  • Norwegian Salmon A HEALTHY PRODUCT Omega-3 Farmed salmon is a good source for the marine omega-3 polyunsaturated fatty acids eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA) that reduce the risk for cardiovascular disease.   • Processed Salmon IMPERIAL CUT SMOKED SALMON This is a feast fit for royalty! Our Norwegian Smoked Salmon Fillet Imperial Cut is a select cut that is slowly smoked in oak wood for a superb taste. Called Balik or Balyk, this tenderloin cut was traditionally reserved for the Tsar and his court. COLD SMOKED SALMON Our secret recipes have traveled through the generations and our salmon is smoked following ancient Norwegian techniques to create a flavor that is heady with fine wood smoke, and then dry cured by hand with a special mix of sugar and salt.   • Processed Salmon PASTRAMI CURED SMOKED SALMON Before this delicious salmon is smoked, it has been rubbed with a cracked pepper, coriander and spice cure, similar to spices used for Pastrami meat. This creates a thin, pepper crust, making it a perfect complement to our other traditional smoked salmons. Custom smoked over hard wood, this salmon has a slightly peppery taste. We use only Superior Grade whole salmon which is then filleted and smoked. This is a true Nordic Specialty.   • Mackerel is a fast-swimming fish. In the summer it appears in large coastal shoals as well as in the Skagerrak, the North Sea and the South Norwegian Sea. They live up to 20 years eating mostly small fish such as young cod, herring and sprats. The firm, dark flesh of the mackerel is fatty and rich with a strong, sweet flavor. The high fat content of the meat should not deter you - most of this is "good" fat rich in Omega-3 oils only a trace amount is of the cholesterol variety. Mackerel is a scale less fish the skin is edible.   • Cod is found in the North Atlantic and generally lives up to age 40. Cod is distinguished from other white fish by the exceptional texture of its flesh. White, delicate and flaky, it is also quite lean, since the cod stores excess fats in its liver, not in its muscles. Norwegian Cod is recognized in gastronomic circles for the taste of its delicate flesh, which lends itself to a multitude of preparations PREPARATION Cod is a flaky fish and is good fried, baked, poached and smoked. Slow cooking also works well to coax out the delicate flavors. Traditionally, it is served with lemon wedges and a light sauce composed of parsley. You can easily add it to stews, risottos and soups as well. No matter how you decide to prepare your fish by poaching, broiling, grilling, stewing, etc. - make sure not to overcook it.   • Scallops are living in shells anywhere from 7 to 12 inches in width. Sea scallops have two small wings near their hinges. The shells may have reddish stripes or may be a solid off-white. Inside the shells are the white abductor muscle (the meat of the scallop), its pale orange reproductive glands, its eyes (all 50 of them), gills, and digestive apparatus. PREPARATION Scallops can be eaten raw, sliced into disks of about 1/6th of an inch, and served with lemon wedges and salt or with a Japanese dipping sauce such as soy sauce with wasabi. Scallops can also be sauted, grilled, boiled, poached, or breaded and fried. They are best when cooked briefly. Overcooking will toughen them.   • The Norwegian Great Scallop (Diver Scallop) is a truly exceptional product one of the largest shellfish found in the country. Measuring up to 17 cm in diameter, it is impressive in both size and quality. In fact, there are only 35 scallops per kilo; the meat alone weighs in at 3050 g. It is generally harvested by hand by professional divers at depths between 10 and 30 meters. This method is quite respectful of both the ocean waters and the scallops. In effect, hand-harvesting allows the scallops to be collected without stress and perfectly intact, unpenetrated by sand. PREPARATION The Norwegian Giant Scallop, excellent raw, is prepared in wide variety of ways. It is as flavorful marinated and thinly sliced in Carpaccio as lightly fried or au gratin in its shell.
