Quality Assurance - Make a difference in Today’s Market

Food Safety• Sysco QA staff is the largest in the Food Service industry and

consists of members that are highly trained food safetyprofessionals, conversant in all aspects of HACCP and Food Safety.

• Sysco QA verifies that GAP's (Good Agricultural Practices), GMP's(Good Manufacturing Practices) and HACCP (Hazard AnalysisCritical Control Points) as well as other food defense programs arein place both in the fields and processing plants ensuring allprograms are followed, documented and enforced. Part of theaudits includes the detailed reviews of adjacent land use,irrigation water quality, soil amendment testing and sanitationpractices at fields, plants and coolers.

• Approved suppliers are required to participate in annual third partyaudits of their programs. Sysco Quality Assurance personallyfollows up on any deficiencies or issues that arise from theindependent audit.

• Sysco Quality Assurance Environmental Program for producespecifies microbiological sampling and sanitation monitoringinformation for the SYSCO/Fresh Point Brand suppliers in an effortto reduce risk associated with food born illness.

• Suppliers are required by Sysco QA to perform visual pre-operational sanitation inspection of plant processing equipment,such as tables, lugs, knives, trays, walls, floors, and refrigerationequipment, which must be completed prior to the start of eachproduction day by trained quality assurance personnel.

• Lettuce from field ditch, drain, and edges will not be packed intoSysco and Fresh Point brands: “no harvest” width is to bedetermined by on-sight Sysco QA inspector.

Product Traceability• Sysco/Fresh Point Branded finished product cases bear a code date

for product traceability and recall purposes.• Sysco Quality Assurance has a formal Recall Program and, if

necessary, a Crisis Call System, in place that can quicklycommunicate the information to all distribution facilities involvedin the recall action.

• Sysco/Fresh Point Brand suppliers are expected to routinelyconduct traceability exercises, or mock recalls, to verify theirability to track product.

• All fruits and vegetables grown and processed outside the UnitedStates must have the country of origin printed on the internal andexternal packaging in accordance to current regulations.

Product Quality• Prior to harvest, each lettuce field proposed for Sysco/Fresh Point

field packed lettuce is inspected by a Sysco QA representative toensure the product meets Sysco/Fresh Point Brand specifications.

• Routine product evaluations are conducted by Sysco QualityAssurance Staff to confirm the Sysco/Fresh Point Brands meet thedesignated specification and customer expectations. Sysco QAverifies minimum weights, yields, quality, temperatures andproduct rotation of Branded products produced.

• Product specifications include the maximum days allowed for theproduct to ship, which can be as little as two days from harvest.This ensures the freshest product is shipped.

• All Sysco/Fresh Point Brand finished products must comply withSysco QA's predicated specifications.

Supplier Sourcing• Sysco QA performs on site inspection of fields, processing facilities

and coolers prior to the manufacture of Sysco Natural brandedproducts.

• Sysco QA verifies supplier's continued compliance by performingroutine (announced and unannounced) visits of each approvedsupplier. During these visits, Sysco QA reviews, in - process foodsafety programs, and evaluates finished products.

• Every supplier providing Sysco/Fresh Point Brand fresh producemust demonstrate GAP-compliances by providing an agreedupon, signed letter of guarantee.
