Step 1: Secure the top and bottom of the oyster on a towel against a hard surface.

Step 2: Insert an oyster knife into the hinge, twisting the knife to separate the halves.

Step 3: Slide the knife across the top shell to sever the abductor muscle and discard the shell.

Step 4: Use the knife to sever the bottom abductor muscle and remove grit, keeping the shell level to preserve the liquor.

Step 5: Once the fresh PEI Oyster is free from the shell, serve it on the half shell raw or with your preferred seasoning.

Here are a few tips to ensure you are beach safe this summer:

• Always swim in supervised beach areas.

• Ensure your children are supervised at all times.

• Never swim alone. Always swim with a buddy and watch out for each other.

• Do not consume alcohol or drugs before or while swimming. Alcohol and drugs can impair your abilities and your judgement.

• Weaker swimmers and young children should wear a properly sized life jacket or personal flotation device (PFD) at all times.

• Pay close attention to surf conditions. Waves and currents can make water more dangerous than usual.

In certain conditions powerful rip currents can occur that can sweep swimmers away from shore. Follow these important tips if you are caught in a rip current:

• Don’tpanic.

• Swimparalleltotheshoretoremoveyourselffromthecurrent.

• Donottrytoswimagainstthecurrent.
