    At the time I wasnt interested as I was concentratingon something e se and I pretty m ch forgot abo t it.However, twe ve months ater I received a ca fromPa Kenny (CEO of Minor Internationa ) asking meif anything had changed and again asking if I wasinterested in working in Thai and. This time aro nd,there was not so m ch happening for me in A stra ia

    so my wife and I came over for a 3 day trip. I hadan interview and in the two days my wife and I hadto spare, we both decided we iked Thai and andfe t Bangkok was somewhere where we co d ive,so I accepted the job. We ret rned to A stra iaand within six weeks we had packed o r bags andmoved o rse ves to Bangkok. There was no brandof The Coffee c b in Thai and when I arrived so itwas going to be my job to a nch the brand here.We opened o r first store here in Ph ket at T rt eVi age, Mai Khao beach in 2009.

    thE CoffEE Club?The main thing we try to achieve with The CoffeeC b is a re axed environment. However, one ofo r b zz phrases we have been sing recent y is ifesty e dining. When peop e visit one of o rbranches there are no r es or restrictions as towhat yo can eat or when. We offer a day breakfastsand we offer a coho . If peop e want to eat pad thaifor breakfast they can. The idea is to make thingsas simp e as possib e for the cons mer. In mypersona opinion, as a cons mer, nowadays it isgetting harder and harder to have what yo wantwhen yo want. So my phi osophy is the easier yomake the environment for the cons mer the morethey are going to want to come back. We offer s cha arge choice on o r men , coffees and cakes,pastries, chicken dishes, fish dishes, pasta andThai food. In saying we want to be ifesty e, we areopen from 8am nti 12pm and we have a men thatoffers something for anytime d ring that period.

    offer the extensive food men . When yo ta k abo tresta rant cafe concepts ike B ack Canyon, I g ess weare a ot more modern than they are and I serio s y feeo r q a ity of food is a ot better than theirs too. O rfoc s is a ot more on the western food than the Thaifood and theirs is the other way aro nd. B t that said,we do take o r Thai food very serio s y, the Thai foodhas been designed by Thai chefs and it is a Thai chefsworking in the kitchen.

    ooking at as we . The strategy for a nching the brand inThai and is primari y to ook at the to rist ocations first; werea y want to get the brand recognition before we try to getthe Thai c stomers so we have to choose caref y the right

    ocations in Bangkok. Bangkok is a rea fick e market and yosee so many resta rants come and go beca se they dont

    nderstand the market and they dont isten to the cons mer.We are a big company and we have the experience. I thinkthat with Bangkok we wi probab y be ooking at the S kh mvitarea and there is one ocation we are negotiating on at themoment. So watch this space.

    do you havE aNy othEr aiMs for thE CoffEEClub thailaNd for 2011?Act a y ast year we took one of o r baristas to A stra iafor The Coffee C bs Internationa Barista of the YearChampionship. He was a g y from Chiang Mai who came toPh ket to work for s here at the store and we trained himand he has now been with s for two years. I knew as soonas saw him work that he was ta ented and I tho ght if wetake him and he can ho d his nerve on the day, and not getto nervo s in the competition s rro ndings, then he had agood chance of winning. Sometimes Ive seen with staffthat when there is press re they wo d rather take a stepbackwards than forwards, b t we rea y enco raged him andhe act a y went on to win the competition. For s that wasamazing and for the peop e from A stra ia and New Zea andit was even more amazing. I dont think they co d be ievethat we had on y been open for a year and a ha f and thevery first barista we bro ght to the competition b ew themaway. So saying that I think o r aim is to go back to A stra iaand repeat that. So I hope he wi go back and defend his tit eand hopef y we can take one more barista from here withhim. Its a great opport nity for someone from Thai and to go

    and visit another co ntry as it is something they cannotdo so easi y. Its a so a good story for recr iting staffand giving them s great objective when they come towork for s.

    what do you look for whEN hiriNg stafffor your braNChEs?Rea y the most important factor for s is persona ity.The ski s they wi req ire can easi y be trained tothem. Some of the best baristas we have had had noexperience at a at making coffee. unfort nate y, if wehave peop e that come from other coffee brands theyseem to think they know everything there is to knowabo t making coffee, this can bring a bit of a cha enge.They need to have a reasonab y good eve of Eng ishand in a to rist ocation I think its critica they havethis as c stomers, a tho gh on ho iday, get fr stratedvery easi y and they often take this o t on the staff.This is something that rea y bothers me and I wo drather not emp oy someone who has itt e know edgeof Eng ish, not beca se I dont want to, I do it for thembeca se if c stomers end p ye ing at them beca sethey dont nderstand them they are not going to behappy and wi end p eaving the job anyway.

    Fo ic ar unit Extraction (FuE) is a techniq e sed for gainingdonor hair for Fo ic ar unit Transp antation (FuT), whereseparate fo ic ar nits are harvested direct y from the donorarea, witho t the need for a inear incision. In this hair restorationproced re, a 1-mm p nch is sed to make a sma incision in theskin aro nd the pper part of the fo ic ar nit, which is thenextracted direct y from the sca p.

    Fo ic ar unit Transp antation and Fo ic ar unit Extraction aresometimes viewed as being two tota y different proced res. FuE,in fact, is a type of FuT where the fo ic ar nits are taken direct yfrom the sca p, rather than being microscopica y separated froma strip that has a ready been removed. To say it another way, inFo ic ar unit Transp antation, individ a fo ic ar nits can be

    obtained in one of two ways; either thro gh sing e-strip harvestingand stereo-microscopic dissection, or thro gh FuE.

    Therefore, when comparisons are made between FuT and FuE,what is rea y being compared is the way the fo ic ar graftsare gained (i.e. strip harvesting and dissection vs. direct extraction)rather than p aced into the sca p. However, the harvesting techniq edoes have imp ications for the proced re s ch as the transection(damage) rate, distrib tion of fo ic ar nits, n mber of grafts persession, post-op care and the tota graft yie d.
