Christmas Bliss Balls (Makes about 20) & Walnut slice Ingredients
• 1 cup whole meal spelt flour • 1 cup almond meal • 3 tablespoons coconut flour • 3 teaspoons of cacao powder • 3 teaspoons of coconut sugar • ¼ cup cacao nibs • 1 green apple, grated • 1 handful of activated walnuts • 2 cups of almond milk (unsweetened) • 1 x organic free range egg • Vanilla extract
Method
1. Preheat oven to 180 degrees. 2. Sift spelt flour, almond meal, coconut sugar and cacao powder into a mixing bowl and stir to
combine. 3. Add in almond milk, a splash of vanilla extract and egg. Mix well. 4. Spoon mixture into a slice tin and sprinkle walnuts over the top. 5. Bake for about 30 minutes.
Note: the slice will be quite soft when you bring it out of the oven, but will firm up as it cools.

Recipe Collection Ingredients
• 1 cup almond meal • ½ cup organic coconut oil • 1 tsp tahini (I used the unhulled) • 1 tablespoon raw cacao powder • ¼ inca berries • ½ cup chia seeds • ¼ cup flax seeds • ¼ cup activated pepitas • Goji berries and extra pepitas to garnish
Method
1. Soften coconut oil in a small bowl and mix in tahini. 2. In a large mixing bowl, combine the coconut oil and tahini with the almond meal. 3. Add in the chia and flaxseeds. 4. In a blender or similar (I used the milling blade on my Nutribullet), blitz the inca berries and pepitas
until they have the consistency of bread crumbs. Add to the mixing bowl. 5. Stir well to combine all ingredients together. 6. Use a teaspoon to take small amounts of the mixture and roll into balls. 7. Place on a tray and top with 2 goji berries and a pepita for a festive finish! 8. Place in the fridge for 5 – 10 minutes before consuming. If you are making them up for later, store
in an airtight container in the fridge.
