thing to do is serve a small quantity and fill the glass as many times as necessary, always in small quantities.

Once the brandy has been poured, the glass should be left to stand for four or five minutes, while swirling it gently to enjoy the colour and aromas. It is a ritual similar to that performed with old wines so that they can breathe before consumption.

In addition to consuming it neat, Brandy de Jerez can be consumed on ice, with soft drinks or as part of a cocktail. It is a question of taste, and the brandy will never lose its personality. For example, serving brandy on ice makes it last longer while maintaining the brandy’s characteristics. It is a great discovery for those who prefer cold drinks on ice.

Brandy’s versatility makes it especially recommendable to be consumed in mixed drinks with coke, orangeade and with chocolate-flavoured milk, amongst other delightful blends. In many parts of the world it is popular to consume brandy with soda water on ice. In Spain it is traditional to add a little brandy to hot coffee. In cocktail-making, Brandy de Jerez’s assertive personality makes it a key ingredient in many delicious cocktails.
