Bringing home what we cannot consume at the restaurant, is a simple but effective tribute to fight food waste.

This also means to give importance and value to the delicious food prepared for us by the cooks in the restaurants, that if left in the dish would automatically become a waste.

The collaboration with citizens is a very important step towards achieving great goals for a better environment.

For this reason, it has been created an activity called RistoriAMO.

08.11.17The project RistoriAMO, created by the cultural

association Officina Dinamica, which wants to strengthen the culture of sharing knowledge and good practices for a better environment, was born into another project that the association conducted with self-financing two years ago.

This project is called AvanziAMO (metodologies for valorisation of excellence and reduction of food surpluses).

08.11.17AvanziAMO, during EXPO 2015, in Ferrara has been

involving citizens for more than two years. The finality of AvanziAMO was to increase the culture and awareness about the fact that food is a treasure.

Officina Dinamica has organized many events such as workshops, concerts, photo competitions, cooking shows with recipes reusing leftovers in the kitchen. In different ways we can tell people that food is not rubbish and that we can no longer waste it.

We understand that without involving people, it’s difficult to achieve an important change affecting habits. Without education and awareness, aimed to involve as many citizens as possible, initiatives such as RistoriAMO, are not always able to keep up and to persist for a long time.

During one of these technical meetings and exchanges of good practices with other cities, RistoriAMO has started. The mapping of values and goals has always been important.

RistoriAMO is based on shared knowledge, engaging and enthusiasm. An important characteristic is to be aware that through initiatives like this, we can improve our lives.

Officina Dinamica , which leads the project at the forefront, believes that to get together is important, and although the time needed is sometimes very much because awareness processes need to arrive to people, it is necessary to be united in order to extend the network of involvement.

between associations, SolidWorks Groups, citizens, retail stores, supermarkets, institutions, parishes and associations that have always been in the city in favor of the distribution of food for the less fortunate.

RistoriAMO aims to create a network of restaurants designed to effectively reinforce awareness raising to reduce waste in general.

Working in a restaurant means also to communicate through the use of things (food, instruments and environments) and through gestures.

In restaurants where customers' attention is given to offering the opportunity to bring un-consumed food at home, there is also the awareness that ethical and socially useful behaviors are highly valued processes.

who joins RistoriAMO offers to those who want the chance to bring home the food that has been ordered but not finished. And it does it by using a box that the ILIP partner, who produces them, has donated it to the cause.

involvement with the local ASL to ensure the health, safety and quality of the food that you will bring home. Thanks to the involvement of the Municipality of Ferrara through its Department of the Environment, ASL is one of main partner of RistoriAMO.

The label on the top of the recipient where you can put food to bring home, guarantees hygienic and safety aspects providing accurate instructions on how to conserve food

Not only. Hera, the municipal company for waste, has created, with a small funding, a graphic project, using slogans and simple formulas but that result immediate for people who do not know what the project is about.

Our dream is that the values of the rest comes to be transmitted to other cities In september RistoriAMO was explained in an initiative organized by the faculty of architecture in Venice. Tomorrow RistoriAMO will be awarded Ecomondo Fair of Environment. We are very proud that our experience may be useful and can actually do something to reduce food waste
