Piedmont’s PDO and PGI products
The lion’s share of PDO products definitely falls to cheeses.
PDO certification means that both the raw material and the production
process are linked to a specific area, while for PGI products the raw
materials may be purchased outside the area in question.
■ Bra PDO, which comes in soft and hard versions, is made from cow’s milk.
There is also a version made from Alpine meadow milk
■ Castelmagno PDO, one of the most prized blue cheeses,
is made from cow’s milk, with a version made from Alpine meadow milk
■ Robiola di Roccaverano PDO, made between Asti and Alessandria,
is a delicate fresh cheese made from goat’s milk or a blend
■ Gorgonzola PDO, a cow’s milk blue cheese, comes in mild and piquant versions
■ Grana Padano PDO, made from cow’s milk, is available in different types
aged for different periods
■ Murazzano PDO, a soft cheese produced in the Alta Langa area,
is made from sheep’s milk or a mixture of sheep’s and cow’s milk
■ Raschera PDO is made from cow’s milk, sometimes with the addition of
goat’s or sheep’s milk. There is an Alpine version produced at an altitude of
over 900 m.
■ Taleggio PDO, a soft, briefly aged, cow’s milk cheese.
In Piedmont it is made only in the province of Novara
■ Toma Piemontese PDO is a cow’s milk cheese from the Alpine area
of Piedmont, including a version made from Alpine meadow milk

Piedmont’s PAT productsThere are around 150 PAT products belonging to the dairy and
meat sector. Steeped in tradition, these are products that have
been produced, preserved and aged in the same way for
at least 25 years.
■ Bettelmat PAT, a cow’s milk cheese made in
the province of Verbania
■ Toumin dal Mel PAT, a soft cow’s milk cheese from Valle Varaita
■ Bianca Alpina or Toma del Lait Brusc PAT, made in Val di Susa,
Val Sangone and Valli di Lanzo, with a distinctive crumbly texture
■ Maccagno or Macagn PAT, a cow’s milk cheese
made in Valsesia and the valleys around Biella
■ Sambucano PAT Lamb, reared in the
Valle Stura area and neighbouring valleys
■ Mustardela PAT, a traditional sausage from the Val Pellice area
■ Val Vigezzo PAT kid, from an area traditionally
known for goat farming
■ Bra PAT sausage, made mostly from lean beef

Piedmont boasts around a hundred PAT products
in the sector of sweets, pastries and baked goods.
These treats are steeped in history and tradition,
and often connected to folklore or religious rituals,
like for example Coppette di Sant’Antonio PAT.
■ Baci di Dama di Tortona PAT, delicate, round,
exquisitely fragrant biscuits
■ Bonet PAT, a sumptuous bain-marie-cooked pudding
■ Canestrelli PAT, fine waffles originally from Crevacuore near Biella
■ Farinata PAT, a tempting savoury chick pea focaccia
made in the Alessandria area
■ Grissino Rubatà PAT, crisp, flavoursome breadsticks
