Lush green landscapes and beautiful lakes are only the beginning of what Ireland has to offer. An incredible history, some of the best food in the world, and friendly locals (Dub-lin was voted the Friendliest City in Europe twice) await your visit to this beautiful island. There’s no lack of things to do in Ireland, but if you have any appreciation for nature—even if it’s just because it makes for a cool Instagram picture—you should visit the Ring of Kerry. Beginning and ending in Killarney, the circular route travels through towns and vil-lages, each with their own charm, castles, and an extensive array of natural wonders. Visitors can bike, walk, or drive through the Ring. The more time you spend in the Ring, the more adventures you’ll have! For those who prefer the city life, Temple Bar in Dublin is fantastic. A group of galleries, restaurants, and pubs attract tourists from all over the world. The National Wax Museum, The Button Factory, and a musi-cal pub-crawl are just a small fraction of the attractions that await you.Although the weather can be unpredictable, there are very rarely any extreme temperatures. An average of 50°F is the usual, so make sure to pack your jeans and light sweaters. Sunscreen and an umbrella are a must on your packing list. During July and August, Ireland gets about 18 hours of day-light, which means sunglasses are an absolute necessity!

A visit to Trinity College to see the famous Book of Kells should definitely be on your to-do list. A ninth century gospel manuscript, the Book of Kells is an amazing collection of pre-cise hand-lettering and gorgeous illustrations that has attracted visitors for hundreds of years. Founded in 1139, the abbey has gone through many rulers and many functions. Originally built by the Guinness family in order to host dinner parties in honor of the Prince of Wales in 1906, the room features 11 stunning Waterford crystal chandeliers. Today, you can order off of a daily Table d’hote menu or a tasting menu. The menu changes everyday, but offers a variety of dishes of all tastes. Roast Monkfish tail, tortellini, cream of celery soup, and crabmeat risotto are just a few of examples of past dishes. Local and global wines are also available, some made no farther than next door.

For a more casual dining experience, Cullen’s at the Cot-tage is ideal. Just a short walk over the bridge leading from the castle, the traditional thatched cottage restaurant is named after past maître d Peter Cullen who served Ashford for over 25 years. To this day, they strive to maintain the excellent service Cullen provided everyday. The restaurant has an all-day, bistro-style menu that offers fare like seafood chowder, fish & chips, chicken breasts, and burgers.
