La magia y el encanto de San Cristóbal son una fusión cultural que se respira en sus calles, refleja en su gente, aprecia en sus tradiciones y, en definitiva, se goza en su comida. La gastronomía de la ciudad es una de las expresiones culturales más vivas que muestra nuestra identidad. Su mezcla de sabores se han guardado celosamente para conservar los secretos de nuestros antepasados y conquistar a quienes tienen la suerte de poder saborearlos. Por eso, merecen trascender.El mestizaje gastronómico que llegó con ingre-dientes traídos de España en el siglo XVI, vino a enriquecer nuestro vasto menú. Mientras que en las culturas prehispánicas el maíz, el cacao, el frijol y el chile eran la base de nuestra alimentación, los colonizadores españoles introdujeron el trigo, la caña de azucar, las especias, las legumbres y el ganado – haciendo de la carne un elemento esencial –. Al inicio del periodo colonial, la diferencia entre la alimentación de los españoles y los indígenas era muy marcada, pero se fue fundiendo hasta crear una gastronomía rica y variada que, conservando el sa-bor de nuestras raíces, ha adquirido rasgos propios y ha logrado hacer con sus platillos una experiencia en todos los sentidos.Nuestras artes culinarias – además de ser disfrutadas por quienes hemos encontrado en Chiapas el mejor lugar para vivir – deben investigarse y promoverse en el mundo porque enriquecen la industria turística, manteniendo viva la cultura gastronómica de México.
