HARVESTHOME pudding,with its rich cake rounda-tion and fruity potpourri,
is an autumn dessert withoutpeer. It may be baked in indi-vidual molds, as shown here, orin a large pan, to be cut intoservings at the table. Whippedcream, a fruit sauce, or bothmay be served with it.There are two parts to the
pudding, batter and fruit. Tomake the batter, cream 14 cupbutter, add ~ cup sugar, andblend. Add 1 egg and beat themixture well. Sift 2 cups fiourseveral times with 2 teaspoonsbaking powder and add to butterand sugar mixture alternatelywith * cup milk. Add 1 tea-spoon vanilla and beat the bat-ter until smooth.To make the potpourri, corn-
bine 1 cup diced dates or raisins,~ cup cooked berries, cherries,or other small fruit, 1 cup dicedcanned pears, and 1 cup pearjuice. Bring to a boil and pour
into a greased baking dish orinto individual dishes. Pour thebatter over the fruit and bakefor 40 minutes at 350 degrees.Turn out on a hot platter andserve with fruit juice sauce,whipped cream, or both.The other autumn treat pic-
tured here is a toasty loaf madefrom bread and old Englishcheese spread. To make it, re-move all crusts but the bottomone from a loaf of white breadand cut the loaf into inch-and-a-half slices down to the bottomcrust. Then cut through thecenter of the loaf lengthwise tothe crust. Blend ~ cup butterand ~ pound cheese spread andspread between the slices andall over the outside of the loaf.Press the slices together and tiethem to form a complete loafagain. Place in a 400-degreeoven until the cheese is meltedand the bread is crisp all overthe outside. This is really de-licious.
