Pineapple Fried Riceyield 4 cups

ingredients:

3 c day old rice (white or brown)¼ c pineapple (diced)4 T red pepper (julienned)4 T red onion (julienned)1 T fresh ginger (minced or grated)1 T garlic (minced)2 t curry powder1 t sesame oil1T+1t peanut oil½ c pineapple (chopped)½ c. basil (whole leaves)2 eggs (lightly beaten)3 T tamari soy

-in a large nonstick sauté pan heat sesame and 1 t peanut oil over medium heat-add garlic and ginger and fry until it begins to turn golden-add eggs and scramble-set aside in a bowl-reheat pan over medium high heat with 1T fresh peanut oil and add onion, red pepper and pineapple-toss and fry until vegetables begin to caramelize-add curry powder and rice and fry stirring often until it begins to color-add tamari soy and sautéed vegetables with egg and toss-add basil, toss together and serve
