What is it?● Pronounced /ˈkēnwä/, it is a member of the Chenopodium family and is

similar to amaranth. It was one of the staple grains for the ancient Incas, who called it "The Mother Grain." It has been consumed for thousands of years and is one of the highest grain sources of protein.

Preparing Quinoa1. Rinse quinoa in water - Place in a strainer and put under running water for a few minutes. This

is necessary to remove the saponins, which impart a bitter flavor to quinoa if not removed.2. Toast quinoa in a saucepan (optional) - Drizzle a bit of olive oil in a pan over medium-high heat.

Add the quinoa and cook for about 1 minute. The brings out the nutty flavor.3. Cook the quinoa - Place two parts water or stock to one part of quinoa in a saucepan over

medium heat and bring to a boil. Cover and reduce heat to low. Simmer for about 15 minutes.4. Take quinoa off the heat and let stand, covered, for 5 minutes - This will give it time to absorb

any moisture that may be left in the pan.5. Uncover and fluff with a fork - The quinoa should look light and fluffy.6. Serve and enjoy in a salad, stir-fry, curry, braised meat, and much more!
