IN the fast paced world we live in where so many as- pire to be somewhere else, with someone else or just like

someone else, we thought we’d remind ourselves and you that no matter what, YOU are ENOUGH! We’ve all heard the old

adage that “Happiness is an inside job” and the truth is, when you reflect on it, it really is. But that doesn’t mean we don’t need a little

something to add an extra smile to our faces and a spring to our step, like a trip to exotic Malta!! Just to revive and rejuvenate our batteries!

SHAINA, did just that and she’s sharing the scoop on the best places to stay, eat and visit on the small island that is steeped in history. The one thing

that’s truly great about this destination is that our South African Rand doesn’t take as much of a beating as any other European destinations. The other

awesome aspect of Malta, is that they have about 300 days of sunshine a year, perfect for us South Africans that love the outdoors and the sea. THIS

month we also chatted to a lifelong Yoga practitioner, Daisy Naidoo, who shares her insights towards inner peace which allows you to see the

“Auctioning your home does not guarantee a sale and sellers always ask the what if question?” says Samantha. The short answer is your home should sell if it is priced com-petitively. If your reserve price is not met the highest bid is still presented to the seller for consideration.

“I had a client who placed a reserve of R2.5 million on their home and accepted R1.6million which was the original valuation I proposed to them,” says Samantha. We all want the highest price possible, but that price has to be realistic. Remember, the buyer pays the commission at an auction which is often a factor sellers try to negotiate into the sale price.

You should only consider auctioning your home if you are determined to sell it for a realistic price and happy to enjoy the attention of an “On Auction” sign on your verge. If you just want to test the market and wait to see if someone comes along and falls in love with your home and pays double the going rate for your street, then auctioning is not the route you should consider.

Trying to buy lunch!! “I want” in perfect unison and no matter how you try to maintain order, these starving children who have never eaten in their lives before will have shouted you down ƵĜƋĘ� ƋĘåĜų� ŸŞåÏĜĀÏ� ŅųÚåųŸú� �ŅØ� ƼŅƚ� ϱĹ� Ƌ±ĩå�them all and all the beach paraphernalia to the nearest eatery, try and get them to all sit down – at the same time. Try to get their order – one at a time. Try getting them their correct order – at the same time. Try stopping them from āĜĹčĜĹč�ƋĘå�üŅŅÚ�ô�±Ƌ�ƋĘå�Ÿ±ĵå�ƋĜĵå�±ĹÚ�eventually, try getting them all out of the restaurant. Doing a head count, checking you have all your possessions, checking they have all their possessions and above all, holding on to the tattered remains of your patience and over-riding urge to eat all the young!!

Yes, school holidays are certainly a time to remember. I’m sure I remember my holidays as being a much quieter and calmer time. Is it just me or has my memory really faded with time. Either way, come the next holidays and we do it all again. Wooooohooooooo!

It could be the endless chatter about Lego, Minions, Mine craft and a million other things that make no sense to me. Around this time of year my brain goes to complete mush and shuts down. Which my children know only too well and very sneakily use this time to get me to agree to all manner of things – to their advantage, of course.

Wine sales must surely spike at this time of year too! I notice that all the wine tastings are conveniently arranged for this time of year. Co-incidece I think not. These brilliant marketers know that there are many a desperate mother out there in need of some adult relief. Ever noticed how when you bump into a harassed looking mother with a troop of children, all she wants to do is have adult conversation? But at high speed? Before one of the “little angels” interrupts.

This is when working mothers come into their own. A sanctity that they can escape to, surrounded by adults who are capable of coherent conversation and even a sense of humour.

STUDY iF THEY ARE PERmANENTLY ON HOLiDAY?

Pity the ‘Stay At Home’ mother at this time, ‘tis not an easy vocation at the best of times but holidays – well that’s just torture.

Animated movies I have sat through by the dozen. In-between toilet runs and popcorn top ups. The latest being, The Minions, a very ÏƚƋåØ�ƴåųƼ�ƼåĬĬŅƵ�ĵŅƴĜå�ĜĹ�Ɛ%�±ĹÚ�Ƶå�ʱÚ�üųŅĹƋ�row seats. So, in all essence, we saw the movie before anyone else in the theatre. In fact we couldn’t see much else!! However, thank you Ster Kinekor for Prestige. I LOVE YOU! A luxurious environment that manages to lessen ƋĘå�ÆĬŅƵ�Ņü�Ɛ%� ĜĹ�ƼŅƚų� ü±Ïåţ�cååÚĬ域� ƋŅ�Ÿ±ƼØ�the ankle-biters loved it.

I know I have mentioned this before but Prestige really does do the most fabulous cappuccino. Could be that they know what endless exhausted holiday mums need!

One thing we ‘Harassed Mothers’ have so much to be grateful for is our exquisite winter weather and our ever glorious beaches. A great place to haul cooler boxes, towels, chairs, boards, balls and beach bags to, sit back and watch your precious little terrorists run riot. Huge sigh of relief… until it is time to feed the hoards. Now if you are smart you would have made hotdogs, sandwiches etc. beforehand but if you haven’t then you are in for a fabulous treat that will remind you to pack a lunch next time.

It Is ‘Inner peace’ we all search for.

This is the state of being physically, mentally, emotionally, spiritually and intellect balanced.

This means having the intellectual knowledge and understanding to be balanced and to be able to show equanimity in the face of adversity andchaos. The aim of it would be to be able to reduce the results this stress has in our lives.

STEP 2 | qUESTiON… SkiP OR BiNOn this road of Self Acceptance you have ƋŅ�ƵŅųĩ�ƋĘųŅƚčĘ�ŞåųŸŅűĬ�ĜĹĹåų�ÏŅĹāĜÏƋŸ�which are the roadblocks… the very obstacles which slow you down. My advice when this occurs:

(A) To ask the relevant questions & when the questions have been either exhausted or answered, the mind has to simply ‘LET GO’ and accept what ‘IS’.(B) It is important to realize that there are some answers that are not worth chasing and sometimes you have to ‘LET GO’ of these too.(C) Finally you have to learn to ‘skip’ through to acceptance even though you may not have all your questions answered.(D) ‘Bin’ what no longer serves you, or that which you no longer need in your life for the evolution of your soul.

STEP 1 | ACCEPTANCE OR RESiSTANCE: Acceptance means you allow events to unfold around you and you react to them spontaneously without suppression. This is healthy as it allows you to clear stress as soon as it occurs.

Resistance means you try to change events from what they really are and to react to them with familiar safe responses. This is unhealthy as it builds up a reservoir of üųƚŸƋų±ƋĜŅĹØ� ü±ĬŸå�åƻŞåÏƋ±ƋĜŅĹ�±ĹÚ�ƚĹüƚĬĀĬĬåÚ�desires resulting in a brewing volcano waiting to erupt.

“It is difficult to find peace within oneself but it is almost impossible to find it

STEP 8 | iNNER BODY, SUBTLE (CAUSAL) & OUTER, GROSS BODY (PHYSiCAL)Yoga works on the ‘inner body; which is called the ‘subtle body’. This is the seat of our emotional, mental and intellectual centres. Yoga works by bringing about a balance and integration between this ‘inner’ and ‘outer’ body, which is our physical body.

We learn how to conserve this energy within, by making use of our locks (bandhas). We learn to use the breath to relax us and practice contemplation and ‘surrender’ and this leads to practicing the ‘contemplative pause’. It involves taking a deep breath in, dropping your chin to your chest in response to something someone has said and thinking before responding.

STEP 10 | mEDiTATiON Meditation works on our mental body releasing blockages of the mind, negative stored experiences and behavior patterns which enables us to achieve peace, wisdom, clarity and knowledge.

Finally: ON THE ‘MAT’ We learn that everything we ever need or want is right within ourselves. As life has its EBBs & FLOWS so to, we as people have our good days and some days are not so good. So good or bad, happy or sad, always have gratitude because it is not happy people who are thankful but peaceful people who are both happy and thankful.

LA SULTANA YACHT COMES TO LUXURY MARKETOriginally built in 1962 in Bulgaria to carry passengers across the Black Sea, and then used for spying in the North Atlantic by the Soviet Union, La Sultana has gone on sale to potential buyers. The vast vessel has been completely rebuilt to the high standards needed for a classic yacht. Knights once traipsed through Valletta and the Three Cities under the Order of the Knights of St John, founded in the 11th century, as part of the medieval expansion of Christianity. Fort St. Elmo in Valletta and the impressive Fort. St. Angelo, in Vittoriosa are two strongholds that are worth exploring. Note, the cross on ƋĘå�a±ĬƋåŸå�ā±č�±Ÿ�±�Ĭåč±ÏƼ�Ņü�ƋĘåĜų�ÏŅĹŧƚåŸƋ�and protection of Malta during their reign.

Cospicua, Senglea and Vittoriosa can be toured in a group or by foot. Easy to walk around, Cospicua is the only area a little far without a car, all accessible from Valletta by water taxi. In Senglea I stayed in a house that was impressively 600 years old, with epic views of the boats in the bay. The neighbourhood is quiet, except for warm eve-nings when the quaint town residents come out en masses. Bingo is set up on Thursday on the Senglea promenade, grannies and all.

Feast at Tal-Petut in Vittoriosa, on local cuisine with Don, owner, chef and manager. I gorged on seafood at La Marina in Senglea. Cooked to order, the meal takes over an hour, but I just drank a cool Cisk beer and let the atmosphere surround me.

Birglu flea market is full of treasures. I bought an enormous 50l old green glass wine bottle for R100 and copper pots, pans and decor are readily available (I bought one of those too). The streets are old, the buildings older and in the Three Cities, you can leave your map behind and move as whimsically as the wind.

Valletta & The Three Cities :I entered Valletta through a narrow corridor and fortress walls surrounding me. This part of Malta is the most iconic, with white washed stone and well preserved relics dotted throughout the small peninsula.

Spend a day in and out of gold-laden churches, like St. John’s Co-Cathedral. Catch a show, or take a tour at the opulent baroque Manoel Theatre, hosting opera and classical productions for centuries.

Stroll the main street, Triq-ir Repubblika with other pedestrians and locals, taking you from one end of Valletta to the other. Eat the best Maltese pie on St. Lucy St, at Il-Kikkra Kafe ±ĹÚ�ʱƴå�±Ƌ� Ĭ屟Ƌ�Ɛ�ÚĜŸĘåŸ�±Ƌ�Rubino’s. Have ±�ÏŅýåå�ĜĹ�Republic Square and stand where the Queen and other dignitaries once did in St. George’s Square. Boutique shopping is wonderful here.

The Upper and Lower Barrakka gardens, on separate ends of the city (still walking distance), provide majestic views of the Three Cities along the blue bay, where sailboats and yachts parade themselves. Nearby, spend a few minutes at the Siege Bell War Memorial and solemnly remind yourself that Malta was terribly bombed, as a British colony during WWII.

Old School Heritage :

�Ęå�ŅĬÚåų�ÏĜƋĜåŸ�±ųå�ĀĬĬåÚ�ƵĜƋĘ�Ƌų±ÚĜƋĜŅĹŸţ��Ęå�hanging clothes from the balconies and drying vegetables on rooftops are part of old scenes from a previous Europe that is held onto today. In Valletta, look up and you will see gray haired women leaning out of windows shouting the morning’s gossip. In Senglea, people walk their Maltese dogs (yes, they are from Malta and there are a great deal of them), slowly along the water ƵĘĜĬå�ŸĵŅĩĜĹč�ƋĘåĜų�ĀųŸƋ�ÏĜč±ųåƋƋå�Ņü�ƋĘå�Ú±Ƽţ�In the bays, elderly men with rough hands sit Şå±ÏåüƚĬĬƼ�ƵĜƋĘ�ĀŸĘĜĹč�ųŅÚŸţ

Everyday, I slipped back and forth between the ages. Megalithic temples, juxtaposition to a newly built neighbourhood that surrounds it, as if something 5000 years old was just another piece of furniture.

I wandered through cobblestone streets and stone walls, through old fortresses and churches in a daze of wonderment. How has life changed so much in thousands of years, but really hasn’t changed at all?

Mdina & Rabat :

I rented a car and wiggled through streets too small for sedans and trucks with stone walls higher than myself towards the centre of the island, Mdina looms above its surroundings. Around since the Bronze Age,

Mdina is another Maltese fortress and liveable historic city (although it seems all cities in Malta are historic). Known as the Noble City and the Silent City (no cars are allowed in Mdina.. most of the time) Mdina is basically an open air museum, with lots of restaurants.

Rabat, just west of Mdina is home to St Paul’s Catacombs, a complex of Roman cemeteries ±ĹÚ�±ÏƋŸ�±Ÿ�±�ŸƚÆƚųÆ�ƋŅ�aÚĜűţ�%åĀĹĜƋåĬƼ�čĜƴå�it a go at the local delicacy of rabbit at North Country Restaurant in Bahrija, recommended by Senglea neighbour Marthes. Completely remote, with a humble interior, dining here is not just about the rabbit but also the local ex-perience.

Each church in every town has its saint and each saint is celebrated at least 1 time a year ƵĜƋĘ� ĀųåƵŅųĩŸØ� ü屟ƋŸ� ±ĹÚ� ŞųŅÏ域ĜŅĹØ� aÚĜű�and Rabat host theirs in summer.

The Ancient Temples :

Mnajdra and Hagar Qim are 5000 year old temples and some of the oldest standing structures from civilization. Easy to get to by bus or car, if you only go to 2 temples, choose these, they are well preserved and mind bogglingly impressive. Isolated near the coast, you can also visit Blue Grotto and the Dingli Cliffs at the same time.

The Tarxien Temples, a little closer to Valletta, Ƶåųå�ÆƚĜĬƋ�ĜĹ�ƐƅLjLj����±ĹÚ�ƚŸåÚ�ƚĹƋĜĬ�ŎĂLjLj���Ø�impressively leaving a collection of prehistoric art. Book in advance for the ancient underground burial site, Hypogeum of !al-Saflieni.

On Gozo, I toured GgantiaØ�ĀųŸƋ�Ÿ±ĜÚ�ƋŅ�Æå�ruins from a race of giants, a story I will continue to believe, excavated almost 200 years ago. Nearby is the Ta’ Kola Windmill Museum, worth the stop since you are already in the area.

Modern Malta :

The ancient cities have grown over thousands of years into a new Malta, with great accessible beaches and vibrant life all around the island. While some places pride themselves as an old quiet respite, the young Maltese are making waves as an international business haven, building resorts and keeping Malta relevant.

XŅϱĬ� čŅƴåųĹĵåĹƋ� ĜŸ� ŸƋĜĬĬ� Ęå±ƴĜĬƼ� ĜĹāƚåĹÏåÚ�by old world conventions, but if you chat with someone under 40, they might just tell you they don’t attend church, and if they do, it’s simply out of respect and tradition.

Shopping still takes place in local markets, weekly, but now giant shopping malls, with trendy brands can be found in busy cities. When I looked around, the European lifestyle was probably the same as it has always been; people on park benches chatting, drinking and most importantly enjoying life. Yet, there’s contemporary art and style everywhere.

The Maltese are not quickly changing who they are but slowly molding themselves into the changing world, that they need to become ±� ޱųƋ� Ņü� ĀűĹÏĜ±ĬĬƼ� ƋŅ� ŸƚųƴĜƴåţ� )ƴåųƼƵĘåųå� F�went there was a respect for preservation to engage old with new.

Visit the Sunday fish market for the freshest catch in town. St Paul’s Pool ĜŸ�ÏåųƋ±ĜĹĬƼ�Ņý�ƋĘå�beaten path but out of all the specialĘĜčĘĬĜčĘƋŸØ� ƋĘĜŸ�ÏĬĜýěĬĜĹåÚ�±ÚƚĬƋ�ŞĬ±ƼčųŅƚĹÚ� ĜŸ�at the top of my list and just a couple of kilometers from Marsaxlokk.

Bring goggles and dive into the Blue Grotto on the west coast of Malta. Take an hour boat trip to the nearby caves by any of the local tour companies and open your eyes to a luminous glowing grotto with purple shimmers from the sea.

On the north west part of the island, Golden Bay boasts reddish brown sand that ŸĘĜĵĵåųŸ�ĜĹ�ƋĘå�ŸƚĹţ��Ęå�Ƶ±Ƌåų�ĜŸ�±�Ƶ±ųĵ�Ɩƅ��and you can parasail, paddle boat or snorkel. Further north and east is the resort town, St. Peter’s Pool�ƵĜƋĘ�ŞĬåĹƋƼ�Ņü�ŸŞŅƋŸ� ƋŅ� ģƚĵŞ�Ņý�ÏĬĜýŸţ�Mellieha Bay, also towards the north of the island, is a family friendly sandy beach with Blue Flag status.

Marsaxlokk, a sure favourite in the South, is a vision of iconic Malta, where brightly ÏŅĬŅƚųåÚ�ĀŸĘĜĹč�ÆŅ±ƋŸ�ŸĘĜĹå�ĜĹ�ƋĘå�ŸƚĹţ�

Beaches, Bays & Walks :

Walk the entire coast of Malta by following streets and paths that turn into new towns, ÏĬĜýŸØ�Æå±ÏĘåŸ�±ĹÚ�ĵ±ųĩåƋŸţ��ųĜĹč�ƼŅƚų�swimming costume because everywhere I went there was at least 1 enticing ladder leading into the sea, even where there are no buildings.

FĹ�ƋĘå�ŸŅƚƋĘØ�ĀĹÚ�ųŅÏĩƼ�åĹƋųƼƵ±ƼŸ�ĜĹƋŅ�ƋĘå�water with less opportunity for lying in the Ÿ±ĹÚţ�FĹ�ƋĘå�ĹŅųƋĘØ�ĀĹÚ�ĬŅĹč�ŸƋųåƋÏĘåŸ�Ņü�sandy bays and beach resorts.

Where To Stay :

There is plenty of accommodation throughout the country. For a quiet resort nearby everything stay in The Radisson Blue, St Julians. In Valletta, Casa Ellul is a boutique beauty.

Day Trips :

Take a ferry to Gozo with a car and drive around the island, visiting the picturesque Azure Window, a photogenic highlight of my trip and Gozo’s ancient temples. You can also take boat tours from all parts of the island to Comino and visit the Blue Lagoon.

Full Of Life :

I missioned to The White Sheep, in Gzira (nearby Sliema) for top artisanal, honest food sourced from around the country, and Europe, ideal for home cooking or general delicious snacking.

It was the end of 2011 that saw the Ellul brothers’ capability at expanding their business. They took the plunge and decided to move a bit further ±ĀåĬÚ�üųŅĵ�ƋĘåĜų�±ĹÏåŸƋŅųŸ�±ĹÚ�ÚĜƴåųčå�ƋĘåĜų�åýŅųƋŸ�from the traditional food and beverage industry to hotel and catering with the introduction of Casa Ellul in Valletta. Together with Architect and %åŸĜčĹåų��ĘųĜŸ��ųĜý±�ƋĘåƼ�ŞĬ±ĹĹåÚ�ƋĘå�ޱĜĹŸƋ±ĩĜĹč�restoration and transformation of their Victorian period house. Finally, to their great satisfaction Casa Ellul opened in the summer of 2014.

Undoubtedly this was a plus not only for themselves, but also for Valletta. This palazzo proudly hosts eight personalized suites, many of which adorn a pretty court yard. The decor has been uniquely designed by the architect from ƋĘŅƚčĘƋüƚĬ� ±ŞŞųŅ±ÏĘåŸ� ƋʱƋ� āƚåĹƋĬƼ� ĜĹƋåčų±Ƌå�space and function into a haven of personal luxury, intended to provide guests with all that they might require for their city escapade.

CASA ELLUL dates back to the Victorian era, possibly constructed during the early 19th century. Although the precise date of Casa Ellul’s construction is not known, it was sometime around ŎíƐLj�ƵĘåĹ�±Ĺ�å±ųĬĜåų�ÆƚĜĬÚĜĹč�Ú±ƋĜĹč�ƋŅ�BŅŸŞĜƋ±ĬĬåų�times was demolished to make way for this new group of houses.

This was a time when Baroque and Rococo opulence was shifting towards a more toned down but increasingly elegant fashion characterised by a sense of lightness. Property investors wanted to move away from the aging cumbersome dark mansions left from the days of ÏĘĜƴ±ĬųƼţ� � FĹÏų屟åÚ�Úåĵ±ĹÚ� üŅų�ĵŅųå�±ýŅųÚ±ÆĬå�real estate also rendered such huge buildings redundant. Early Victorian architects ingeniously maximised very precious and restricted sites without in any way forfeiting aesthetics and comfort. Casa Ellul is a perfect example of this.

The restaurant has it all. Beautiful setting at the waters edge, 2 large rooms, plus no other restaurant in the area. And this is where it all started. In 8 years he has become known as one of Malta’s celebrity chefs. In ƖLjŎƐ�a±ųƴĜĹ�Ƶ±Ÿ�ÏĘŅŸåĹ�ƋŅ�ÆåÏŅĵå�a±ĬƋ±�Ÿ�ambassador for food, and was invited to cook for 50 ambassadors in the prestigious Hilton Vienna Plaza, at the Malta culinary week.

LINGUINI RIZZIThis seafood pasta dish is heavy on the ocean flavour, but light on the amount of actual seafood you’ll find “floating” in it. This ain’t no Red Lobster seafood pasta dish. No, this is a refined and sophisticated seafood pasta dish. I like to think that the pasta in this dish is simply a delivery device for the seafood sauce.

INGREDIENTS:500g linguini250ml white wine.20g minced garlic mixed with olive Cherry tomatoesSalt and pepper for seasoningOne tub of sea urchin meatParsleyoil

METHOD: 1. In a pot of boiling water, just add the linguini and cook till “al dente”2. In a hot frying pan, put the garlic olive oil, cherry tomatoes and white wine. 3. Reduce the wine till it is almost all evaporated. 4. When pasta is cooked, remove from pot through a strainer but do not let all the water drain out. 5. Put the pasta in the frying pan, toss in the sea urchin roe, top with parsley and seasoning.

METHOD:1. Thinly slice the tuna and spread it out on plate2. Marinate the tuna with the fresh lemon and leave it to “cook” with citrus for around 30 seconds3. SEA BASS “AL SALE”METHOD:1. In a mixing bowl, put the rock salt and egg white. Mix well to make sure that egg is evenly spread. 2. On an oven dish; put the fish and close the stomach well to make sure that no salt gets into stomach gash3. Cover the fish well with rock salt4. Put the fish in an oven @ 200 degrees Celsius for about 25 mins5. When fish is done, remove from oven and leave to rest (still covered with salt) for another 10 mins6. Garnish plate with salad and lemon wedge7. Remove the salt by putting a knife between the salt and the tray; this should come off whole.8. Fillet fish, sprinkle well with seasoning and oil according to one`s liking

He then joined the Dolmen Hotel as the Executive Chef for 9 years. During this time Joseph also worked at various hotels abroad like Sonnenbichen Hotel in Germany, Marquette Hotel in Belgium, the Vienna Hilton, Waterside Inn restaurant owned by the Roux Brothers in London and Lansborough Hotel in London.

When the Hilton Malta was being built, he was trusted with ƋĘå�ŞĬ±ĹĹĜĹč�Ņü�ƋĘå�ĘŅƋåĬ�ĩĜƋÏĘåĹţ�FƋ�Ƶ±Ÿ�±�ƴåųƼ�ÚĜþÏƚĬƋ�Ƌ±Ÿĩ�ÆƚƋ�chef is always up for new challenges. When the hotel opened ĜĹ�ƖLjLjŎ�Ęå�ģŅĜĹåÚ�ƋĘå�BĜĬƋŅĹ�ĀųŸƋ�±Ÿ�)ƻåÏƚƋĜƴå��ŅƚŸ��Ęåü�üŅų�±�year and was then promoted to Executive Chef.

For 9 years he had been Team Manager of the Malta Culinary National Team. During that time the team won several medals, but the greatest achievement was winning 2 gold medals in the World Cup. One in Scotland and one in Hungary. Joseph was also the Chef for the Malta Football Association for many years. During these years he had the opportunity to travel with the team and prepare healthy and nutritious meals for them.

BRIE CRUST METHOD:1. Mix all the ingredients together and season with salt and pepper.

GAME PORCINI TART INGREDIENTS:200g Short crust pastry25g Diced carrots25g Diced onions25g Diced celery18 Bay leaves 4 Quail breasts 1 Confit of rabbit leg1 Confit of duck leg1 tbsp Veal jus1 tsp Raspberry jam

GAME PORCINI TART METHOD:1. Pan fry the onions and carrots in olive oil and butter. Add celery. 2. When golden brown, add rabbit, quail and duck. Add bay leaves, veal jus and raspberry jam. Leave it to reduce. Prepare a mould with pastry.3. When mixture is cold, fill the mould with mixture and cover it with pastry. Bake in an oven of 200oC for 15 minutes.

ARTICHOKE PUMPKIN BEAN CASSOULET INGREDIENTS:50g Roasted artichokes50g Diced roasted pumpkin20g Barlotti beans20g Kidney beans20g Black eyed beans1 cup Fresh cream1 tbsp Chopped parsley1 tsp Beef jus

ARTICHOKE PUMPKIN BEAN CASSOULET METHOD:1. Sweat the artichokes and pumpkin in butter and olive oil. 2. Add all the beans. Finish with fresh cream and beef jus. Add parsley on top.

GARNISH:Carrot cone, Green asparagus, Button mushrooms, baked ring of fine crisp potato.

INGREDIENTS:12 Baby carrots12 Baby leeks12 Baby turnips12 Silver skin onions4 Red onion tart tatins (see recipe pg 186)4 Pigeons4 Sprigs rosemary4 Sprigs thyme4 Bay leaves4 Garlic cloves

METHOD: 1. Place the pigeons in the oven and cook with the herbs and garlic on 180oC for 10 minutes. 2. Cook the carrots, leeks, turnips and silver skin onions in boiling salted water until just tender. 3. Remove the pigeon from the oven and carve off the breast and leg, keep them warm. 4. Reserve the roasted herbs for garnish. Place the pigeon bones and trimmings in the pan containing the sauce, then finish the sauce. Keep warm.5. Remove the tart tatin from the oven, and flip them over. 6. Press each onion down gently if necessary to make a flat base for the pigeon. Crisscross the two pigeon legs on top. Then arrange a few baby vegetables on top of them. 7. Next add the two pigeon breasts leaning against each other and some more baby vegetables. 8. Pour a little sauce over the top.

Garnish with the reserved roasted herbs, silver skin onions and the sprigs of herbs.

ROAST PIGEON BREAST WITH BABY VEGETABLES, LAIDON A RED ONION TART TATIN WITHA THYME PORT WINE JUS [Serves 4]

INGREDIENTS:250g Sweet pastry160g Brown sugar120g Gorgonzola cheese cut in cubes200g Pecan nuts70g Unsalted butter5 tbsp Golden syrup3 Eggs3 tbsp Rum! tsp Vanilla extractPinch of salt

METHOD: 1. Roll out the pastry on a lightly floured surface until it is 3mm thick and use to line a 23cm flat tin, 2.5cm deep. 2. Prick the base with a fork. Line with greaseproof paper and fill with baked white beans. 3. Bake blind for 10 minutes, then remove the paper and beans and bake for a further 5 minutes. 4. Remove from the oven and reduce the temperature to 180oC.5. Heat the butter and golden syrup in a pan. 6. Add half of the cheese and stir until melted. 7. In a bowl, whisk together the sugar, eggs, rum, vanilla and salt. 8. Add the pecan nuts and then stir into the syrup and cheese mixture. 9. Add the remaining cheese and pour the mixture into the pastry case. 10. Bake for about 35 minutes.

Serve the pie warm with fresh cream or vanilla ice-cream.

Conservation of the South African art heritage has always been a passion at La Motte Wine Estate.
