Art Melbourne showcases over 100 galleries from around Australia and internationally with thousands of artworks. Allpress were the exclusive coffee partner sponsoring the Printworks section, an exhibition of contemporary printmaking.

Recycle a SackRecycling is important to us and we always have lots of coffee sacks screaming out to be recycled. Some go to Toroonga Zoo where they are used for the bears and big cats to sleep on, play with and generally throw around, others are collected by a local Rozelle designer and made into handbags - the optionsare endless.

Coming soon to our Roastery Café is our recycle-a-sack initiative. In exchange for a gold coin donation you can collect your own sack or sacks for the garden, dog bed, whatever you wish. All proceeds donated will go to local primary schools.

We initially visited various exporters representing co-operatives from all over Sumatra in the capital Medan, a hot and frantic city of 4 million people going about their daily business in organised chaos.

From here it was to the remote city of Takengon to investigate the areas that these coffees had come from. During the 50 minute plane ride up we were constantly gaining altitude and landed on a high level volcanic plateau 1,500m above sea level. This is where our hosts Koprasi Kopi Gayo Organic Co-operative (KKGO) met us taking us on a hair raising journey, complete with landslides, directly to the farm growing the coffee that we had been so impressed with in Medan. By now we were 15 hours drive from Medan and enjoying the soft rain and constant 22 degree temperatures so suited to growing high quality Arabica beans.

The key to successful café business is returning customers and the best guarantee of this is to serve exceptional coffee.

Espresso preparation is a skill that requires a depth of understanding, and it is learnt through training and practice. Training is not a one-off event, it should be an ongoing program encouraged at every level in your café. There are no shortcuts to becoming a top barista and to support your espresso operation we offer a number of classes.

We believe dedicated training time withno distractions is the most effective way for our expert training team, to teach the skills for espresso preparation. The ‘Perfect Cup’ class and the ‘Milk Workshop’ are offered on a regular weekly basis in our training room. To ensure the maximum level of participation and allow everyone hands-on involvement there are no more than fi ve people per class.

Perfect Cup ClassThis is an introduction to the fundamentals of espresso preparation. The class content includes dosing, tamping, extraction volume and time, grind adjustment, milk steaming and machine cleaning procedures.

Over the past few years it has become more important to us to travel to countries where our coffeeis grown. This year two of our staff travelled to visit the farms and small co-operatives where wesource our green beans from.

Interest in origin of green coffee is growing, particularly in African coffee regions. In an effort to raise awareness for these developing coffee communities three European companies involved in the coffee industry have come together to jointly to operate the Songwa coffee farm in Great Rift Valley, Tanzania, East Africa.

La Marzocco, our Italian espresso machine supplier, together with Probat, a manufacturer of coffee roasting equipment and Mahlkoing Grinders, took over the lease of Songwa in September 2007 with the vision to bring members from the specialty coffee industry to origin for a meaningful and educational experience.

This ‘not for profi t’ endeavor has similarities to the ‘farm stay’ concept and the trips are offered to their employees, their clients and to other members of the industry. A community fund has been established to contribute to the wellbeing and development of the local villages around the farm and the three partners have begun with their own donations to assist orphans in the farm area to attend primary school.

Kristy Sutherland was fortunate to have just returned from a trip to Songwa with Tony Papas, and from NZ Michael Allpress andAli Sedcole. Here is her account...

Shortly after starting my new role of La Marzocco Manager at Allpress I was asked to join Tony, Michael and Ali on a trip to the Songwa Estate coffee farm. Woo hoo, fantastic! Needless to say I was extremely excited and grateful for the opportunity.We were also joined by Guido Bernardinelli and Lorenzo Carbonic our friends from La Marzocco in Florence.

First stop was Dar El Salaam, where we spent the night to then connect to a charter fl ight to Mbeya (anyone who knows me, knows I love to fl y so I couldn’t wait to get in the charter plane; a 12 seated Cessna Caravan 208).

Upon arrival in Mbeya we were greeted by our hosts Thomas and Tony from Utengule Coffee Lodge who briefed us on our coffee program for the days to follow – an in-depth program dedicated to understanding coffee processing steps from seed to the cup.

First day, and as told, I was all “breakfasted” and ready to go by 8am however soon learnt that African and Italian time is a little different to the time the rest of the world keeps. By 9am we were walking to Itimba Farm for our fi rst session. The days to follow covered all stages of coffee growing, green bean defect, roasting, cupping right through to export preparation of hulling, grading and bulking.

Our visit to Songwa started with a very bumpy bus ride (African roads and a mini bus with no suspension). Songwa Estate is a beautiful and traditional East African coffee farm located

We were in deep and not just because of how the rain affects the heavier red clay like volcanic soil that typifi es this area. Our shoes grew to the size of frying pans as we walked through the heavy wet and red clay soils to inspect these young healthy coffee trees and the organic practices established here now for fi ve years. No sprays or chemicals here. No need. We were in a balanced ecosystem where people lived to grow coffee for money and vegetables to eat. Their only vice being smoking cigarettes, something that 60% of all males in Indonesia not only do, but do well, and constantly. I felt very left out and became addicted to bananas as a means to fi ll time while others sat around and smoked.

A highlight of the day was sitting on a farmer’s verandah watching the rain come down and sipping coffee that was grown a stones throw away. The beans had been pan roasted over a fi re which really brought out the distinct fl avours of the area, a wonderful brew on a memorable occasion.

The second part of the trip took us to the predominately Christian area of Lake Toba, popular with tourists due to its great natural beauty, pleasant high altitude climate and relatively close proximity south of Medan. This is the home of the Batak people and a region where Allpress Australia has been buying its Blue Batak coffee from. Here the comparatively lighter volcanic soils and lack of shade trees give the coffee a distinct brightness and acidity which could be recognised in every cup we tried.

We were again impressed by the responsiveness of the farmers of our desire to not just buy Sumatran coffee, but coffee which could be recognised by the region and traced back to the very farm it came from. The journey allowed us not only to trace back to origin where our coffees are being grown in the Batak and Gayo regions, but more importantly to take time to look ahead and search for the next great coffee we can consider buying direct in the future.

Thinking of being a tourist in Sumatra? We spent a day looking at Orangutans. Otherwise we did not see much in the way of tourism. If you did however want to see how part of the real world lives then this is a place worth visiting. We felt so privileged to go to a place not frequented by tourists, and with a purpose. To be reassured that great fl avour in a cup can come from 1 Hectare of trees, some simple honest hard work, old fashioned agronomy and farming, followed with a little crazy driving, and the odd cigarette break.

Our last night at Utengule Coffee Lodge was one I willnever forget. Our group was taken (via the trusty mini bus) toa secret location not far from the Lodge. We then had a small walk and came to a clearing set up for what was a beautiful dinner under a full moon in the heart of Tanzania. There was great food (just ask anyone on the trip – my plate was always the fullest!), the most amazing atmosphere and most importantly, great company.

After working at Allpress for over eight years, the chance to go on a trip like this one to the Songwa Estate is one I will never forget. To see coffee from the crop to the cup is something that exceeded all my expectations – a truly rewarding experience!

The value of these trips is to meet with the farmers face to face, seeing where the beans are grown, picked and processed. These regular trips to origin plantations also allow us to verify compliance with our trading standards.

We are continually refi ning our trading standards working toward all of our coffee, from every origin, being traded directly between the farmer, the exporter and Allpress in a traceable, sustainable and transparent way that all parties consent to. The standards encompass transparency of pricing, environmental responsibility, pursuing social projects, and fair workers' rights.

Our trips to Sumatra and Tanzania have been particularly gratifying. Meeting the local coffee farmers, and observing fi rst hand that the coffees we purchase from these regions rewards the growers with a premium price for producing such high quality specialty coffee.

Sumatra is one of the largest single origin coffees that we purchase at Allpress, with interesting characteristics renowned for its earthy distinction in the cup.

Recent visits to origin, Sumatra and Tanzania

We initially visited various exporters representing co-operatives from all over Sumatra in the capital Medan, a hot and frantic city of 4 million people going about their daily business in organised chaos.

From here it was to the remote city of Takengon to investigate the areas that these coffees had come from. During the 50 minute plane ride up we were constantly gaining altitude and landed on a high level volcanic plateau 1,500m above sea level. This is where our hosts Koprasi Kopi Gayo Organic Co-operative (KKGO) met us taking us on a hair raising journey, complete with landslides, directly to the farm growing the coffee that we had been so impressed with in Medan. By now we were 15 hours drive from Medan and enjoying the soft rain and constant 22 degree temperatures so suited to growing high quality Arabica beans.

This wonderfully organised co-operative allowed these remotely located small farmers, mostly with only 1.5Ha of Arabica producing trees planted, to receive direct benefi t from membership to a co-op which constantly focused on best practice, organic farming and thorough traceability from the farmer through to the ship in Medan.

The key to successful café business is returning customers and the best guarantee of this is to serve exceptional coffee.

Espresso preparation is a skill that requires a depth of understanding, and it is learnt through training and practice. Training is not a one-off event, it should be an ongoing program encouraged at every level in your café. There are no shortcuts to becoming a top barista and to support your espresso operation we offer a number of classes.

We believe dedicated training time withno distractions is the most effective way for our expert training team, to teach the skills for espresso preparation. The ‘Perfect Cup’ class and the ‘Milk Workshop’ are offered on a regular weekly basis in our training room. To ensure the maximum level of participation and allow everyone hands-on involvement there are no more than fi ve people per class.

Perfect Cup ClassThis is an introduction to the fundamentals of espresso preparation. The class content includes dosing, tamping, extraction volume and time, grind adjustment, milk steaming and machine cleaning procedures.
