Banana Curry

Ingredients• Rice – risotto or pudding rice

• Quarter of a chicken, roasted or grilled

• 1 banana

• 1 -2 teaspoons of curry powder

• Cream or milk

• Salt

• Peanuts

Method

Boil water in a large pan.

Add the rice and plenty of salt.

Mash the bananas with the curry powder. How hot will you have yours?!

Cut chicken into bite-size pieces

When rice is still a little hard drain out the water.

Add milk (about a cup per person)

Add chicken and curried banana.

Mix on low heat. Leave to simmer until risotto consistency.

Add peanuts before serving. Enjoy!

Banana Bread

Ingredients• 50g butter or maragrine

• 225g bananas

• 100g self raising flour

• 75g sugar

• ¼ teaspoon of salt

• 1 egg

Method

Preheat oven to 1800 Gas 4

Mix all the ingredients together

Spoon mixture into a 2lb non – stick loaf tin.

Smooth down top so mixture is even.

Bake for approximately an hour.

Check loaf by putting skewer into middle.

Loaf’s done if skewer comes out clean.

Cool on wire rack.

Slice before serving. Enjoy!
