As a photographer for much of my life, I’ve had the opportunity to travel across Michigan and the United States. And when I return home to Bay City, I’m al-ways reminded that my hometown is just as beautiful and multi-layered as any other community I’ve visited.

We’ve got more than our fair share of gems -- some hidden away and some that are right in front of us. My goal with this 2012-13 Bay City Bar & Restaurant Guide is that it piques your curiosity and helps you see Bay City with new eyes.

Bay City offers something for every pal-ate -- from American to German, Polish, Greek, authentic Detroit Coney dogs, vegan options, sushi and more. During the Civil War, the largest sawmill in the world was constructed south of Midland Street by H. W. Sage and John McGraw, where Veterans Memorial Park is now located.

The Midland Street area originally was called the Village of Lake City, but later was incorporated o� cially under the name Village of Wenona in 1866.

From Populace, Pero can make the short walk to work and go about her daily tasks. A few globally inspired dishes found re-cently on their menu include Australian Rack of Lamb, Seared Sea Scallops and Pan-Seared Shrimp. While the inspira-tion for dishes is endless geographically, Shari’s is certain to select as many local ingredients as possible. In the spring, many dishes feature Michigan mo-rel mushrooms, a treasure that is most abundant in the springtime and found in Michigan woodlands. They currently use homegrown tomatoes, grow their own herbs, and are working on growing their own greens. And that’s not all – Shari’s always has Michigan-made wines at hand.

Accompanying the Michigan wines, Shari’s has over a hundred other unique wines available, ranging in price from $20 to $200 per bottle. Chef Aaron at-tends as many wine tastings as possible and is always adding to Shari’s selec-tion, which includes may wines that can only be found at their restaurant. Twice a year, Shari’s hosts themed dinners where guests can enjoy seven-course meals paired with different featured wines.

In an unassuming location on the out-skirts of Auburn and just 15 miles north-west of Bay City, you can find Shari at the Willard Hillton, one of the Great Lakes Bay Region’s finest restaurants.

With its vast selection of more than 140 unique wines, an artistic atmosphere, multiple-course meals, and locally pur-chased fresh fruits and vegetables, it’s easy to see why Shari’s is a must-visit when wining and dining in Bay County.

Executive Chef Aaron Gaertner, a pio-neer for dining in this area, said he is “al-ways looking to do something fresh and new on the dining front.” He explained

that he is very interested in molecular gastronomy, a branch of food science that investigates and makes use of dif-ferent chemical and physical transfor-mations that occur during the cooking process.

When asked how Chef Aaron would clas-sify the cuisine offered at Shari’s, after a short bit of thought he replied: “New American based in classical French … but they go all over the world.”

In December, Shari’s features their “Greatest Hits Menu.” Since Owner/Exec-utive Chef Shari Rae Smith and Executive Chef Aaron change the menu every six to eight weeks, they bring back the things that guests “go bonkers” over and offer them throughout the holiday season.

There’s more to Shari’s than meets the eye. Making its home in a building nick-named the “Willard Hillton,” the history of what is presently Shari’s is eerily fascinat-ing. The Willard Hillton was built in the late 1800s. It is one out of only three original buildings remaining in the town of Willard, which is one of Michigan’s last known ghost towns. The Willard Hillton, formerly named the Beaver Hotel, was not only a hotel but also the general store, post of-fice, local jail and saloon.

In Hampton Township, just five miles east of Bay City at 632 West Center Road, you’ll find J & R Center Road Bar and Nora Wiedyk, its self-described “man-ager, cook and slave here for about 100 years.” Wiedyk says what sets their fish apart from others is its freshness.

“We don’t use a thick batter, either. We use a light coating on our fish … but I’d have to kill you if I told you the recipe,” she laughs.

Like many Bay City restaurants, J & R’s features perch, cod and salmon only on Fridays. And perch is by far the most popular item.

“We’ve had people come from all over the place to eat our fish. In fact, we have people who go to Florida every winter and when they come back, they have to come here for our fish,” Wiedyk said.

On Bay City’s South End – a part of town with a rich, Polish heritage – the Oasis Lounge at 1913 22nd Street has been a popular eatery for five decades. They serve perch daily. On Friday nights, it’s

If you’re in Bay City and wondering where to get a great fish dinner, just ask any-one.

Without a doubt, Bay City is home to an inordinate number of restaurants, pubs, and diners featuring fish on their menus. The only problem is getting everyone to agree on which one serves the best fish.

Perhaps it’s because Bay City is so close to the Saginaw Bay on Lake Huron. Or maybe it’s because so many of us are outdoorsy-types who fish ourselves. Or maybe we just love to eat fish…

Whatever the reason may be, we all have our favorite spots.

And Bay City’s favorite type of fish is perch. Sure, we’ll order cod or salmon or pollock once in a while. Maybe even shrimp or frog legs (although that’s prob-ably called seafood, not fish). But perch is the fish dinner of choice in these parts.

Most restaurateurs and diners agree that it’s the batter that makes or breaks a fish dinner, so taste is usually the deciding factor when choosing a restaurant on Fri-day nights – when many places pull out

“It’s not too spicy, but you can tell it’s there. It’s not too much and it’s not too little, and people really enjoy it,” said Jon Schultz, who owns the Bier Garten with his twin brother, Jim.

Friday offerings include perch, walleye, cod, fish tacos, shrimp baskets and jum-bo shrimp. During Lent, they’ll triple their sales and go through about 150 pounds of fish on a Friday night, Jon Schultz said.

They’ve found success combining qual-

ity fish with fast, friendly service.

“We’ve been doing this for almost 20 years, so we have a pretty good repu-tation for quality and speediness and a friendly staff. Folks enjoy our deck in the summer,” Jon Schultz said.

“We’re a local pub serving great fish at a great price. Everyone knows everybody here. What more could you want?”

“We are famous for our fish fries; we’re No. 1 in the Tri-Cities for our fish,” said Barbara Kramer, a longtime waitress/manager at the Oasis Lounge.

Everything is homemade at Oasis and the perch is prepared with a special fam-ily recipe. Other popular seafood items include cod, shrimp, walleye and frog legs. Side dishes include homemade coleslaw and potato salad.

“People come from all over and what brings them in is our homemade food,” Kramer said.

In downtown Bay City, the Atrium, 1100 N. Water St., always offers perch on Fridays during Lent. The Atrium offers an open, airy, European-style marketplace atmo-sphere in the heart of the antique and boutique shopping area along Bay City’s riverfront.
