Zappalà:from a smallfactoryto an industryOur roots are in Sicily, on the slopes ofMount Etna. This is where, in 1973, a smalldairy product factory was established, anda few years later, during the 1980s, itbecame a real industry. Through the years,the Company launched – before others – aspecialisation process in “typical Siciliancheese”, diversifing its production, andbecame the leading company of anindustrial Group in the food sector, whoseobjective was to be the main representativeof “Sicilian food”.

Our present as aleaderZappalà is now one of the main dairyindustries in Italy. We produce more than10 million kilos of cheese and more than25 million litres of milk. Our products aredistributed to the main food stores in Italyand sold also in Japan, United Kingdom,Germany, Finland, Canada, and the UnitedStates.

Our missionIn Italy and the world, our mission is torepresent the typical aspects andquality of Sicilian food products.We produce in an environmentally pristinearea, where food still has its original taste,and combine technology with care forquality of our products, according totraditional food processing methods.

Our officesand productionplantsOur fresh cheese is produced in our factoryin Zafferana Etnea. Typical and aged cheeseis made in our factory in Ragusa. Ourproduction of UHT milk, fresh pasteurisedmilk, and products from first milkprocessing is concentred in Caltanissetta.

IQF freezingOur production of fresh cheese is equippedwith an advanced system for instantaneousfreezing: the IQF (Individual Quick Frozen)technology.This technology does not alter at all theproduct structure, which keeps all typicalorganoleptic and nutritional qualities of freshproduct up to 18 months after production.

Quality systemZappala has always particularly focused on itsQuality Assurance System. Production lots areconstantly monitored by analysis laboratoriesin our production plants, before and afterdelivery to the points of sale. For consumers,this means total reliability of Zappalàproducts. To support the results we haveobtained, we have received a number ofimportant certifications, such as: Uni En Iso14000 (Environmental Management System),Iso 22000 (Safety Management Systems inthe Food and Agriculture Sector), BRCCertification (Global Standard Food), EcocertItalia (Monitoring System in OrganicFarming), and IFS Certification (InternationalFood Standard).
