Distillery Manager: As the first employee I enjoyed the opportunity to mold the production process
in all capacities including: yeast management, still operation, proofing, spirit transfers, barrel
management, and a complete overhaul of record keeping
Successful management of our barrel aging, raw material, and finished goods inventory
Directly responsible for the operation and maintenance of: 15hp roller mill for sugarcane
processing, 2000L and 1500L fermentation tanks, a 600 gallon steam-powered hybrid still,
volumetric bottle filler, DMA 4500M density meter, and glass laboratory stills for obscuration
correction
Created our Barrel Aged Coffee Beans and Kokoleka – a cacao and honey flavored rum
Developed and implemented operating procedures for entering distillery production from
harvest management and distillation to barrel aging and bottling
Managed production activity with Whiskey Systems and duplicated internally
Introduced SOP for caustics and acids, including the required use of PPE
Prepared regular reports detailing current and future production goals and potential restrictions
Farm Manager:
Expanded 2.5 acres of poorly managed sugar cane into 18 high-yielding acres
Hired crews of 2-5 employees for crop management, sourced or designed and manufactured
several farm tools specific to sugar cane, crop rotation, managed water, fertilizer, and herbicide
schedules
Developed and implemented SOPs for all farm related activities (fertilizer, harvest, water,
planting, wind/erosion control, and inter-cropping)
Sought and hired industry experts to aid in development of farm programs

Developed all-grain recipe for Rockcastle Bourbon that included the use of direct-fired mash
tun and enzymes in conjunction with barley for sacchrification
Worked with retailers and distributors to develop area-specific marketing programs to include
tastings, concerts, promotional items, and on-premise education
Filed all Formulation, COLA, Pay.gov, Production, Storage, and Processing reports as well as
relevant state reporting for each of the 12 states in distribution
Developed or co-develop the following brands: Devil John Dark Shine, Devil John Apple Pie
