At New Year’s, black-eyed peas are traditionally eaten to bring good fortune in the coming year. No cooking required with this recipe, which brings crisp, bright flavor and heritage to any table. Yield: 6 servings Ingredients 2 cans (15 oz. each) black-eyed peas, drained and rinsed 1 celery stalk, cut into ½-inch dice ½ medium-size red onion, cut into ½-inch dice ½ red bell pepper, cut into ½-inch dice 3 tablespoons apple cider vinegar 2 tablespoons extra-virgin olive oil Juice from ½ lemon ½ cup chopped fresh dill or parsley Salt and freshly ground black pepper Directions 1. Combine the black-eyed peas, celery, onion, and pepper in a large bowl. 2. Whisk together the vinegar, olive oil, and lemon juice in a small bowl until well blended. Add to the black-eyed pea mixture along with the fresh herbs and salt and pepper to taste and stir gently until well combined.
