Jill and her husband aended the same high school, however they met at Pete’s Dance School in New Jersey. They both had a great passion for ballroom dancing. Next month would have been their 68 th anniversary. While raising their family Jill worked at her father’s embroidery shop and also worked from home as a seamstress. They have two beautiful daughters: Denise and Dale, 4 grandchildren, and 6 great grandchildren. Bill & Jill rered to Sun City, California and lived there for 23 years. During their rerement years, they trav- eled all over the world, mostly on cruises. Some of the many places they’ve been to are: Tahi, Bora-Bora, Panama Canal, New Zealand, Holland, Australia, and Hawaii many mes. They have also been to every sin- gle naonal park in the United States. Jill became part of the Sunshine Care family in June 2016 and has made many friends with her outgoing personality. She enjoys aending Horculture Thera- py with Farmer Roy and she’s always present at our community pares at the Palms. She really enjoys live entertainment and dancing. Resident of the Month Gilda “Jill” Arrighi

Gilda Arrighi, better known as Jill, was born in Union

City, New Jersey to Alex and Ida Dompieri and has a

brother and sister.

Jill and her husband attended the same high school,

however they met at Pete’s Dance School in New Jersey. They both had a

great passion for ballroom dancing. Next month would have been their 68th

anniversary. While raising their family Jill worked at

her father’s embroidery shop and also worked from

home as a seamstress. They have two beautiful

Bill & Jill retired to Sun City, California and lived there

for 23 years. During their retirement years, they trav-

eled all over the world, mostly on cruises. Some of the

Hawaii many times. They have also been to every sin-

gle national park in the United States.

Jill became part of the Sunshine Care family in June

Employee of the Month

Rowena Levita

Rowena began working at Sunshine Care in August of 2010 and currently

is the Live In Caregiver at the Oaks House with grace and efficiency. Well

loved by Residents and staff alike, Rowena is generous and giving,

treating her Residents like they are her own family.

Rowena was born and raised in the Philippines. There she met her

husband Edgar (also a dedicated employee of Sunshine Care). They cele-

brated their 36th wedding anniversary this year! Rowena is the mother of two handsome gentlemen and

has two grandchildren.

On her days off, Rowena loves visiting with relatives, going out to different places and going shop-

ping with her husband Edgar. Rowena really enjoys working at Sunshine Care and is especially good at

finding out what each of her Residents enjoys doing. She finds it very rewarding to bring joy to people in

their twilight years.

Congratulations Rowena and keep up the great work!

GARDEN GATE

Hope everyone has recovered well from all of the holiday festivities. December was definitely an action- packed month for us at Sun-

shine Care. BUT- now it’s time to get back to the orchards and gardens and work off the result of those extra cookies, nut breads and

fudge!

January is bare-root month. It’s time to hit up your local garden centers for those bare- root roses and deciduous fruit trees. The

selections of material are vast this time of year.

We will be pruning all of our rose bushes and fruit trees this month. Roses will be pruned heavily, fertilized and hit with a copper

spray. Deciduous fruit trees will be also pruned heavily after all the leaves have fallen to the ground and before new buds have start-

ed to swell. Citrus trees will be pruned back as well, to keep them manageable for the rest of the year. Don’t forget to hit your fruit

trees with a copper spray also after pruning.

We will resume with our free monthly Garden Lecture Series, always on the third Saturday of the month at 10:30 am. On January

21st, Joe and Julie Walker from Obra Verde Growers will enlighten us on their Drought Tolerant Beauties from Down Under.

Waxflowers are a specialty of theirs but they will cover many other types of stunning plants which will also be available for purchase.

January is a perfect time of year to plant these low water users. Seating will be limited so please RSVP - [email protected] or by

Farmer Roy

Preheat oven to 500 degrees F.

Heat a large skillet over medium high heat. Add oil and mushroom caps and season caps with salt and pepper.

Saute caps 5 to 7 minutes, until they are lightly browned and tender on edges. Turn caps up and let juices drain away from caps. Transfer caps to a small non-stick baking sheet.

Wipe out skillet and return to heat. Add a touch of oil and sausage to the hot skillet. Brown and crumble sausage for 3 minutes. I

In a food processor pulse and chop the garlic, add mushroom stems and pulse to chop the mushroom stems. Add celery, onion and red bell pepper to the mushrooms and pulse to chop.

Remove mixture from the processor and saute veggies and mushrooms over medium high heat another 3 to 5 minutes. Add dry, defrosted spinach and stir into stuffing. Add chopped bread and cheese to the pan and toss stuffing until bread is moist and stuffing is combined, 2 or 3 minutes.

Fill caps with stuffing using a small scoop or large spoon. Place caps in hot ov-en and reduce heat to 450 degrees F. Bake 6 to 8 minutes to crisp edges of stuffing and set stuffing in mushrooms. Transfer stuffed mushrooms to a serv-ing plate.

Sausage Stuffed Mushrooms

Prep: 10 min. Cook: 25

min. Yield: 24 Mushrooms

INGREDIENTS:

1 tablespoon extra-virgin olive oil, one turn of the pan 24 large gourmet stuffing mushroom caps, stems removed and reserved brushed with damp towel Salt and pepper Stuffing: 1 1/2 teaspoons extra-virgin olive oil, half a turn of the pan 3/4 pound sweet bulk Italian sausage 4 cloves garlic, chopped 20 stems mushrooms, finely chopped 1 rib of celery and green, leafy top from the heart of the stalk, chopped 1/2 small onion, chopped 1/2 small red bell pepper, seeded and chopped 1 (10-ounce) box chopped frozen spinach, defrosted and squeezed dry 3 slices white bread, toasted and buttered, chopped into small dice 1/3 cup grated Parmigiano or Romano; 2 handfuls
