The endocrine disruptive effects of BPA have proven difficult to define experimentally because of the contamination and variability in all the items (cages, water, bedding, commercial chow, etc) which need to be controlled in order that dose response data can be obtained. It is a problem that has caused confusing results to emerge. A study by one member of the research team here was designed to assess the endocrine disruptive actions of dietary BPA exposure, while carefully controlling for known confounders. They acclimated parental mice of a known strain to well-defined diet containing BPA (0.03, 0.3, 3, 30, or 300 ppm) or an environmental estrogen (EE) at 0.0001, 0.001, and 0.01 ppm). The progeny (F1) of these mice were maintained through adulthood on the same diet as the parents. In F1 females, uterine weights were increased in all EE and the 30-ppm BPA- exposure groups indicating sensitivity and estrogen-like actions of BPA. BPA apparently did not affect parental reproductive function, nor the timing of puberty and some metabolic functions in their female offspring. F1 males showed modest changes in body weight, adiposity and glucose tolerance speculated to be beneficial? Overall, BPA was found to have modest, sex specific endocrine disruptive effects on a variety of end points which occurred below the established NOEL (no observed adverse effect level ) for humans. Bisphenol A (BPA) is an chemical found both in rural and urban environments. It is a problem that has caused confusing results to emerge. QUESTION: What is the difference between the current nutrition label for food and other

information about nutrient density?

It is all about the water. Water content of food is a very important nutrient (nuff said LOL, as we all know this. A summary article is ). An astounding 40 % of our daily water intake comes from food. This is an easy task if you eat a quarter of a watermelon somewhere during the day, but is quite difficult if you only eat barbeque-flavored corn chip snacks. The nutrition label to the left is derived from a website that I think has some pretty good information because it is easier to "swallow" than the gov website and there are other options for learning about health as well but believe their data to be based primarily on the .gov tables.

Corn chips are a mere 1.2 % water wtih 523 kcal (calories). Watermelon is 91.4% water and 30 kcal. The % of nutrients listed in the labels to the right underestimate the amount of nutrition in watemelon compared to the chips by about 17 times, in addition to the fact that all the wonderful phytochemicals are that much increased as well.

There is considerable information about foods of all kinds that is posted on the internet (but consensus on any recommended amount of phytonutrients to ingest is modest).

The website Nutritionself data does have some interesting concepts and they do use the USDA database so this gives one some confidence in their assessments. At this moment in time, and though not ideal, it seems to be an OK resource.

I am not sure a solution has been found, but one is being worked on. In the meantime the best rule of thumb is: if it has been cooked, processed, baked, fried and packaged by big business, just leave it on the shelf and go to the fresh produce section, or your local farmer's market.

For those of you who are interested in seeing tables that the USDA has posted for water content, protein, fiber and nutrients in hundreds of different foods is a link to those.HERE

Using this websites database one can see that food varies in its make up considerably. The overall nutrient value for watermelon in the bottom left graph shows beter overall nutrition but slightly less complete balance of the essential amino acids. The corn in the corn chips provides a reasonably complete protein but less overall nutrition but carries considerable kcal and other undesirables.

Next month I will look at the USDA website with the unfortunate name (LOL) .

Carrot Salad Ingredients

2 pounds peeled carrots

2 tablespoons coconut oil 2 cups finely chopped onion 2 tablespoons harissa (store-bought or homemade) 1 heaping tablespoon tomato powder 1 teaspoon cumin seed 1 teaspoon caraway seed 1 teaspoon sucanat or honey 2 tablespoons water 3 tablespoons white wine vinegar 3 tablespoons extra virgin olive oil 2 cups shredded kale leaves, stems removed Sea salt

Preparation

Cook cleaned carrots whole chunks, for about 20 min or until just softening. Sauté the onion in coconut oil until just brown. Toast the cumin and caraway seeds in a dry skillet until they begin to smell fragrant. Cool seeds then grind them. Rinse carrots with cold water, set them aside to cool. then slice them into bite-sized pieces.

Add the ground spices, harissa, tomato powder, sucanat and water to the onion mixture. Stir to blend and heat through

for about 3 minutes. Add more water if needed. Pour the spice and onion mixture over the carrots and toss until coated. Drizzle on the olive oil and vinegar. Toss again. Salt to taste.

Allow ingredients to come to temperature so the flavors can blend. Add the kale just before serving. Serve at room temperature or slightly warmer
