LYUTENITSA (Bulgarian: лютеница, (lyuto meaning spicy) is a national relish of Bulgaria.
The ingredients include tomatoes, peppers,
eggplant, onion, garlic, black pepper, cummin,
sunflower oil, sugar and salt.
Lyutenica may be slightly hotter (spicier)
depending on the spices and the chilly pepper in
it. In recent years, industrial production of
lyutenica has flourished and popularized it outside
the Balkans. Thanks to its ingredients it is
extremely healthy and delicious as well. Bulgarian
children have grown up with a slice of bread,
lyutenitsa spread on it. In addition, it has to be
noted that different regions and countries have
substantially different interpretations of it.
A FAST LYUTENITSA
Necessary ingredients:
5 kg of peppers and round fleshy
peppers, cleaned, cut in large pieces
3 kg of tomatoes cut in cubes
1 kg of carrots, sliced
5‐6 average sized aroma apples (about
1 kg), cleaned from seeds and cut in
pieces
1 teacup of sugar, 1 teacup of
sunflower oil, 1 teacup of vinegar, 4
soupspoons of salt,
Spices: black pepper, cumin, parsley, garlic, chilly pepper
All these are boiled in a large pot until it gets thick enough to “make a path” after the stirring
spoon. After it cools it goes through a kibbler to take the flakes and seeds away. The mixture
is then well stirred and put in jars after cooling completely. The jars are sterilized for 5 to 10
minutes.
Preparation time: boiling – 2.30 hours., kibbling – about 1 hour, cooling down – 30 minutes,
sterilization – 10 minutes. Total preparation time – about 4 hours.
