One classic holiday food is a stuffed squash. It makes a perfectly healthy vegetarian main dish, it’s easy to prepare, it’s easy to bring to a potluck, and it tastes great.

For Thanksgiving I wanted to make a stuffed squash that dazzled. Usually I would stuff a squash with a grain, like wild rice or a mixed rice blend, along with walnuts or hazelnuts and maybe some sauteed onions and mushrooms. This time I stretched my mind a little and decided to do something multi-layered with as many textures and harmonious flavors as I could include.

In the end, that meant asparagus, onions, shiitake mushrooms and walnuts. We were out of fresh shiitakes, but I found that the dried ones in our bulk herb department are not only a good value, but they’ve got great flavor.

I began my baking with a big, smooth, gray-skinned squash that must be a Blue Hokkaido Pumpkin. I chose it for its size, but I was surprised to find (as an online search confirms) that its flesh has a texture and flavor that are hard to beat.

After scooping it out, I put in a layer of raw asparagus. A big, closed squash can use maybe 90 minutes of baking at 350°F. Once I had it started, I sauteed some

I recently heard from a long-time friend who told me she lost a bunch of weight. She is generally in extraordinarily good health, but she seemed to be the kind of person who could gain weight just by looking at food.

Naturally I wanted to know how she did it. I may just be a curious bystander when it comes to weight loss, since I weigh the same as I did in high school, but it’s a crucial subject these days as obesity looms as our biggest and costliest health problem.

Her strategy was to avoid sugar of all kinds, eat only when at a hunger level of 6 to 7 on a scale of 10, eat what she wanted to eat (trusting her hunger), stop eating when she was full, and enjoy every bite.

This sounds eminently sane to me, but it also seems to fly in the face of the idea that humans evolved through scarcity and are programmed to eat and gain weight as much as possible. I’ve always questioned this latter view, because it makes equal sense that we would be programmed to know when to quit, rather than eat ourselves sick.

What I want to suggest, no doubt oversimplified, is that behind eating disorders, which may be defined by

behaviors, there are appetite disorders, which have to do with drives. There may be any number of reasons why our appetites can lead us astray, but the wrong choice of foods seems to be one clear reason.

I would put sugar at the top of the list, just as my friend did. I think it’s prudent to consider sugar an addictive substance. Our appetite, mood and more are governed by

blood sugar levels, and added sugars can throw those out of whack.

Consider how there seems to be a limit to how

much real food we would eat, but not to how much sugar. According to the Harvard research (page

1) on nut-eating, nut-eaters weigh less than their

peers. Even though nuts are concentrated foods, often regarded

as treats, they’re a high-fiber, slow-digesting food that requires chewing.

In Mexico, which just passed us as the most obese nation, soda pop is about to be taxed; that would be a good example for us to follow.

Hunger may well be your best guide to eating, but only if you point it in the right direction. If you do, you may satisfy both your appetite and your desire for a fit and healthy body.

chopped yellow onion in olive oil until the onions were turning brown. Then I sauteed the shittakes along with the onions for a few more minutes. Then they went into the squash.

I toasted some walnuts in the oven for 10-15 minutes to bring out the flavor, and they became the top layer inside the squash.

There always seems to be less room inside a squash than I expect. That’s why it runneth over. Or at least, the top was riding high. I was baking it in a glass bowl that was just about big enough for the squash. When it started bubbling at the bottom (along with the old fork test), I knew it was done.

The end result was what I had hoped for. The flavors went together well, and the humble squash was duly praised.

Canadian researchers recently did some genetic testing on 44 popular herb products sold by Canadian and U.S. companies. The results were sobering, or worse.

They found that a third of the products had none of the herb that was supposed to be there, and nearly 60 percent had plants that were not supposed to be there, including ones that could be allergenic or toxic. There were also cheap fillers. Only two of the 12 companies had products that were genuine and pure.

It would be easy to dismiss or minimize this study, given that there are tens of thousands of herbal products on the market and that neither the companies nor the products were disclosed. In fact, when I brought up this study with a long-time industry insider who served on the Natural Products Association Product Label Integrity Committee, he told me that he believed 99 percent of the companies in our industry produce genuine products.

I wouldn’t be so sure. I’ve been in the natural food business for 40 years, 38 running this store. In that time I’ve gotten to know the people behind the companies.

I’ve taken their seminars. Our employees have gone to their trainings. I’ve toured some of their manufacturing facilities and seen their high-tech quality assurance equipment. I’ve gone to trade shows where I’ve gone from booth to booth to find out

what companies thought of each other. I’ve served on boards, including the Natural Products Association, where people have wrestled with these questions.

I also know something about the regulations that the popular press keep saying don’t exist. They do, but herbs are

regulated more like foods than drugs, and that’s entirely appropriate; otherwise herbal medicine as we know it would be regulated out of existence. It takes something on the order of a billion dollars to prove the safety and efficacy of a drug, and that cost can be recovered through patents and high prices. It simply doesn’t work that way with traditional herbs that can’t be patented.

Until the genetic barcoding used by the Canadian researchers becomes more widely available, and probably even then, all of us who value herbal medicine will have to rely on trust, even as we keep our eyes wide open.
