IDDSI Level 3: Liquidised

Mixed berry milkshake; Strawberry, kiwi and apple

smoothie; Mango, passionfruit and orange smoothie

Food is smooth and moist with no lumps

It has been pureed

It may also need to be sieved to remove particles

It can be poured and drunk from a cup

It does not hold its own shape on a plate

It cannot be piped layered or moulded

Triple cheese & potato pie; Tomato

pasta; Fish pie Chocolate mousse pot Food is smooth and moist with no

lumps

It is not sticky

It falls off spoon in a single

spoonful when tilted

It continues to hold shape on a

plate

It can be piped layered or moulded

It cannot be poured, drunk from a

cup or sucked through a straw

No hard pieces, crust or skin have

formed during cooking or standing

IDDSI Level 5: Minced and Moist

Cottage pie; Cauliflower cheese Rice pudding and apple; Pureed

peach and cream

Food is soft, tender and moist

Small bite-sized pieces 4mm by

4mm

Can be eaten with a spoon

Lumps are easy to squash with

the tongue

Foods can be easily mashed with

a fork

Food pieces should not be bigger

than 4mm by 4mm

It can be layered or moulded

IDDSI Level 6: Soft and Bite Sized

Diced cheese and diced corned beef Cake and cream

Food is soft, tender and moist

Chewing is required before

swallowing

Food can be mashed down or

broken down using a fork,

spoon or chopsticks

Food should be bite sized and

pieces no bigger than 1.5cm x

1.5cm

IDDSI Level 7a: Regular ‘Easy to Chew’

Soft cakes and sandwiches (with no

crusts); Macaroni cheese

Banana split; Jelly and Chantilly cream;

Cranberry, orange and lemonade punch

Food from the normal diet

which are soft, and only

require a small amount of

chewing

Ideally soft foods should be

well cooked and may need to

be moistened with sauce or

gravy

These foods may need to be

chopped up into smaller

pieces

Normal Diet

Any food including stringy fibrous textures, mixed consistency foods, hard, crunchy and crumbly foods

Afternoon tea on cake stand: Sausage rolls; Fruit scones; Cheese scones;

Sandwiches; Bakewell Tart

Dip and vegetable sticks (carrot, tomato, pepper, cucumber)
