Filling :2 cups cashews, soaked1 1/2 cup filtered water1 1/2 cup coconut oil, melted1/2 cup coconut nectar1 cup fresh cranberries, chopped3/4 cup pecans, chopped1. In high speed blender, combine cashews and water. Blenduntil smooth.2. Blend in coconut oil and coconut nectar.3. Remove to bowl and stir in cranberries and pecans.4. Pour into crust. Refrigerate until set. This will take severalhours, you may want to make this the night before.Top with ganache.

Ganache:1/2 cup cacao/carob1/2 cup coconut nectar1/4 cup coconut oil, melted1. Whisk all ingredients together.

Raw Sweet Potato Pie... Utterly Delicious!!!

For the Crust

1 cup walnuts3 tablespoons coconut nectar1 tablespoon raw coconut oil3/4 teaspoon cinnamon1/8 teaspoon nutmegpinch of saltPlace the walnuts in your food processor. Process till finelychopped. Add all remaining ingredients and process untilsticky. Press into the bottom of a spring form pan. Place inthe freezer to set.

For the Sweet Potato Filling3/4 cup coconut butter not oil!3/4 cup water1/2 cup coconut nectar1 tablespoon cinnamon1 teaspoon vanilla extract or 1/2 vanilla bean1/2 teaspoon grated fresh ginger1/4 teaspoon nutmeg3 cups peeled and chopped sweet potatoPlace all ingredients except for the sweet potato in a highspeed blender and blend until well combined. Add the sweetpotato and blend again until very smooth. Pour over thecrust.

For the Candied Walnut Topping1 cup walnuts, roughly chopped2 tablespoons coconut nectar1/2 teaspoon cinnamonpinch of saltIn a medium bowl, toss all ingredients together until thewalnuts are evenly coated. Sprinkle evenly over the top ofthe pie. Place the entire pie in the freezer for 3-4 hours untilset. Thaw 30 minutes before serving.
