Finishing® – a new dimension to food preparation

Normally, meals are kept warm, for example, in warming cabinets or displays. This results in quality losses.

Finishing® in the RATIONAL SelfCooking Center® finally does away with warming meals. Whether it’s 1, 5, 20 or several 1,000 meals, with Finishing® meals are brought to perfection without stress or rush.

They start with the mise en place of all the requisite dishes whenever you have the time: in the morning, the afternoon or a day beforehand. No more expensive temporary help or overtime. As soon as the food has been produced in the SelfCooking Center®, it is chilled, thus halting further unwanted cooking. Food quality remains superb.

Shortly before serving, Finishing® in the RATIONAL SelfCooking Center® according to need prepares meals to perfection.

Finishing® for à la carte – better than freshly cooked

Finishing® in the SelfCooking Center® is the ideal solution for your à la carte business. For example, you can prepare up to 150 meals with a kitchen crew of 2, without stress or rush, with just a touch of the button.

Meals on your menu that you have calmly prepared are chilled and ready. When the order arrives, the meals are arranged on the plate with love. These meals are perfected with Finishing® in the SelfCooking Center®. Of course, you can also prepare, for example, pan-fried dishes à la minute and then add side dishes readied with Finishing®. Before serving, the sauce is poured on and the plate garnished. Meals cooked to perfection with Finishing® are served on hot plates.

From preparing to serving the ready-to-serve plate, you only need 8 minutes per load. – Your guests will be enthusiastic about the quality.

With the RATIONAL LevelControl®, your SelfCooking Center® will keep control even during rush hour service. Each rack level is individually monitored. LevelControl® automatically alerts you as soon as the relevant dish is ready – there’s nothing like it anywhere in the world.

Finishing® makes banqueting a pleasure – even for the organizer!

The feast is over but what is talked about even years later? The quality of the food. No matter whether it’s the plated service or buffet, Finishing® in the SelfCooking Center® guarantees the highest perfection at all events.

For plated service, prepare the plates cold according to the expected number of guests and store them chilled in special mobile oven racks. Shortly before you need the meals, Finishing® will make 20 or even several 1,000 plates ready for serving at the same time without stress or additional labour. This leaves you with the required flexibility to react calmly to typical delays at events.

Buffets are child’s play, too. Preprepared meals arranged cold in containers are perfected with Finishing® in the SelfCooking Center®. Depending on demand, additional containers are made available for serving in no time – meals served are always hot and at peak quality. Long warming periods are completely done away with.

The meals prepared in the SelfCooking Center® are arranged cold in containers and stored chilled. You complete the meals according to demand for serving exactly when you need the meals. Meals are quickly made available with Finishing® – ensuring only hot meals are served.

The RATIONAL Finishing® system – professional events of all sizes

On special mobile oven racks up to 120 plates with a diameter of up to 31 cm can be made ready for Finishing®. The free accessibility and low height of less than 1.60 m of the mobile oven racks allow for quick and ergonomic loading and unloading from all 4 sides.

A simple transport of meals is made possible by the particularly large and steadily running tandem casters. The mobile oven rack can even master major unevenness.

With the RATIONAL Thermocover meals can be hot-parked for 20 minutes after Finishing® – enough time for Finishing® additional mobile oven racks and transport to the serving station. The RATIONAL Thermocover is distinguished by top insulating qualities. Velcro zippers of generous size allow for easy but fast work.
