Quality Management

The premium quality and freshness of our products is proved in their color, taste and firm

flesh consistency. All our seafood products are wild caught on demand to ensure the best

possible delicacies. Directly after being caught the shrimps and lobsters are frozen

immediately on the fishing vessel at -18 degrees. The sustainable and natural growth of

the prawns and Lobsters in a protected environment is the key to our great products.

Where is our seafood caught ?

The Prawns and Lobsters in our product range are all wild caught in the Gulf of Papua

New Guinea.Papua New Guinea has very strict guidelines that give top priority to

protecting sustainability, the environment and its resources. The state of Papua New

Guinea has laid down several rules for this in the ”Fisheries Management Act of 1998”

and the ”Gulf of Papua Prawn Management Plan”.

What does the „Fisheries Management Act“ from 1998 ensure ?

• promote optimum utilisation and long-term sustainable development of living resources and the need to utilise living resources to achieve economic growth, human resource development and employment creation and a sound ecological balance

• conserve the living resources for both present and future generations• ensure management measures are based on the best scientific evidence available,

and are designed to maintain or restore stocks at levels capable of producing maximum sustainable yield, as qualified by relevant environmental and economic factors including fishing patterns, the interdependence of stocks and generally recommended international minimum standards

• apply a precautionary approach to the management and development of aquatic living resources

• protect the ecosystem as a whole, including species which are not targeted for exploitation, and the general marine and aquatic environment

What does the „Gulf of Papua Prawn Management Plan“ ensure ?

• To maximise the value of the resource through prevention of growth over-fishing• To manage the fishery on a precautionary approach• To manage the prawn fishery on a sustainable basis

What are the measures taken ?

• Seasonal closure – December to March• Limited entry – only 15 vessels shall be licensed to operate in the area• Restricted entry – only Papua New Guinea companies

• Gear restriction – vessel size (30 metres), rope and nets size restrictions

• Requirement that all licensed vessels have Automatic Location Communicator on board.

How to handle frozen Seafood

Frozen seafood products should be handled carefully. Pressure loaded, dropped or carelessly handled carton boxes can lead to damaging the products.Therefore the following rules should be considered.

• Products should be stored in the original carton box, in order to protect the products of damage.

• When taking out the products of the carton box they should be laid down carefully and not thrown.

• The carton boxes should not be laid head down causing damages.

Thawn seafood shouldn’t be frozen again.

If possible all products should never be taken out of the freezer with exception of the moment when the products are delivered to the customer. Afterwards they should immediately be stored in the freezer at a minimum temperature of -18 ℃ and a maximum temperature of -22 ℃.

Banana Prawns

Banana Prawns (penaeus merguiensis) also known as “White Prawns” are large, white prawns. Their body is  light  yellow or translucent and speckled with reddish brown dots. These delicious prawns are found over muddy and sandy bottoms in coastal waters to depths of 90m. Their average size is between 14 – 17cm.  Our banana prawns are wild caught in the Gulf of Papua New Guinea from April until November with a peak supply in April.

Due to their light and sweet flavour Banana prawns are a rising favourite. They present well as they retain their shape when cooked. Banana prawns are more commonly used in hot dishes rather than in cold salads or platters.They are well suited to spicy flavours. Served in thai-style coconut curries or avocado cocktails they are a delight.

Black Tiger Prawns

Black tiger prawns (panaeus monodon) are harvested from the wild by trawlers working mud bottoms from very shallow water to depths beyond 300 feet. They can grow up to 13 inches, but harvest size averages 9 to 11 inches. Our black tiger shrimps are wild caught in the Gulf of Papua New Guinea during the catching season from  April until end of October.

Tiger Prawns have a medium flavour which puts them between Endeavours (strong) and Bananas (mild) on the flavour spectrum.

Black tiger shrimps tails are excellent hors d’oeuvres in shrimp cocktails or grilled. These prawns go great with pasta or in casseroles, since they can withstand tossing with other ingredients. Their thick shells hold heat, so black tigers cook more quickly than the other shrimps. Watch them closely; they toughen if overcooked.

Our wild caught black tiger prawns are an international recognized delicacy.

Endeavour Prawns

Endeavour prawns are very exceptional prawns in taste. There are red endeavour prawns (penaeus ensis) and blue endeavour prawn (penaeus endeavouri).

Our prawns are 100 % naturally wild caught with the main catching season from March to November.

The firm flesh has a mild-to-strong tasty sweetness and they are adaptable to a range of creative combinations with stronger flavoured ingredients making them very versatile.

Their modest size of 7-14cm weighing 22-30g makes them particularly good for use in brochette form, especially as a smaller, bite-size portion for finger food with a citrus, chilli or soy dipping sauce. Endeavour prawns are popular in salads and seafood platters.They present well if shelled, and served inside a seeded avocado with a light vinagrette, or in a tempura batter with chilli jam on top o a bed of cubed mango.

Endeavour Prawns where nominated in February 2007 at the National Australian Prawn Fisheries Conference in Adelaide as the tastiest prawn against every commercially caught prawn in Australian waters. It is the deserving title holder of 2007’s Australia’s tastiest prawn.
