Dr.Wargic Kurian is the father of dairy industry and he is the CEO of NDDB.Towards fulfillment of the national objective of making India self sufficient in milk production, a small step was taken in March 1975 and Jaipur Zila Dugdh Utpadak Sahakari Sangh Ltd., Jaipur (popularly known as Jaipur Dairy) was registered under Cooperative Act 1965 to work in then Jaipur District. Initially this union did not have the processing facilities. It started with a modest beginning of procuring 250 liters of milk per day.

The initial handling capacity of the dairy plant was 1.5 Lakh Lt. per day with a powder plant of 10 MT per day capacity, which was commissioned in the year 1981 under Operation Flood Program 1 by National Dairy Development Board for service of thousands of rural farmers families of Jaipur.

Over the years, there has not been looking back for Jaipur Dairy and the significant growth has been made in all fields i.e. procurement, processing and production of various milk and milk products and marketing thereof under the brand name of SARAS. The plant is managed and operated by well-qualified, competent and experienced managerial cadre and highly motivated work force to provide highest quality of products and best of the services to our esteemed customers.

To further improve the efficiency and effectiveness of the plant performance, Jaipur Dairy (Jaipur Zila Dugdh Utpadak Sahakari Sangh Ltd., Jaipur) had earlier obtained the Quality Management Systems Certification as per ISO 9002:1994 in combination with IS: 15000 (HACCP) in the year 2000. Now the dairy has upgraded the system in accordance with ISO: 9001: 2000 in combination with (HACCP) as per IS: 15000: 1998.

It is a state level apex cooperative organization.

The federation has a 15 Board Of directors. Develops village milk cooperative network. The federation has chief executive designed as managing director.

It was registered in March 1975 at Jalmahal in Jaipur. In June 1981 it was shifted to JLN Marg,Malviya Nagar. Accepting Packing Station (APS) was established in April 1984. There are 21 plants of Saras in all over Rajasthan and the plant in which we visited at JLN Marg,Malviya Nagar is biggest one spreading in overall 27 acre land.1200 village level Dairy Cooperative Societies. In Jaipur region there are 8 chilling centers. From DCS milk was received and collected at Jaipur dairy dock. In Jaipur region there are 7000 saras Booth and Parlour distributing the milk. It’s coverage area is total Jaipur and Dausa District.

In Saras Plant at MI road is having 1500-2000 employees on contract and daily basis and 800-900 employees are on permanent basis. Work has been done in three shifts.

• Pasteurization Process : milk has been heated on 70*C temperature and then immediately been cooled in 10-15 seconds. Since milk is FMCG product so it is cooled to 5-6*C temperature.

• Blending: In this process cream is extracted from milk.

• Butter Churner (White Butter machine) : It contain milk and continuously cool water is sprayed on it. Approx 2 ton butter extract from it.

• Table butter : After heating the butter the rest is used to make Table butter. It is also called as Solid Net Fat(SNF). It is also used to make powder milk.

• Accepting Packing Station(APS) : Here Tatra Pack milk is produced. It is pasturised at 141*C that is why it is called as Ultra High Treatment(UHT).On this temperature all the bacterias has been killed so it is also called as Zero Bacteria Milk and due to its long life it is called as Long Life Milk. It’s life is about 2-4 months.

• Paneer- Standard milk is used to prepare paneer. This milk has been spoiled through “Citric Acid”. It is heated at 85*C temperature and there is need to skim it continuously.

• Curd- Toned milk is used. It is heated at 85*C temperature. Then some more curd is poured into this. After leaving it in a hot room for 2 to 3 hours, it becomes ready to pack.

• Sreekhand- curd has been kept in cloth for 24 hour then 70-75% sugar has been mixed to make it sweet.

• Icecream- It is not produced at saras plant but it has been fetched from Omini Plant at kaladera

Production is a conversion process which converts input forex. Land, Labour, Capital, and other

resources into desired output.

MARKETING

Jaipur Dairy sells its milk & milk products through a network of over 7000 retail outlets spread over Jaipur city and near by 100 towns. The retailers are the most important segments of Jaipur Dairy and are given all care and attention. We have ensured that the consumer should not travel / walk more to fetch milk for his / her daily consumption. With this intention, strong networks of retail outlets have been made. Supply of liquid milk is made twice a day for benefit of the consumers. Liquid milk is dispatched to rural area through a contracted fleet

of insulated vehicles. Jaipur Dairy was among the first 8 dairies to be selected by NDDB for countrywide launch of Mnemonic symbol campaign. Now we have shifted to our symbol to make our brand more prominent in Rajasthan.

The milk and milk products are sold through a network of a mix of own, shop agencies, various institutions and Saras Milk Parlors.

SUGGESTION & RECOMMENDATION

The plant was so suffocated that it can cause severe health deceases to the workers working there. It should be ventilated in an efficient manner.

Precaution of cleanness and freshness should be taken care into consideration.

It would be beneficial for the firm to produce Icecream in their own plant. Presently they have to fetch it from kaladera.

There should be more transparency in their working system. They were not allowing photography inside the plant which shows that they are reluctant to reveal each and every aspect of their production.
