New Brighton will again be home to the finish line of the Coast to Coast in 2016 and beyond.
This year was the first time the famous race finished in New Brigh-ton after previously ending in Sum-ner.
The finish line will be set up out-side the New Brighton Library by the pier on the weekend of Febru-ary 12, 2016.
Organisers have also locked in New Brighton past 2016 but could not confirm for how many years.
New Brighton Business and Landowners Association manager Paul Zaanen said it was “wicked.”
Mr Zaanen was a big part of this year’s event, he was the transition manager at the finish line.
He said it was a big part of the summer events calendar for the suburb and to have it confirmed the Coast to Coast was returning was a massive boost.
“The events calendar we’re working on at the moment is fantastic. New Brighton is the place to be and is the new events centre outside of the city centre. It’s exciting to have so many events coming to New Brighton and obviously a lot of local ones are going gangbusters too. So to have more events is good.”

Canterbury rugby’s popular Take a Kid to Footy ticket deal is back for the 2015 ITM Cup season thanks to new sponsor, Fresh Choice.
Fresh Choice will be the official naming rights sponsor for Take a Kid to Footy for at least the next three years.
Take a Kid to Footy tickets are $14 (plus service fee) for one adult and one child. Each additional child is $5.50 each.
There are dedicated Take a Kid to Footy seating areas at AMI Stadium and children get a free goody bag filled with snacks, a drink and a col-lectable for each Canterbury home game.
Tickets will go on public sale for the ITM Cup on Mon-day for individual games.
Canterbury’s first home game is against Counties Manukau on Sunday, August 23 (4.35pm).
Canterbury Rugby chief ex-ecutive Hamish Riach said the union is delighted to have a successful and locally-focused brand like Fresh Choice on board.
“Take a Kid to Footy is such an important product for us because it provides an affordable way for families to get along to the Canterbury games, and FreshChoice is a
great fit,” he said.“With three afternoon home
games this season we expect Take a Kid to Footy tickets to be in high demand, so it will be great to see lots of families coming along to support their team and we are grateful to FreshChoice for helping to make that possible.”

“That’s such a big part of it, the vision of rejuvenation for New Brighton, and the Coast to Coast, with both in a rejuvenating pro-cess. There is a lot of energy and effort in doing both and that’s bloody exciting.”
There are already plans to im-prove the finish line experience but details on those improvements were not available.
Entries are already open for next year’s Coast to Coast with prizes up for grabs for people who enter before July 31 including a $5000 sponsorship package.
Organisers have also added a school category with the mini-mum age being lowered to 14.
The new category is a team event for three people.

BY FRASER WALKER-PEARCEPolice say they have identified three suspected shoplifters a Dallington liquor store manager locked in his premises.
Detective Wayne Boyd told the Pegasus Post that they were closing in on a 17 and 18-year-old, and a man in his 40s.
They have been identified from security camera footage from the Woodham Rd Liquor Store.
On Wednesday three men alleg-edly stole a bottle of vodka from Mr Singh’s premises, before being locked in, and then breaking out of the store.
Mr Singh said: “I thought if I locked the doors, they would be frightened and give me back the bottle.”
But the men disappeared with the vodka after one of the men was al-leged to have threatened Mr Singh with a knife.
On Thursday Detective Boyd said police expected to find two of the suspects “in the coming days.”
“The shop had really good CCTV footage, which enabled us to identi-fy them (the suspects). I wish every dairy and liquor store had CCTV as good as that.”

RoadworksTwo Aranui streets, Doreen St and Marlow Rd, will only be open to traffic one-way from today. Traf-fic will only be able to travel east along Doreen St and north along Marlow Rd. SCIRT will be repair-ing footpaths, kerbs and the road with the work taking until Oc-tober. Once those two streets are finished SCIRT will then move to Merrington Cres and Betty Pl. Driveway access may be restricted at times during the work and prop-erty owners will notified before this happens.
Bus stopsDallington Residents’ Association member Philip Haythornthwaite will tonight (Monday) make a dep-utation to the Burwood-Pegasus Community Board about relocat-ing unused bus stops along New Brighton to Burwood Park and Lake Terrace Rd. He has submit-ted a proposal to relocate the bus shelters as they are no longer used by any buses between the Basset St roundabout and the Anzac Drive roundabout.
Community grantsThe Burwood-Pegasus Com-munity Board has been recom-mended to grant the Portsmouth St Kidsfirst Kindergarten $2960 to go towards their food Friday programme. The kindergarten initially requested $5480 for the programme from the board’s dis-cretionary response fund. $15,000 has also been recommended to be granted to the New Brighton Pro-ject group for wages.

This year’s Westpac Chopper Appeal has raised more than $250,000 for Canterbury’s rescue helicopter.
This is part of $1.5m raised across the country.
All donations from the Westpac Chopper Appeal are distributed back to the 16 rescue helicopter ser-vices across the country, meaning money raised locally, stays local.
Westpac’s director of corporate affairs, Sue Foley, said the total raised is an outstanding effort.
“New Zealanders have once again shown their support ral-lying behind their local rescue helicopters,” said Ms Foley.
“We’d like to thank all of those who generously dug deep and donated, along with everyone who was involved in the fundraising events in their communities.
“The helicopters provide such a vital service that saves lives on a daily basis. It’s important for us to continue to play our part and raise awareness as well as much-needed funds to keep them in the air.”
Westpac employees were also crucial to the success of this year’s result with fundraising initiatives organised around the country as well as hitting the streets to col-lect $128,000 on the nationwide Chopper Street Appeal day.
Canterbury West Coast Air Rescue Trust chairman, Murray Weakley, said: “We are continually overwhelmed by the generosity of locals and could not be prouder to be part of this community. We would like to thank every person and group who gave as well as the support from Westpac through the chopper appeal every year. Every donation makes a big difference to help us keep doing what we do and we are very grate-ful.”

Shirley Boys’ High principal John Laurenson says stand-downs are used to help students at the school.
Last week the Pegasus Post re-vealed east Christchurch schools’ suspension statistics for 2014.
The figures showed in 2014 Shir-ley Boys’ stood down 38 students, suspended 11, excluded four and expelled one.
This is compared with 45 stood down in 2013, 11 suspended and three excluded.
Mr Laurenson (right) said like all schools he would like to see no students taken out of school but sometimes these are tools that are used to help students.
“It allows us to bring in wrap around services and social welfare services to help students. Things have changed, once upon a time we got rid of the problem but now we deal with it differently. A stand-down is one weapon of an arsenal of weapons we use to get things sorted out.”
He said of a school of about 1250 to only have 38 stand-downs, which is only three per cent of the roll, was very good.
“They are not necessarily bad kids. The main reason for a stand-down is it’s a clear line in the sand, it allows time for kids to get out of the environment where they could
be leading other children. It’s not he’s a bad kid, it’s just a kid that needs correction. Every single hu-man being at some stage needs to be corrected”.
Mr Laurenson said the one ex-pelled student was helped into a new school instead of simply be-ing turfed out of the education system.
Schools are not obliged to find a student over 16 years of age a new school but in this case Mr Lauren-son said Shirley Boys’ did.
This is the definition of an ex-pulsion where as an exclusion means the school is obliged to find that student a new school because they are under 16.
“While it may be that some schools try and remove difficult students as soon as they turn 16, in our case we try and meet our social and educational obliga-tions, by retaining students.”

A Burwood dairy owner is fed up with people parking in front of his store all day and has successfully lobbied for parking restrictions to be considered.
Ever since the redevelopment of Burwood Hospital begun, owner Dipak Kalidas has had to put up with cars using the parking bay outside his Burwood Foodmarket as an all-day car park.
He believes it is construction workers at the hospital who are parking there.
He said it was annoying and has cost his business money.
“There’s plenty of parking fur-ther away but I don’t know why they park here. There’s always cars parked there.”
He said customers have nowhere to park and will drive straight past.
Mr Kalidas asked the city coun-cil for help but nothing could be done initially.
He has opened up the back of the dairy to allow customers to park there but said it wasn’t as easy for customers to simply pull
into the bay.The Burwood-Pegasus Com-
munity Board will now consider whether to approve 10min park-ing restrictions in the parking bay outside the dairy.
Mr Kalidas was relieved the re-strictions were being considered.
“Yeah, really happy because this will continue to happen until the hospital is built.”
It has been recommended the community board approve the restrictions for the parking bay at tonight’s (Monday) meeting.
It will cost $300 to install the signs.
Project director, Bryan Spinks said parking at Burwood Hospi-tal is for staff, patients and their families.
“It is a contractual requirement that contractors are not allowed to park in the staff or public parks on the site. However, some ad-ditional temporary parking has been made for some of the con-tractors and others are parking on the roads.”
He said the Canterbury District Health Board had not received any complaints about contractors parking in surrounding areas.

Woolston business owners and residents are outraged at plans to close the area’s post shop.
Woolston Auto Surgery owner Roydon Smart said it seemed “crazy” to close the Ferry Rd shop because it served a lot of people.

Earlier this month, New Zea-land Post revealed plans to ex-pand postal and banking services in Ferrymead, which will see the Woolston branch close.
NZ Post is looking for a tenant to fill the post shop building to run the postal services, but people wanting to use banking services and bill pay will have to travel to Ferrymead or Eastgate mall.
Mr Smart has been in contact with Kiwibank and NZ Post to outline his concerns and has been handing out pamphlets to local business owners and residents to make them aware of what is happening.
“I’ve had a business here since 1979, now they are moving the post office; always used this one. Now I’ll have to drive to do my banking, because with money you have to take it to the bank. It’s a super busy post office, it all adds up to be a stupid, selfish decision.”

The Food Factory Shop in Wain-oni and Ferrymead is giving back to its community by donating $600 every month to local groups, organisations and individuals.
The shops, started its Our Community fundraising scheme in May.
Every month, jars are displayed in both shops, each representing a group. Any time a customer makes a purchase, they are given a token to vote. The customer then chooses who they want to support by plac-ing the token in one of the jars. At the end of the month, the tokens are counted to see which group comes in first, second and third.
Birthright Christchurch, an organisation that supports single
parents and caregivers, had the most tokens in June, winning $300.
Manager Rhodora Sagles said it was wonderful to receive the donation.
“The money will go towards our parents’ groups, which we facilitate twice a year. Speakers from various agencies share new practical skills and information. The sessions have been very helpful to single parents because they offer support and friendship, all while learning new things.”
The Food Factory Shops are bakery and food outlets, which sell seconds, trials, dated, short dated, cancelled export orders and deleted line products from Baker
Boys and many other manufac-turers.
Baker Boys administration manager Trudy Daniels said the company wanted to help the community to show appreciation for the support it received after the earthquakes.
“Everyone in Christchurch has had a rough few years, especially those in the east, where our shops are. We have come through the other side, so our managing director Andrew Moon wanted to support and say thank you to the people who have continued to support us.”

Susan Sanders, section curator of the central rose garden in the Christchurch Botanic Gardens, is hosting a demonstration on the intricacies of the rose pruning process. On two days this month she will host rose pruning demonstrations. This annual event will focus on standard, climbing, carpet, hybrid tea and floribunda roses. Demonstration dates are July 25 from 1-3.30pm (rain date August 1) and July 29 (rain date August 5), also from 1-3.30pm. Linwood College scored big this season, with new gear for the school’s growing number of netball players thanks to the ANZ netball grant scheme.
Teacher in charge of netball, Courtney Flay, says the grant, which includes 20 balls, will be a big help for the school’s four new netball teams.
“Netball was non-existent when I took over the project in 2014. That year, we started the season with one team and now, after lots of hard work, we’ve got five.
“We’re really excited that the sport is growing so quickly but it’s tough to keep up with the demand for new gear. These new netballs will really help the play-
ers get the most out of trainings.”This year, ANZ is awarding a
total of $100,000 in netball grants to help clubs, schools, social teams and fans achieve their dreams.
ANZ branch manager Nathan Harman says the programme was
launched in 2012 to support fans and help netballers get to the next level in the game.
“Netball is one of the country’s most popular sports with tens of thousands of players at schools, clubs and social teams across the country.
“It’s about inspiring players to go further. This might involve kitting out a team with new gear or uniforms, helping players get to an ANZ Championship match to see the action up close this season, or even getting a few pro-fessionals to visit their school or club to host a training session – that’s bound to be a life-changing experience for some of our future netballing stars.
“We’re really happy to help Lin-wood College to provide enough gear for its growing number of netball players.”

A Christchurch lawyer has been ap-pointed as the newest member of the Ronald McDonald House South Is-land’s board table.
Julie Hands has been bestowed the Institute of Directors’ First Steps in Governance Award, giving her an internship position on the charity’s board.
Institute of Directors’ Canterbury branch chair Janice Fredric said the judges were impressed by Ms Hands’ ambition, focus and leadership po-tential.
“Julie is an exceptional young woman who has already taken on a range of leadership roles in both her career and the community. Her breadth of skill and empathy for the cause will make her a real asset to the Ronald McDonald House South Is-land board.”
Ms Hands, a resource manage-ment and commercial solicitor for Duncan Cotterill, says the award is an honour.
“The board seems as though it has a great dynamic and there’s a lot of diverse knowledge and experience there. I’m excited to learn from them and hope this will be the first step in a long governance career.”
Ms Hands will also receive men-toring from an experienced director, $810 toward Institute of Directors’ professional development courses, and a one-year membership of the Institute of Directors.

The extreme frosts of the last week have resulted in a number of calls to properties where hot water cylinders have leaked and caused flooding in the building or where sprinkler systems have frozen solid and leaked.
I can certainly understand, turning the hot water tap on in the kitchen at home first thing in the morning has resulted in slushy ice in the sink.
We were fortunate enough though not to have our pipes freeze solid enough to split.
There were also a number of car crashes caused by black ice. If it looks wet at all on those -5 deg C mornings then the road is almost certainly fro-zen solid. We all need to drive accord-ingly.
It’s probably therefore a good time to mention the metre/heater rule again.
This is a mantra the Fire Service has invented to give a rule of thumb about anything combustible near to some-thing that could set it on fire.
The drying of clothing in front of a fireplace or heater is fine except for the human tendency to want things to happen quickly causes us to place the damp clothes too close. We like to see the steam rise.
Then the phone goes, or tea needs to be cooked or the kids do what kids do and attract our attention.
Placed closer than a metre that steam will rise until no moisture is left. The clothing will keep on heating. It might scorch. It might ignite.
The metre/heater rule simply saves this from happening.

Type 2 diabetes is becoming a major health issue for New Zealand, with obesity recognised as one of its most preventable causes. According to a Diabetes NZ spokeswoman, “While there is no silver bullet, we do
know we can prevent obesity through lifestyle and exercise.”For their part, the team at Physical Sense Gym & Physio also
recognise that a healthy diet and regular exercise are the two key factors underpinning successful weight loss and have developed a programme specially designed for diabetes clients. It is proving popular with people across a wide age range (20 to 70), including many who are overweight or severely obese.
The programme comprises a circuit that allows the clients to do the exercises at their own pace, without any pressure to keep up, combined with advice from the community diabetes team who support them through the necessary changes to their food habits.
“The advantage for these clients is that we are a normal public gym, so our diabetes clients are mixing with people who don’t have health conditions,” team member Ietje van Stolk says.
“And by coming to the gym, our diabetes clients are getting out of the house and are meeting other people including people with the same issues and weight problems as they have, and being physically active is very motivating. They encourage each other and there is plenty of fun and humour between themselves and with the instructors, who are there to lean on and help everyone reach their goals.”
Medical research shows participation in regular exercise gets the heart rate up, helps strengthen muscles, improves blood glucose control and can prevent or delay type 2 diabetes, Ietje points out. It also positively affects lipids and blood pressure, reduces the risk of cardiovascular events and improves quality of life.

Christchurch Airport Ambassador Programme’s
5th AnniversaryFor half a decade, a band of dedicated volunteers have
been guiding travellers to where they are supposed to be, as well as pointing those meeting friends or strangers in the right direction. Unpaid, except for the smiles and gratitude expressed in many customs and languages, their sterling work was recognised with a party of thanks held at Christchurch Airport’s new cinema. Among the company of Airport Ambassadors are 16 who have been shining the light of true direction and guidance since the very beginning of the Ambassador Programme. “I am a ‘people person’ with an outgoing personality. Well, I used to be. When I was diagnosed with cancer, my demeanour changed, and it wasn’t long before my treat-ment became a lonely and nerve-racking journey,” says Miretta, a Look Good Feel Better workshop participant.
That’s why Look Good Feel Better exists. The national charity supports Kiwis at a time when they need it most, by providing an opportunity for participants to claim back their personality be-yond being a cancer patient - and learn practical tools to combat the ongoing visual and emotional effects of therapy.
“It truly was a morale-boosting makeover, I felt like one of the group instead of a patient. It boosted and improved my self-esteem – and felt so darn good!” Miretta says.
“It’s often the first time many women will be seen by others without their wig or be touched by a person that isn’t doing so for medical purposes,” Clare O’Higgins, Look Good Feel Bet-ter’s general manager, says.
“I rarely let people get close, other than those who are dear to me, but the women there all
felt the same. We were all going through the same thing and bonded like I could never have imagined,” Miretta says.
The demand for these life-enhancing workshops is now at its highest. More than 1860 Kiwis will be diagnosed with cancer during Look Good Feel Better’s national awareness and fundrais-ing campaign, Feel Better Month, this month – making the need for their non-medical services even more vital.
“It’s truly devastating to have to turn potential participants away because we can’t support the demand – we need trained
beauticians, volunteers and, most importantly, funds to ensure no cancer sufferer is denied the chance to smile again,” Ms O’Higgins says.
Last year, Look Good Feel Better held workshops in 24 locations throughout New Zealand. This year, the charity is hosting workshops in 31 areas nationwide. Look Good Feel Better is aiming to provide enough local workshops so no participant has to travel more than 30 minutes to attend morale-boosting sessions.
“As long as New Zealanders continue to suffer the physical
side effects of cancer treatment, Look Good Feel Better will be there to help bring back a sense of normality and control during a time when diagnosis and treat-ment have taken over their lives,” Ms O’Higgins says.

Cream for every occasionCREAM SCONES Light and airy, the size of these scones makes them more suited to afternoon tea than a hunger-busting morning coffee accompaniment. Makes about 14
2 cups plain flour 2 tsp baking powder ¼ tsp salt 2 tbsp caster sugar 250-300ml cream
Preheat the oven to 220 deg C. Lightly dust an oven tray with flour. Sift the flour, baking powder and salt into a bowl. Add the sugar. Stir in 250ml of cream with a fork. If too dry, con-
tinue adding more cream. Turn on to a floured bench. Knead 3 or 4 times. Roll to about 1cm thickness. Cut into 5cm rounds using a biscuit cutter. Cut straight down through dough – do not twist the cutter otherwise the scones will rise unevenly. Offcuts can be kneaded, rolled and cut into rounds. Place on tray and bake for 10-12 minutes, until golden. Serve with strawberry jam and cream.

see reference to heavy anddouble cream. Heavy cream, alsocalled heavywhipping cream,
has a fat content of 36 to 40 percent. This creamwill double involumewhenwhipped. Heavycream is not the same as doublecream.Double cream:This newproduct from Lewis RoadCreamery is organic,pasteurised, and has 48g of fat in100g.It’s pure creamwith no

Lite cream:Meadow Freshproduces a cream that is notsuitable for whipping but has 6per cent less fat than theirtraditional cream (12g). It’s bestfor pouring over desserts or foruse in sauces and has a yummy,creamy taste without thecalories. It containsmilk, cream,soymilk solids and a gluten-freethickener (407).Thickened cream:Anchor’sThickened Cream is a ready-whipped creamwith 40g of fat.Great dolloped on desserts—especially barbecued bananas—or scones and pancakes. As wellas cream, it contains gluten-free
thickeners (1422 and 407a), skimmilk and gelatine.Cream for cooking: Producedby the cream cheesemanufacturer Philadelphia, aretwo creams for cooking—Original and Lite—with 60 percent and 30 per cent less fat thanregular cream.They do contain thickeners,
includingmaize and vegetablegums, gelatine and emulsifiers,but are convenient as they havea relatively long refrigerator life.They produce creamy, glossy
sauces that don’t needthickening or reducing beforeserving.

OYSTER SOUP3 cups good fish stock1 bunch fresh herbsJuice 1/2 lemonFreshly ground black pepperto taste75g butter1/2 cup plain flour1 cup each: milk, single cream24 oysters
Place the fish stock, herbs,lemon juice and black pepper ina saucepan over low heat for 10minutes to allow the flavours toinfuse. Cool, then strain. Meltthe butter in a heavy saucepanand stir in the flour. Cook on lowheat for 1-2 minutes.Gradually stir in the milk andstock, cooking until thick. Addthe cream and the oysters.Warm though gently. Serves 6.
CREAMY GARLICPRAWNS1 small onion, diced
2 rashers bacon, diced2 tsp olive oil3/4 cup diced fennel bulb3 cloves garlic, crushed250g shelled raw prawns2 tbsp sweet chilli sauce4-6 tbsp light cream forcooking
Saute the onion and bacon untilcooked. Place aside. Wipe thepan clean.
Add the oil and heat gently.Saute the diced fennel, untilsoftened. Stir in the garlic andheat for 1 minute. Add theprawns.
Cover and cook on low untilthey have turned pink. Add theonion and bacon then the chillisauce and cream. Stir untilheated through. Serves 2.
TAMARILLO SOUFFLEThis recipe is a cross betweena mousse and a souffle.6 tamarillos, peeled1/2 cup sugar2 tbsp port1 tbsp powdered gelatine4 egg whites1/2 cup caster sugar
1 cup double cream
First prepare an 18cm souffledish. Cut a piece of foil or waxedpaper to fit around the dish,allowing a 3cm overlap.Fold in half lengthwise. Wraparound the outside of the dish,allowing it to extend above therim to form a collar. Tie tosecure.
Place the tamarillos in ablender or food processor withthe first 1/2 cup of sugar.Process until smooth then sievethe mixture.
Stir in the port. Soften thegelatine in a little water thendissolve over hot water. Add tothe tamarillo mixture.
Refrigerate, until beginningto set.
Whip the egg whites, untilfluffy.
Gradually beat in the castersugar until thick and shiny.
Gradually fold into the puree.Whip the cream and fold into
the mixture.Pour into the prepared dish
and refrigerate, until set.Serves 6.

Addmore salt if necessary plusfreshly ground black pepperand 1 tbsp chopped freshherbs, such as parsley,chives and thyme. Reheatgently, sprinklingindividual serves withgrated cheddar.

onions are golden orcaramelised. Either way it’sworth it if you enjoy tastyfood. You can cut theamount of fat used bycovering the pot while youronion cooks— the lidcollects moisture thatwould normally evaporate,and by returning this to theonion, it avoids burning.

fashion accessory fit for royalty?Native to South America,
potatoes were first cultivated bythe Incas about 200BC. The jewelin the crownwas the Peruvianpurple potato— royally purpleinside and out.When harvested,theywere kept exclusively forthe Inca kings.And in 18th-century France,
Marie Antoinette made aWorldofWearable Art-type fashionstatement by parading aroundthe countryside wearing potatoblossoms on her expensivedresses.Whenmost of us think of
packet ‘‘chips’’ we tend to thinkof fatty, salty occasional treats.But I was recently pleasantly
surprised to discover amoreishrange of proper chips— 100 percent natural, gluten-free, GMO-free and hand-cooked in high-oleic sunflower oil. Ned andMina Smith, the expatriateAmerican couple who run thefamily-style Proper Crispsoperation in Nelson, brandedtheir delights ‘‘crisps’’ todistinguish them frommass-produced ‘‘chips’’. And they are
different. I just love themcrushed and sprinkled overicecream. The rapport between
the salty tang of the chips andthe sweetness of the icecream isa taste treat.The potato is certainly
common and a staple worldwide.They are cheap, hardy and easyto grow, and are high in starch,protein and vitamins. They arealso versatile.We all love thetraditional potato favourites butthis week I’m serving upsomething funky— potatoeswith icecream, in chocolatetruffles, with squid and in agluten-free pastry.
RECIPESTOFFEE & POTATOCRISPS VANILLAICECREAMProper Crisps are delicate.Perfect for coating icecream.
4 large scoops French vanillaicecream1 large cup Proper Crisps inMarlborough Sea Salt, lightlycrushed1/2 cup long thread coconut,lightly toasted4 meringue nests, optionalToffee: 1/2 cup sugar1/2 cup water
Refreeze the scoops oficecream. When hard, roll in thecrushed crisps and coconut.Freeze, until ready to serve.
To make the toffee, placesugar and water in a large,microwave-proof glass bowl.Microwave on high for 2minutes.
Stir to dissolve sugar.Continue microwaving for 3-4minutes until liquid is lightgolden. Remove — the toffeewill continue to colour onstanding.
Remove icecream fromfreezer. Place in meringuenests, if using. Drizzle withtoffee. Serve immediately.
Serves 4.
CHOCOLATE POTATOTRUFFLESThe mashed potato must befree of seasonings, cream andbutter. It should also be verywell mashed and have asmooth consistency.
1 cup dark chocolate chips1/2 cup cold cooked mashedpotatoes1/2 tsp vanilla essence4-5 pieces crystallised gingerDark cocoa powder for dusting
Place chocolate chips in amicrowave-proof bowl. Melt on50 per cent power for about 2minutes. When completelymelted, stir into mashed potatovery well.Add vanilla essence and stir wellagain. The mixture should besmooth. Chill for 30 minutes.
Cut ginger into thirds orquarters. Take a tablespoon ofpotato mixture and roll around apiece of ginger.
Repeat with remainingmixture. Place on a plate anddust with dark cocoa powder.Roll into small balls. Dust withcocoa. Refrigerate until firm.
Can be stored in fridge for upto one week.
Makes 16.
POTATO & SQUIDSALADThis is based on a PetaMathias recipe that she will bedemonstrating at theChristchurch Food Show, April4-6.
400g waxy potatoes4 eggs, free-range/organic, ifpossible1 large shallot4 tbsp olive oil1-2 tsp diced or crushed chilli100g squid rings8 pitted black olives8 anchovies, oil retained2 tbsp white-wine vinegarFlaky sea saltFreshly ground black pepperto taste
Peel potatoes. Place in cold,lightly salted water. Bring toboil. Simmer, until cooked.Don’t overcook. Slice thickly.
Meanwhile, place eggs incold water. Bring to boil.Simmer for 5-6 minutes. Cool,then peel and quarter. Sliceshallot and place in icy water tocrisp.
Heat a little of the olive oil in afrying pan. Add diced chilli.
Saute squid rings for about 2minutes, until just cooked.Combine with potatoes, shallot,eggs, olives and anchovies in abowl.
Make a dressing usingremaining olive oil, a little oilfrom the anchovies and vinegar.Season. Drizzle over salad.
Serves 8 as a starter.
GLUTEN-FREEPOTATO PASTRY450g cooked warm mashedpotato100g butter, chopped1 & 1/4 cups rice flour1/2 cup cornflour1 tsp salt1 egg, lightly beaten
Place warm mashed potato andbutter in a large bowl and mixwell. Add rice flour, cornflour,salt and egg. Mix well. Use yourhand to mix it, if easier. Wrapthe dough in a plastic bag. Setaside for 30 minutes to rest.Roll out to about 1cm thicknessor thinner. Great for pie pastryor for sausage rolls.
Makes 800g.
TAMARILLO SOUFFLE This recipe is a cross between a mousse and a souffle. Serves 6

Pour into the prepared dish and refrigerate, until set.

3 cups good fish stock 1 bunch fresh herbs Juice ½ lemon Freshly ground black pepper to taste 75g butter ½ cup plain flour 1 cup each: milk, single cream 24 oysters
Place the fish stock, herbs, lemon juice and black pepper in a saucepan over low heat for 10 minutes to allow the flavours to infuse. Cool, then strain. Melt the butter in a heavy saucepan and stir in the flour. Cook on low heat for 1-2 minutes. Gradually stir in the milk and stock, cooking until thick. Add the cream and the oysters. Warm though gently.

1 small onion, diced 2 rashers bacon, diced 2 tsp olive oil 3/4 cup diced fennel bulb 3 cloves garlic, crushed 250g shelled raw prawns 2 tbsp sweet chilli sauce 4-6 tbsp light cream for cooking
Saute the onion and bacon until cooked. Place aside. Wipe the pan clean.
Add the oil and heat gently. Saute the diced fen-nel, until softened. Stir in the garlic and heat for 1 minute. Add the prawns.
Cover and cook on low until they have turned pink. Add the onion and bacon then the chilli sauce and cream. Stir until heated through.

Currently back home in Lyttelton and working on some new tunes, well travelled violinist and composer, Fiona Pears is putting together an intimate show for later this month.
“I thought I should put my fiddle fingers to good use and do a little winter show,” said Fiona. “Where better to do it than the lovely "SHE" in Governors Bay!”
Fi will be will be doing a small concert there on Friday July 31st at 7pm and will be performing with her band made up of Ian Tilley on piano, Mike Ferrar on guitar and Peter Fleming on double bass.
