President’s Message Hello everyone, The saying goes that March comes in like a lion, right? I thought so - NOT SEPTEMBER! What a way to end a summer - and just in case you have been out of the state or country for the past few weeks, let me update you now. Eastern PA had a hurricane AND the shaking and rumblings of an earthquake in the same week. Our daughter called from the pediatrician’s office in Allentown to tell me she and Katie were outside in a parking lot because the building was evacuated - crooked picture frames, moving furniture, etc. I told her that I did not realize it was an earthquake because I was driving the car and just figured it was the usual bumpy PA roads. And before we were dried out from the hurricane, along came record breaking rain, and rain, and more rain. We were very lucky that our basement stayed dry (that’s where all your Penn Lehigh supplies are stored) . Some of our members were less fortunate and I was really sorry to hear about all those who had damage in their homes (Kiles, Collisters, Sidingers, that I know of). Have not had any reports of damaged rigs in our unit but if you had any loose rivets or seams, this would have been the time that the leaks showed up. We tried to instill many important things in our son and daughter during their formative years. Now our daughter is following through with her own son and daughter - like being kind and sharing - it worked SO well that our daughter shared her strep throat infection with me and then baby Kate came home from daycare with conjunctivitis (pink eye) and lovingly shared that with me too. You ask why I am sharing this info with you? Because it happened right before our August Rally in New York and I was home sick. Everyone who attended told me what a great time they had - I was very disappointed that we missed it. Then the rain storms kept us at home in Northampton and we missed the State Rally in Lebanon also. The Kunkel’s are not having a great rally attendance record but I keep sending in our rally coupons and money with hope. We were all set for the Saturday night October Fest too. I was hoping to have a photo of Rich in full garb for this newsletter. He sometimes plays with a German band out of Reading, PA Rajah Shrine and the guys get all decked out in their authentic lederhosen outfits - a bunch of older guys in leather shorts and knee socks is a sight to behold. So no photo, just use your imagination and try not to snicker - their brass band is great to hear though. After some discussion, Glen Lippencott and I have decided to hold the new officer installation at our Dec 3, holiday luncheon. More info to follow on that. Please send your 2012 dues to Terrie ASAP and a ballot for the slate of new officers will be sent to you shortly. Take care, travel safely, and stay away from small people who go to daycare (they are little germ-magnets) BJ

PA STATE RALLY ALL ROADS LEAD TO LEBANON The PA State Rally was held 97-11 at the Lebanon Fairgrounds As well planned as the Keystone Unit had worked toward this rally the weather was against everyone all the way Many of us know this period as the Flood of 2011 Many tours had to be cancelled because of flood covered damaged roads However it sounds as though everyone at the rally took all the conditions in stride There were 39 trailers at the state rally Actually a pretty good turnout considering the weather circumstances During the rally those attended were treated to wine tasting beer tasting entertained with music and demonstration of glass blowing and glass forming Keystone Unit really put heart and soul into hosting the rally

Terrie and Edd Sidinger hosts

No formal meeting was held Rally events reported by recording secretary Joyce Stoddard Attending the rally were Sidingers Showers Kiles Kreischers Stoddards Lackeys Schultzes and their guests Shari Schultz

(daughter of Fred and Sharon) and their grandson Rudra Schultz Ray This campground is an ideal area to go camping It has so much to offer - fishing boating swimming blacktopped sites and roads picnic tables and barbecue rings with adjustable shelves We had sites with full hookups Some sites are right on the lake and most sites are individually surrounded by trees Some early arrivals from our club went golfing on Wednesday and on Thursday we all went to the Glenn H Curtiss Aviation Museum in Hammonsport NY where we saw antique and vintage aircraft miniature dollhouses old military objects old wooden and vintage boats of many types vintage art and so many different antique collections They even have a restoration shop which you may visit and watch men at work

We all ate Thursday lunch in a restaurant in Bath and from there went to Camping World As usual some of us bought things we just couldnrsquot live without We ate and ate all weekend Edd and Terrie cooked our meat on the outside grill at their campsite and everyone brought side dishes and dessert Some people played board games in the evenings and on Saturday the ladies worked on cards for the deployed service men and women on their current service project Judy had brought packets of cards and embellishments already prepared and Terrie brought supplies Both showed us how to make beautiful cards

The nomination committee Edd Sidinger Allen Kile and Ren Lackey met on Saturday and compiled a slate of officers for next year

Below are a couple recipes that George Beaverrsquo[s daughter Mary Rose prepared and served us at the Numidia Rally Jane Kile obtained the recipes from Mary Rose to pass on for anyone to enjoy

Pennsylvania Dutch Crumb Coffee Cake presented by Bechtel Victorian Mansion Bed amp Breakfast Inn

Ingredients 4 cups unsifted flour 1 teaspoon baking powder 23 cup shortening 12 teaspoon salt 2 12 cups granulated sugar 1 teaspoon cinnamon 2 eggs prebeaten 1 12 cups buttermilk 1 teaspoon baking soda 1 cup brown sugar 12 cup coconut

Blend first five ingredients together and set aside one cup of this mixture as a topping base for use later In separate bowl mix the eggs buttermilk and baking soda together Then blend the remaining portion of the original crumb mixture stirring thoroughly There will be some small lumps in the batter Add 1 cup brown sugar 12 cup coconut and 1 teaspoon cinnamon to the cup of original crumb topping mixture set aside earlier Pour coffee cake batter mixture into 3 greased and floured 8 cake pans Sprinkle topping equally on top of batter in all 3 pans Bake at 350deg for 35 minutes

Broccoli Bacon and Cheddar Chowder

Serves 8 Ingredients

8 slices bacon chopped 2 tablespoons unsalted butter 1 onion finely chopped 2 tablespoons all-purpose flour frac12 teaspoon salt Dash cayenne pepper 3 cups milk 2 cups chicken or vegetable stock 12 ounces red skinned potatoes cut into frac12-inch dice 2 cups cheddar cheese shredded 1 tablespoon all-purpose flour 1 teaspoon hot pepper sauce (if desired) 2 (10-ounce) boxes frozen chopped broccoli thawed Preparation

Heat large pot over medium heat Add bacon and cook until crisp about 5 minutes Remove bacon with slotted spoon and transfer to paper towel lined plate and reserve Pour off all but 2 tablespoons fat Add butter and onion and cook for 6 minutes or until softened Add flour and cook stirring for another 2 minutes or until foamy Whisk in salt cayenne pepper milk and chicken stock and cook until it becomes smooth and creamy about 3 minutes Add potatoes and cook for 10 to 15 minutes or until potatoes are tender In bowl toss cheddar with flour to coat Stir in cheese a handful at a time whisking after each addition until smooth Add in hot pepper sauce if using Add thawed broccoli and stir to heat DO NOT BOIL Taste for seasoning and adjust if necessary Ladle soup into heated bowls and garnish with reserved bacon

Below are a couple recipes that George Beaverrsquo[s daughter Mary Rose prepared and served us at the Numidia Rally Jane Kile obtained the recipes from Mary Rose to pass on for anyone to enjoy

Pennsylvania Dutch Crumb Coffee Cake presented by Bechtel Victorian Mansion Bed amp Breakfast Inn

Ingredients 4 cups unsifted flour 1 teaspoon baking powder 23 cup shortening 12 teaspoon salt 2 12 cups granulated sugar 1 teaspoon cinnamon 2 eggs prebeaten 1 12 cups buttermilk 1 teaspoon baking soda 1 cup brown sugar 12 cup coconut

Blend first five ingredients together and set aside one cup of this mixture as a topping base for use later In separate bowl mix the eggs buttermilk and baking soda together Then blend the remaining portion of the original crumb mixture stirring thoroughly There will be some small lumps in the batter Add 1 cup brown sugar 12 cup coconut and 1 teaspoon cinnamon to the cup of original crumb topping mixture set aside earlier Pour coffee cake batter mixture into 3 greased and floured 8 cake pans Sprinkle topping equally on top of batter in all 3 pans Bake at 350deg for 35 minutes

Broccoli Bacon and Cheddar Chowder

Serves 8 Ingredients

8 slices bacon chopped 2 tablespoons unsalted butter 1 onion finely chopped 2 tablespoons all-purpose flour frac12 teaspoon salt Dash cayenne pepper 3 cups milk 2 cups chicken or vegetable stock 12 ounces red skinned potatoes cut into frac12-inch dice 2 cups cheddar cheese shredded 1 tablespoon all-purpose flour 1 teaspoon hot pepper sauce (if desired) 2 (10-ounce) boxes frozen chopped broccoli thawed Preparation

Heat large pot over medium heat Add bacon and cook until crisp about 5 minutes Remove bacon with slotted spoon and transfer to paper towel lined plate and reserve Pour off all but 2 tablespoons fat Add butter and onion and cook for 6 minutes or until softened Add flour and cook stirring for another 2 minutes or until foamy Whisk in salt cayenne pepper milk and chicken stock and cook until it becomes smooth and creamy about 3 minutes Add potatoes and cook for 10 to 15 minutes or until potatoes are tender In bowl toss cheddar with flour to coat Stir in cheese a handful at a time whisking after each addition until smooth Add in hot pepper sauce if using Add thawed broccoli and stir to heat DO NOT BOIL Taste for seasoning and adjust if necessary Ladle soup into heated bowls and garnish with reserved bacon

Terrie and Edd Sidinger hosts

No formal meeting was held Rally events reported by recording secretary Joyce Stoddard Attending the rally were Sidingers Showers Kiles Kreischers Stoddards Lackeys Schultzes and their guests Shari Schultz

(daughter of Fred and Sharon) and their grandson Rudra Schultz Ray This campground is an ideal area to go camping It has so much to offer - fishing boating swimming blacktopped sites and roads picnic tables and barbecue rings with adjustable shelves We had sites with full hookups Some sites are right on the lake and most sites are individually surrounded by trees Some early arrivals from our club went golfing on Wednesday and on Thursday we all went to the Glenn H Curtiss Aviation Museum in Hammonsport NY where we saw antique and vintage aircraft miniature dollhouses old military objects old wooden and vintage boats of many types vintage art and so many different antique collections They even have a restoration shop which you may visit and watch men at work

We all ate Thursday lunch in a restaurant in Bath and from there went to Camping World As usual some of us bought things we just couldnrsquot live without We ate and ate all weekend Edd and Terrie cooked our meat on the outside grill at their campsite and everyone brought side dishes and dessert Some people played board games in the evenings and on Saturday the ladies worked on cards for the deployed service men and women on their current service project Judy had brought packets of cards and embellishments already prepared and Terrie brought supplies Both showed us how to make beautiful cards

The nomination committee Edd Sidinger Allen Kile and Ren Lackey met on Saturday and compiled a slate of officers for next year

Blend first five ingredients together and set aside one cup of this mixture as a topping base for use later In separate bowl mix the eggs buttermilk and baking soda together Then blend the remaining portion of the original crumb mixture stirring thoroughly There will be some small lumps in the batter Add 1 cup brown sugar 12 cup coconut and 1 teaspoon cinnamon to the cup of original crumb topping mixture set aside earlier Pour coffee cake batter mixture into 3 greased and floured 8 cake pans Sprinkle topping equally on top of batter in all 3 pans Bake at 350deg for 35 minutes

Broccoli Bacon and Cheddar Chowder

Serves 8 Ingredients

Below are a couple recipes that George Beaverrsquo[s daughter Mary Rose prepared and served us at the Numidia Rally Jane Kile obtained the recipes from Mary Rose to pass on for anyone to enjoy

Pennsylvania Dutch Crumb Coffee Cake presented by Bechtel Victorian Mansion Bed amp Breakfast Inn
