Our chefs at Pereg traveled to the Valle del Sarno in the Campania region in Italy, where the finest sauce tomatoes in the world are grown, to get the plum tomatoes used in this dish. Then they went on to Viterbo in central Italy to procure the sweetest, crispest carrots for their recipe. These little carrots obtained renown in the writings of Maestro Martino, a 15th century Vatican chef. Both were combined with the Basmati Rice along with carefully chosen herbs and spices, and a generous sprinkling of toasted onion for added crunch – and “Presto!” Pereg’s Basmati Rice All’Italiana was born.
