1 can (30 oz.) LIBBY'S® Easy Pumpkin Pie Mix - cup (5 fl.-oz. can) CARNATION® Evaporated Milk

2 large eggs, beaten 1 unbaked 9-inch (4-cup volume) deep-dish pie shell

Easy PUMPKIN PIE MIX FOR 2 SHALLOW LIBBY'S® FAMOUS PUMPKIN PIES: Substitute two 9-inch (2-cup volume) pie shells. Bake in preheated 425°F. oven for 15 minutes. Reduce temperature to 350°F.; bake for 40 minutes or until pies test done. FOR HIGH ALTITUDE BAKING (3,500-6,000 ft ): Deep-dish pie -extend second bake time to 55-60 minutes. Shallow pies - no change.

HOMEMADE PIE CRUST RECIPE (Makes one 9-inch pie crust)

1 cup all-purpose flour 1/3 cup vegetable shortening 1/2 tsp. salt 2 to 3 Tbsp. cold water

COMBINE flour and salt in medium bowl; cut in vegetable shortening with pastry blender or two knives until mixture is crumbly. Sprinkle with watjr; blend until mixture holds together.

SHAPE dough into ball; place on lightly floured surface. Roll out dough to i/8-inch thickness. Line pie plate with pastry. Turn edge under; crimp edge as desired.

NOTE: To make two crusts, double all ingredients, follow procedure above, and divide dough in half.

C R U M B L E - T O P P U M P K I N M U F F I N S (Makes about 24 muffins)

4 cups all-purpose baking mix 1 cup raisins (optional)

2/3 cup quick or old-fashioned oats 2/3 cup granulated sugar

1 tsp. ground cinnamon

1 can (30 oz.) LIBBY'S® Easy Pumpkin Pie M|x

2 large eggs Streusel Topping (recipe follows)

PREHEAT oven to 400°F. Paper-line or grease 24 muffin cups.

COMBINE baking mix, raisins, oats, sugar and cinnaifion in large bowl. Combine pumpkin pie mix and eggs in medium bowl; mix well. Stir into oat mixture just until moistened. Spoon batter into prepared muffin cups, filling 3/4 full. Sprinkle with Streusel Topping.

BAKE for 14-16 minutes or until wooden pick inserted in center comes out clean. Remove from pans to wire rack; cool slightly. Serve warm.

FOR STREUSEL TOPPING: COMBINE 3 tablespoons all-purpose flour, 3 tablespoons granulated sugar and 3/4 teaspoon ground cinnamon in small bowl. Cut in 2 tablespoons butter with pastry blender or two knives until mixture is crumbly.

LIBBY'S® Easy Pumpkin Pie Mix may be stored in a sealed plastic container for 1 week in the refrigerator, and up to 3 months in the freezer. When freezing, allow for headspace at the top of the container as the Pie Mix may expand when frozen. 1 Pie Mix may have a separated appearance when thawed due to air bubbles. This will not affect the Pie Mix quality or performance.
