2 (4 oz. each) tilapia filets1/2 cup flour2 oz. melted margarine1 tsp. chopped garlic1/4 cup diced jalapenos1 cup chopped, de-stemmed spinach (I use baby spinach and I don’t chop it)1 pinch salt, pepper, and garlic salt5 oz. angel hair pasta4 oz. heavy cream1/4 cup Lemon Butter (recipe follows) FOR THE GARNISH1/8 cup diced Roma tomatoes
DIRECTIONS:Dredge the tilapia filets in the flour and add them with the melted margarine and garlic to a medium temp sauté pan. Once the tilapia has finished cooking on one side, flip them over and add the jalapenos, spinach, salt, pepper, and garlic salt. Prepare the angel hair in boiling water, according to package directions. As the filets begin to flake, add the heavy cream, and bring it to a slight boil. Once the cream begins to boil, remove the pan from the fire and reduce the lemon butter into the sauce. Place the pasta in a bowl, and pour the fish with the sauce over the pasta. Garnish with fresh Roma tomatoes.
LEMON BUTTER
Makes 6 - 3/4 cups1 lb. margarine2 lb. butter1/4 cup lemon juice1/2 cup white wine2 tsp. chopped garlicCombine the ingredients for the Lemon Butter in a mixing bowl and beat at a medium speed until a smooth consistency in the batter is formed. Getting Your Yard Ready For Spring
April showers bring May flowers We all probably heard this rhyme at some point in our lifetime.With the spring weather tempting you to get out and start planting,
it’s a good idea to invest a little time getting you yard ready for the season. Spring yard maintenance sets the tone for the whole year. Cut corners in spring, and you’ll pay for it the rest of the year. For example, you could smother cherished perennials by failing to remove the mulch you piled around them for winter protection. And crabgrass needs to be nipped in the bud, in spring. Here are a few tips on what you can do now to prepare your yard for spring.
Walk Your YardBefore you start to do any yard work, it’s a good idea to take a
walk through your yard to survey any damage that has occurred over the winter. Look for any hanging branches or split limbs and cut off anything that is broken. Cut out any dead wood on your deciduous shrubs also.
Edge your garden bedsDefine the edge around your garden beds using a garden edger.
As you work your way around, kick any of the edging into the bed so it can be raked off after.
Clean Your Garden BedsCut down any perennial foliage remaining from last year and use a
steel rake to clean the beds out. Remove all of the edging along with any old mulch, leaves and branches. It’s important to remove as much of the old mulch as possible so that it doesn’t build up and smother your plants. You should also check around the base of any woody trees and shrubs to make sure there is no mulch left around their trunks. If there is, remove it so that it doesn’t cause the wood to rot.

On Tuesday April 30th, Kelly Peel the Vice President of Peel, Inc. (the company of our newsletter) is participating in the 5th Annual Colin’s Hope Classic golf tournament. Colin’s Hope is a nonprofit organization whose members are passionate about saving children’s lives and helping aid in the prevention of child drowning. All proceeds will help fund the support of programs that aid in preventing children from drowning.
