Author Profile: Mary Valle

The cookbook author and self-proclaimed home cook has become renowned for her mouth-watering Mediterranean dishes, with many of her recipes influenced by the flavours of Spain, France, italy, Greece and Lebanon

Her recipes have been inspired by the food enjoyed in her childhood, handed down through generations and invigorated with her own modern touch.

With an interest in traveling, Mary spends a lot of her time at her family’s home in Greece and in neighbouring Mediterranean countries where she learns new cooking techniques and traditional recipes from the region to add to her own kitchen.From fresh scents of oregano and lemon to tender roast lamb and sticky baklava, Mary’s dishes have delighted and encouraged many others to enjoy food the way she has always known it.

Mary’s style of cooking is simple, seasonal, healthy and appetising. She shares her knowledge and passion for food by teaching Mediterranean cooking and consults to a café where she assists with developing menus, recipes and new dishes.

Mary’s first cook book My Greek Kitchen, which includes a collection of family recipes, was a bestseller. She also contributes to magazines and is set to run culinary tours in Greece later this year. Her second book My Mediterranean Kitchen was released in October 2012.

Selecting the right wine

AppearanceThe first step is to examine wine and evaluate its characteristics including colour, opacity and clarity. Good quality wines should be rich in colour, appear clear and have a shine. Poor quality wines often lack lustre and sparkle. Acceptable shades for white wines should have clarity and range from pale gold to yellow gold and pale yellow through to rich amber yellow. Rosé wines should have a distinct pink colour while red wines tend to be deep violet, pomegranate and cherry red shades.

Camberwell’s Historic Fresh Food MarketScratch beneath the surface and you’ll discover the rich history of food in camberwell.

Stall holders at the camberwell Fresh Food Market have been bringing quality fruit, vegetables, meat, poultry, seafood and flowers from the wholesale markets to customers for more than 80 years.

The market was established in the 1930s where the site was originally a horse carriage factory that later become a produce market, servicing the market growers of the area.

An unfortunate fire damaged most of the market in 1992 and stall holders had to trade from temporary premises while the market was being repaired.

in 2002, the market was renovated giving it a fresh new look and an entrance from the rear carpark provided better access for shoppers.

The market’s history is still alive and thriving today, and many stall holders are second and third generation family-run businesses that continue to trade in the traditional style.
