Antoine Moltes & Son estate is located in the small traditional and homing villageof Pfaffenheim right in the middle of the best Alsatian vineyards between the twofamous romantic cities of Colmar and Guebwiller, France. The estate produces thefamous Alsatian quality wines out of seven traditional grape varieties since 1925.The 12 hectares size cultivated vineyard extends over three villages right at thesunny foothills of the Vosges mountains. The winemaking team is overseen by thirdgeneration winemaker Darren De Bortoli and his brother-in-law Steve Webber who is married to Leanne De Bortoli.The dynamic duo has been responsible for many winemaking innovations and developments. Darren De Bortoli isthe creator of the world acclaimed Noble One. Steve Webber established the Yarra Valley winery, the King Valleyvineyards and oversees the Hunter Valley winery and vineyards.

The winemaking philosophy is that great wine begins in the vineyard and that the winemaker should use minimalhandling and interference in the winery. Wine should have a sense of regionality and be an expression of the soil inwhich it is grown. Our winemakers strive to create wines that they find interesting and exciting - wines that may bequirky or unusual but wines that above all have provenance and a sense of place.

De Bortoli has wineries in diverse wine growing regions, each with its own regional style, as well as vineyards in theKing Valley. The Bilbul winery produces the acclaimed Noble One, world class fortified wines and premium varietaland sparkling wines. The relatively cool climate Yarra Valley is known for the classic varieties Chardonnay, PinotNoir, Cabernet Sauvignon, Shiraz, Sauvignon, Riesling and Viognier. The Yarra Valley winery also boasts an awardwinning restaurant and a cheese maturation room. The Hunter Valley is famous for its distinctive Semillon andShiraz styles which have character, personality and the ability to age gracefully. Yarra Valley Reserve Release wines are sourced from the De Bortoli family vineyards at Dixon’s Creek in the cool-climate Yarra Valley. The mature, low yielding vines deliver exceptional quality fruit to the winery. This is preservedduring winemaking with gentle, low intervention techniques to produce wine with varietal detail and purity. The idea isto create wine with a ‘sense of place’.

First released in 1996, this Cabernet Sauvignon predominant blend was named in honour of Dame Nellie Melba theworld famous Opera diva, who for many years resided in the Yarra Valley.

The De Bortoli family has a commitment to making small parcels of exceptional wines at its Yarra Valley winery andis in the process of developing the ultra premium Reserve range. The GS Reserve is a blend of the very bestparcels of Yarra Valley Shiraz grown on mature vines with low cropping levels. The first GS Reserve release was theJimmy Watson winning 1996 Shiraz.

Only the very best parcels of Yarra Valley fruit are chosen for this label. Components for the blend are selectedduring ferment and complete their maturation in French oak barriques. A rigorous selection process from the best ofthese barriques ensures a small parcel of truly outstanding wine.

De Bortoli Wines has an extensive collection of very old fortified wine stocks maturing in barrel. The winemakersdraw on these stocks to blend Old Boys Tawny (average age 21 years), 8 Year Old Tawny, Show Liqueur Muscatand the unique Black Noble.

Created by Darren De Bortoli in 1982, for more than 20 years, Noble One has been regarded as Australia’sbenchmark dessert wine. Darren, a fan of French Sauternes recognised the potential to make a dessert wine fromgrapes affected by botrytis cinerea or ‘Noble Rot’ in the Riverina, where the family wine company is based. The winecreated a sensation when it was released and has become one of world’s most highly awarded and sought afterwines.

Black Noble is made from botrytised Semillon that is fortified and aged in old oak barrels in a solera system. Createdby Darren De Bortoli, it was inspired by a 1930s wine made by Vittorio De Bortoli. The original base wine for BlackNoble came from some 1972 material made by Deen De Bortoli in an early attempt to make a Noble One style.

David Mills has grown up in vineyards, he is third generation McLaren Vale and is a genuine expert in the field ofviticulture. Experience has been gained in Langhorne Creek and McLaren Vale. David has been involved in theestablishment of vineyards from the very beginning. His knowledge of the vineyard is paramount, with meticulousmanagement and his tireless commitment provides the ultimate production of fruit of the highest standard.

Constant management of soil moisture and disease control is practiced. Controlled watering is the preferred methodof watering at Aramis Vineyards. David monitors disease on a day to day basis, whether it be spraying for protectionagainst botrytis one day to checking for bugs the next. Disease control is paramount to the vineyards overall health.The yield of the vineyard is determined mainly by the method and know how of pruning. The best way to prune avineyard is by hand, ARAMIS will only do what is best for the vineyard. Up until there 3rd year the grapes werepicked by hand, this is for the preservation of the vine. Once strong enough the grapes are picked with a harvester.

St. Mary's Wines

Kate obtained her winemaking degree from the Lycee Viticole d’Avize, in Champagne France in 1997. The next 4vintages saw her working with her father, Syd, at Stone Bridge in another cool climate Manjimup, WA. Here shespecialized in producing premium, bottle fermented and aged sparkling. The first Deviation Road Sparkling will bereleased in a couple of years, and she is now also focusing on mastering Pinot Gris.

Deviation Road winery was created by Hamish Laurie using the fruit from the Lenswood family vineyards that usedto go into Hillstowe’s wines. In 2000 Kate joined him and the pair have been making the wine together ever since.

Hamish continues a five-generation family tradition, started by his great great grandmother, Mary Laurie, who wasSouth Australia ’s first female winemaker. Hamish joined his father, Dr Chris Laurie in 1992 to help build the family’sHillstowe Winery into a significant Adelaide Hills label, where he worked for 8 years until it was sold in 2000. Prior tothat he worked in wine sales and export for Negociants Australia, which gave him many important insights into thedomestic and overseas wine markets.

Just 15km west of the township of Penola is the family-owned business of St. Mary's Vineyard. Run by BarryMulligan and his wife Glenya, with management and winemaking help from sons Ian and Robin, it has been ownedby the Mulligan family since 1937. In 1986, St. Mary's was planted to Cabernet Sauvignon, Shiraz, Chardonnay, andRiesling, with an area of Merlot and Petit Verdot grapevines established at a later stage. Because it possesses theclassic “terra rossa” soil, St. Mary's produces the prototype Coonawarra style – with one huge catch. Its pricing issignificantly less then many of its neighbors to the east. Very few Coonawarra designated wineries can produce thisquality at this price.

This extreme southeastern section of South Australia, referred to as the Limestone Coast, is truly one of Australia'sviticulture gems. Within the overall Limestone Coast zone is the world famous Coonawarra area and Penola regions.Lying almost midway between Adelaide and Melbourne, it is an extremely isolated area in a country based onisolation. It is defined by its unique geology and geography and has a distinctive personality that comes over into itswines.

Established in 1970, the Domaine d’Elise is located just outside the town of Chablis in the commune of Milly. It waspurchased by the current owner Frédéric Prain in 1982. The domaine’s vineyard is situated directly above thesouth/southeastern facing Premier Cru Côte de Lechet vineyard. It is unusual in that its entire 13 hectares are in oneparcel. Interestingly, the appellation laws have divided the vineyard into two equal plots of Chablis Villages and PetitChablis.The soils are quite poor with an abundance of surface stones, particularly on the top of the hill. A great dealof pruning is done throughout the growing season in order to limit yields to 45/50 hl per ha. Harvesting is done aslate as possible.

M. Prain allows the must to settle before fermentation (débourbage) which is done in stainless steel lined cementvats that are temperature controlled. Both wines go through a malolactic fermentation and then are matured on theirlees; the Petit Chablis for seven months and the Chablis for 10 months. M. Prain selects the best vats to bottleunder his own label and sells 50% of his production “en vrac” to negociants. His wine is fined before being bottled.

Its heart incorporates fruit from both Maipo and Colchagua Valleys lending it acomplexity that places it with the best Chile’s premium wines. Whilst drinkable today, Sideral has the potentialfor several years of bottle-ageing.

The Bucalossi family bought the company at the beginning of the 1970’s from the Florentine noblewoman EmmaBizzarri, whose name remains attached to the property. Since then, we have been dedicated, with the patience andpassion that agriculture demands, to the production of wine (Chianti Classico, Chianti Classico Reserve, Soloio andVin Santo), oil, extra virgin oil, Grappa, vinegar, and a series of delicious gastronomic preparations: wine gelatine,rose syrup and cooked wine.

Bladen is a family owned and operated winery/vineyard producing a premium range of quality wines. These include astunning Sauvignon Blanc along with Single Vineyard Pinot Gris, Riesling, Gewürztraminer, Pinot Noir andMerlot/Malbec. Bladen was established in 1989 with the desire to create a range of boutique wines that reflect theindividuality and personality of our vineyard. Initially we became contract grape growers, and to better understandthe local wine industry, we both worked at local wineries for several years. In 1997 the first wines were producedwine under the Bladen label.

Woollaston Estates was formed in 2000 when Philip and Chan Woollaston met Glenn and Renee Schaeffer anddiscovered they shared a vision of creating an estate where quality wines would be crafted. They also share a loveof art, literature and the Nelson landscape, so their dream was to develop a winery that was not only highlyfunctional, but was also sensitive to the natural aesthetic of the area and reflected their creative passion.

It is often said that great wine is made in the vineyard - all our grapes are estate-grown, enabling us to control qualityfrom the vineyard to the bottle. Located in Logrono in the heart of the Rioja region, the vines of Bodegas Entrecepas can be found on the clay andlimestone slopes of Mount Yerga. Since 2000, the team at the Bodega have worked hard to balance modern andtraditional technologies; harvest is done by hand and great care is taken throughout the process to maintain anecological focus. This fulfils the regulations set by the Ecological Agricultural Control Organisation of the governmentof La Rioja. They do not use pesticides,insecticides,herbicides,inorganic or chemical fertilisers in order to preservethe natural environment.

A wine cellar located in the province of Zamora, just a few kilometres from Toro. Its luxury spectator is the riverDuero, that lies right opposite the wine cellar. The zone is extremely cold in the winter months with hightemperatures in the summer. The main variety in this vineyard is the autochthonous variety of the zone, the “Tintade Toro” (Toro Red Wine), similar to the Tempranillo variety but adapted to the climate and lands of Toro. Aselection of the best grapes harvested by hand is made to avoid damaging the bunches. During the fermentation,there is a constant temperature control, the ripening is a long process and the pressing is not aggressive. Later thewine is transferred to French oak barrels to extract the maximum potential from the wine.

On the right bank of the river Ebro, in the south of the Region of Navarra, we find the town of Corella, at an altitudeof 373 metres. Thanks to the privileged Mediterranean climatology that the Ribera Navarra offers us, influenced by acontinental climate, it provides an optimum ripening of the grape. Combining high quality grapes, produced fromstocks that are at their best production period, we obtain our wines from the Tempranillo, Merlot and CabernetSauvignon varieties. After selecting the grape, it is taken to the stainless steel tanks to ferment at controlledtemperature. After the process of fermenting the alcohol has taken place, the wine is separated from the grape skinsto highlight its freshness.

Irius wine cellar is located in Barbastro´s municipal term, in the heart of the Somontano Apellation Origin. With aninitial capacity of 4 million liters, that will come to 8 millions in a final phase, the cellar produces a range of uniquewines that seeks to satisfy the most demanding palates. Irius has combinedthe most ancient production methodswith the most advanced tecnologies in Spain. As a result of this magnificent union, we obtain these incomparablered and withe wines.
