MOST POPULAR WINES BYVARIETY AND COUNTRYTo conduct the research for this feature, we ask restaurant wine buyers to list their ten top-selling wines in order ofpopularity. We use the total number of mentions a brand accumulates to determine its placement on the lists that fol-low, considering each wine's position on the lists when necessary to break ties. The average restaurant-wine-list prices
for individual bottlings appear in the far-right column of each chart.
SPAR KU NG WIN ESKrug has claimed the top spot as the most popular sparkling wine in topUS restaurants, a ^pot held for several years bv BiJIecatt Salmon, andfor two decades by Veuve f licquotbeforeth.it Jin Ahn of NYC 's Norettuh hai the half bottle of Krug Grande Cuvee on his list tor $75 "It'sone item I always have and people knou it," he says "I started thatthree years ago as a statement It's not my moneymaker"
Meanwhile, Billecart Salmon remains a favorite at dining roomssuch as Jean Georges in NYC "Our cheapest Champagne is $24 aglass. La Caravelle, and Billecart outsells it Billecart makes a specialCuvee Jean Georges and it has a history at the restaurant Our chentele views it as an exclusive product," says chef sommelier Rorv Pugh
Sparkling wine now accounts for seven percent of the Most f'opular Mines, iiie largest share in the history of the poll It's been on aslow but consistent rise since 2000 when it held a 2 2 percent shareChampagne holds the top 11 spots "ln the future, ! wouldn't seeanything shaking Champagne,' says Caleb Cancer of tfl ( ompagmtdcs Vins Surnaturels rn N\C "I went through and looked for all ourtop selling bottles and they were all Champagnes" At Lairon inPhiladelphia, Hai Tran finds that "people are open and don't thinkol Champagne only as something you drink when vou ctlebrate Youcan actually enjoy it with a meal '
While sales have come easy to many this year, others need to do alittle campaigning Collin Moody of Iniomi Tax Bar in Chicago says,"Whenever I think of Champagne, that's when I want to put — i nscrawled red letters across the l i s t— notes that say,'( hampagnt. iswine' It's the most food friendly wine on the planet and you shoulddrink it with everything'"
I have been pleased with how, more and more, people arereceptive to drinking Cham-pagne with their meal, notjust as a thing to enjoy beforetheir meal-but actually drink-ing some interesting bottles toaccompany first, second, and even third courses -KsandekPodbielski, Coquine, Portland, OR

CHARDONNAY"People love their pinot noir and chardonnay; they just don't like to admitit savs Stephen McGinms at LEtoik in Madison, Wisconsin Likerrnny sommehers this vear he found that his customers didn't go inmuch for chardonna\ —unless it was called Burgundy
While legions of fans continue to sustain Cikebread SonomaCutrer and Rombaucr at the top of respondents' lists holding thethree prime spots for the last decade, Chablis suiged onto die chart, with the appearance of six ( habits producers among the top 18 chardonna) s, w here there was only one — Patrick Piuze — Ust year 'We dosell plenty ot C aliforma chardonnay says Sh innon flicker at foreignCinema in San Francisco,' but we don I have people searching for uPeople are steering awiy from the buttery styles and more towardC habits styles, toward more acidity and freshness"
In N\ C, Daniel Beedle observed the same trend at Indian AccentThere was a phase of people looking for the sort of Arnot Roberts,

This trend aligns with the drop in popularity lor California wines ingeneral, and the surge in French wines (see chart p 88) Even at Frasca I nod and Wine a restaurant spcci ihzing in Italian cuisine in Bou!der, Colorado, sommelier Cai lin Karr leporled that white Burgundysales are tobust accounting for ten percent of their buying budget
Despite the interest in fine chardonnay, the variety overall has beenlosing ground o\er the last 20 >ears making up lust 8 3 percent ofthe top selling wines today A number ot sommehers reported thatthey encourage diners to branch out and trv something new othersattribute du drop off in orders to the customers themselves some ofwhom still ascribe to the anything but ch irdonmy movement

PINOT NOIRThis year pinot noir is back on top, accounting for 13.6 percent of themost popular wines in US restaurants. Although the percentage is thesame ab Iasi year, it held its ground while cabernet lost some share luthe surge in more esoteric varieties.
Many sommelier reported increased interest in Oregon pinot, which earned SO percent of all the points on respondents' top-tenlists, most all of tha t in Willamette. California earned 30 percent(almost half of that in Sonoma wines) and Burgundy earned 14 per-cent. The Oregon trend is clear in the list of most popular bottlings, with 18 producers from the state making the cut. "The New Yorkcrowd is 'over' California pinot noir," says Daniel Beedle of IndianAccent in NYC. "They think it's really big, extracted pinot, and this isnot a Marcassin crowd. They see Oregon pinot and think it's a perfectmix— classic Old World flavor with a l i t t le modern body and fruit."
Dan Davis of Commander's Palace in New Orleans also saw anupswing in sales of Oregon wines. "The very special terroir that youfind in Oregon lends itself to pinot noir in a way that almost nowhereelse in North America does," he says. But California pinot still placeshigh up the list with Sonoma Coast producers, including Flowers,I'ailla and Joseph Phelps. Joshua Steiner of Carneror in Milwaukeefinds that bigger California pinot noirs works well in a steak-centricenvironment—"even though they're not as big or tannic as caber-net sauvignon," he says. "We look for 'sreakhouse pinots' that havedarker fruit , a little less racy acidity, and a little more body and struc-ture—wines like Sea Smoke's 2014 Santa Barbara Southing."
If anything, it's pricing that's holding California pinot noir back. While the average price of pinot noir dropped by 52 per boule thisyear, Willamette wines hovered at $75, while California prices rangedfrom an average of S84 on the Central Coast to $94 on the NorthCoast. Ryan Jasielum of San Francisco's Liholiho Yacht Club found hispinot values in Burgundy. "Our lisr is fifty-fifty as far as American andFrench. I think we sold a little bit more of iiie Frederic Esmonin Bour-gogne because it was such a great value," he says. "To be able to offeran Old World wine at a value-driven price point increased the sales."

CABERNET SAUVIGNONCabernet sauvignon and pinot noir have been fighting for top variety inWeil's Annual Restaurant Poll for the last five years Last year cabernet took top honors among the most popular wines in US restaurantsThis vear pinot noir edges it out b) less than a percentage point

Some of that success has to do with the magic word, "Sancerre," a winewhich sommelier;, report continues to fiv out of their cellars "It's themost popular wine in the restaurant if you total all of the glasses we sell aswell as the same selection by the bottle,' says Charles Puella at Lc Coucouin NYC "We go through (en uises ,1 month at least, maybe fifteen Hisbest seller1 Vacheron—which holds the number one spot on our MostPopular French Wines list

SPAINThe excitement we hear from sommelier about Spain shows in the coun-try's share of the most popular wines. Up until 2014, thil share hadhovered around four percent, jumping Io 75 percent in 2015, 102percent in 2016 and settling back to 6 9 percent tim year, with thevolatility of a classic old Rioja This year, rn fact, it's a classic Riojaproducer R Lopez de Heredia that not only tops the list of mostpopular Spanish wines, but the Restaurant Top SO as well It's joinedhere by other high end Riojas, along with edgy hipster favorites, likeTxakohna from <\meztoi and Canar) Islands ros<5

Albanfio from Rias Baixas is also getting its share of attention, evenat a French restaurant like NYC's Roams, where Arnaud Tranchecalls out Albamar when asked what wines outside of Trance sell wellon his list At Liholi/io Yacht Club in San Francisco, Ryin Jasielumcredits his strong albanno sales to the wine's affinity with the pokeThe tangmess, acidir\ and salima really balances out the fattmess

POPULAR BARGAINSIt's getting harder to find wines that a sommelier can list for less than$50, as the shortness of this list demonstrates (eight wines, comparedto last year's 17) In tact, half ot our poll respondents raised the priceson their wine lists, up from 42 percent last vear, though less than aquarter increased prices on their least expensive wines Many som-melier found it easier to drop prices only at special limes, like happyhours and half off nights The brands that did stand out as the mostpopular pours under $50 arc in large part old favorites, varietal winesw itil brand recognition that can stand alone, with or without food

AFTER-DINNER WINESAmong fortified and dessert wines, Port remains the go to choice at restaurants responding to our poll, taking a majority of the top brand spotsMany ot those glasses are pushed by sommelier^, who find it works well inpairings, especially lawny Ports, which take four of the top five places inthe Most Popular list lilac said, bonuneliers reported a mai kei (oi everysort of Port, from Vintage through White Port At Momofulm Ssam Bar inNYC, Nicole Hakli pours Quinta do Infantado's White Port with coconutpandan pie "The inspiration was chef Max Ng's childhood breakfast, which involved kaya, a coconut-egg )am on bread The Infantado is a drierstyle ol dessert wine with marmalade and nuttv components, (ust hkcyou'd want on your kaya toast"
Pairings also steer sommehcrs toward Madeira It begins the mealat Indian Accent in NYC "bvery table here starts off with a blue cheesenaan and pumpkin soup," Daniel Beedle reports "When von think ofblue cheese, what are you going to pair with it5 Madeira Pumpkin soup'Madeira I do a Rainwater Madeira for ever)'table And people come backand say, Let's try a new one "
And Madeira ends the meal at Manresa in Los Gatos, California, whereJim Rollston likes to serve it with cheese "Our cheese course lb optional, and when people order it, sometimes they ask for Port And I love Port, but Madeira takes it to another level of complexity and this elevatedcleansing character" for sweet desserts, Rollston looks to lokaji ' I lovefall spices and Christmas spite flavors with Tokaji, and I've been reallyhappy with Dis/noko It s ten plus years old and still available That wentwith a persimmon pudding that wc flambee tablcsidc with aged Jamaicanrum and some rum raisin ice cream on the side "
Meanwhile, we're seeing more esoteric dessert wine choices landingon lists, hkc Pineau dcs Charentes, Barolo Chinato and even dulce winesfrom the Canary Islands
I end up doing more vin-
tage than LBV; any timethere's chocolate on apairing, and we alwayshave a chocolate dessert,we pour Port... But theVintage [Port], peoplejust order it; you don'teven see it go out. All of a sudden you turnaround and have to reorder. You know,we're not in New York; we're in the Midwest,
and people come here to experiment. Whenpeople see you have Vintage and Tawny
Port, they say, Yeah, I'll take a flight.-Stephen McGinnis, L'Etoile, Madison, Wl
