17 MAY DINNER 2013Page 5
Dear DNK Members The Board is very pleased to be welcoming our new Chair, Catharina M. Patjas, whom many of you will have met at the AGM in April, the 17 May Dinner and a number of other events. Please see page 3 for a presentation of Catharina and our three other new Board Members.
We hope you have enjoyed our many DNK events. Since our last issue, we have had our Annual General Meeting, an interesting exhibition by artist and former A-ha member Magne Furuholmen and also an informative UK Tax event by SEB Private Banking UK’s Helena Whitmore. A few lucky Klub Members were invited to Norway’s Ambassador Mr. Kim A. Traavik residence to celebrate the 150th anniversary since Edvard Munch’s birth. Additionally, there was our regular Spring Golf Day, a Jazz Evening at The Roof Gardens and we have of course had our 17 May Dinner, with a fascinating speech by Guest Speaker Ellen Dyvik and music provided by Rolfs Salongorkester.
We do also hope you will find our coming events to be of interest. We are looking forward to seeing you at the Prawn Feast, Ladies’ Luncheon, Summer BBQ and Violin/Piano Duo Recital in June. In
September we are invited to an Art Tour and Lunch at Mansion House. In October we shall again have a stand at the popular Scandinavia Show as well as a sought-after Financial Evening. We are also organising the exciting Masked Ball in the Coffee Room at The In & Out.
We always try to arrange events that will interest our members, and we are always open to suggestions. The Klub exists for its members and you, our members, are the Klub. Please also take advantage of the possible opportunity to win a year’s membership with the Klub by completing the DNK Membership Survey by clicking the link on the right hand side on our homepage. This issue of Northern Lights has reports from our most recent events and also looks forward to things to come.
Finally the Committee would like to thank retiring Chairman Nicholas Brocker Ruud for his efforts and retiring Board Member and Northern Lights Editor Berit Scott for tirelessly editing the magazine for the last four years. The DNK Board is looking for an Editor to replace Berit. Our Chair will cover this role in the meantime.
Enjoy your Klub and enjoy your summer!
Kind regards,
Your Board

DNK 89th AGM 2013 Den Norske Klub London held its 89th Annual General Meeting at The In & Out Club on 19 April. It was chaired by Board Member Magnus Gundersen, as retiring Chairman Nicholas Brocker Ruud was unable to attend. The AGM was attended by 15 members of the Klub.
DNK has a healthy balance sheet with a solid cash reserve, and the loss of £14,669 in 2011 was successfully reduced to £2,500 in 2012 thanks mainly to increased revenue in sponsorship and advertising as well as an increase in members and a reduction in administrative costs. Northern Lights Magazine and events are currently run on a break even basis. The objective for 2013 is to attract sufficient members in order to return to a small profit. Regarding future prospects members were encouraged to think about whether we want to stay in The In & Out as the current lease will expire in three years. Some members also suggested a Norwegian name for Northern Lights and increased use of the Norwegian language in the magazine. The new Editor confirmed he is happy to listen to suggestions and slowly include more use of Norwegian.

17 May Day inSouthwark ParkTrue to tradition Den Norske Klub had its presence for the daytime celebrations of Norway’s Constitution Day on Friday 17 May in Southwark Park, where the day is celebrated by Norwegians in London. Chair Catharina M. Patjas and Board Members Patrick Jonassen and Stian Sangvig represented the Klub in the park. It was a beautiful day full of happy and celebrating Norwegians. Whilst it was cloudy, windy and a bit chilly in the air, there was at least no rain. Various London-based Norwegians have stands and Den Norske Klub shared a stand with table together with NORA (Network for Norwegian women in London). From other stands Norwegian hot dogs, chocolate snacks and soft drinks were sold. The stand was decorated with red, white and blue balloons carrying the Klub’s logo, Norwegian flags and a banner carrying the Klub’s logo. The table was decorated with membership application forms, flyers and copies of Northern Lights magazine in order to promote the Klub. Patrick and Stian also brought cup cakes, most of which were given to children passing by. This turned out to be a popular touch. A significant number of people dropped
by and seemed intrigued by the Klub. General feedback seemed to be that most people knew of the Klub’s existence but few knew what the Klub is about and what it offers. Hopefully as many visitors as possible will complete their membership application forms and join!
In the park celebrations formally started at 1pm as the Head of the 17 May Committee Kyrre Haugen formally opened the celebration. Afterwards everyone sung Norway’s national anthem “Ja Vi Elsker”. Additional songs were performed by “St Olvaskoret” (The St Olav Choir). There were speeches by the children from the Norwegian School prior to main speaker Princess Märtha Louise. In addition to providing a historical speech of key events the Princess also provided a personal touch by explaining what it was like for her to grow up as a Royal and not spending the day with her friends from school.
NORWEGIAN SUMMER RECIPE: GRAVLAKSGravlaks is the Norwegian spelling. Laks = salmon and grav = grave. In English it’s usually known as ‘gravedlax’ which is from the Swedish! The salmon was traditionally buried to cure - hence grave - which kept the temperature even and cool as well as providing the weight on the fish. The modern method uses the fridge and weights which is a little more convenient, if slightly less rustic.
This is based on my grandfather (morfar)’s recipe which I have from my mother. Needless to say there are variations. The exact recipe is not written down anywhere else, so merits inclusion here. The ratio of sugar:salt is the subject of endless debate and - ultimately - personal taste. Here’s what I use...
Ingredients
Fresh salmon, filleted1-2 tbsp aquavit or gin1 tbsp salt1 tbsp granulated white sugar1 handful roughly chopped dill
Method
Mix the sugar and salt in a little dish. With the skin side down, give the flesh of the fish a decent splash of booze, covering it thinly and rubbing in the liquid. (I believe that this was my grandfather’s favourite part of the process.)
At this point have a quick dram if that way inclined.
Now spread a thin layer of the salt & sugar on the fish and rub it in well with your hands.
Next cover the fish with dill. Finally put it in the fridge (please don’t argue with this. If you prefer to put it elsewhere just do so, but I recommend the fridge), with a board or flat dish and a heavy weight on top. I use things like cartons of juice.
The fish should be kept under pressure until it’s ready.
Every morning and evening remove the weights and take the fish out. Spoon the juices that have escaped over the flesh and turn the fish round. Replace the weights and leave till the next time.
Top up with some more of the salt/sugar on about day two.
The gravelaks is ready to eat in about three-four days, depending on the temperature of the fridge. It will keep for several days and freezes well.

In the spirit of tradition, the guests were warmly greeted with a glass of bubbly on their arrival to the prominent The In & Out Club before gathering in the grand entrance hall for mingling prior to dinner. A cheerful and diverse crowd, all dressed to impress in traditional “bunad”, black tie, suits and stylish dresses, created a good buzz and positive energy. Entertainment for the evening was Rolfs Salongorkester, part of Lambertseter Ungdomskorps, who created an amazing atmosphere with their lively Charleston tunes doing a fine job setting the mood before dinner. After the lively session in the entrance hall we made our way up to the King Harald room where elegantly laid out tables decorated with Norwegian flags were awaiting us. The Klub is particularly grateful to our secretary Clare Harrison for her fantastic effort prior to the evening ironing table runners, polishing silverware, decorating the tables and co coordinating the event.
When seated, our new Chair Catharina M. Patjas, did a great job welcoming everyone and guiding us through the programme. She also provided a brief History of the Den Norske Klub’s origin and its Clubhouse, which is Lady Astor’s former home. Lady Astor was the first female MP in House of Commons. Hence a perfect place to also celebrate the 100th anniversary for a Norwegian woman’s right to vote. Guests at top table were as follows: Chair Catharina M. Patjas, Guest Speaker Ellen K. Dyvik, Nicolaus Henke, Tim Collison, Sarah Wilkinson, Willy Stemp, Sjur Berven, Carolyn Berven, John Berven, Johanne Arnesen, Andrea Charman and Dr Agar Burton.
The specially prepared three course 17 May dinner was a gastronomic experience starting with a Hot Roasted Salmon Rillette, Pickled Cucumber and Pea Shoots. It was followed by an explosion of flavors in the form of braised Shin of Veal, Osso Bucco Horseradish Mash and seasonal greens before a grand finale (if you still had room for more) of a three level “My Little Marzipan Cake” served with strawberry salad and fresh mint. If that wasn’t enough, traditional Norwegian “Kransekake” and Belgian chocolate were served with the coffee/tea alongside a smooth red dessert wine.
This year’s special Guest Speaker, Ellen K. Dyvik, gave us a moving 17 May speech taking us on a historical journey of key events that has contributed to shaping Norway as a nation with special mention and references to the Second World War and the relationship between Norway and Great Britain. Ellen is herself from a family that fought actively in the resistance movement, and with her closing words, she reminded us to appreciate our freedom as this is easily forgotten and taken for granted, except when it is taken from us.
DNK 17 May DinnerIn Den Norske Klub’s 126th year of existence, this special day brought together 72 Norwegians and friends of Norway to celebrate our Constitution Day.
After dinner we were in the hands of Board Member Millicent Scott who first gave the “Takk for maten” speech followed by an energetic raffle prize session. Millicent did a brilliant job raising the energy in the room and keeping it exciting and fun until delivery of the final raffle prize, a cute bottle of Aquavit, to a very lucky winner. This year’s raffle prizes were;
• A three course lunch or dinner with one bottle of wine in the Coffee Room (donated by The In & Out Secretary Christopher Hogan)
• A dinner for two including one bottle of wine and one glass of champagne on arrival from Claude’s Kitchen/Amuse Bouche in Parsons Green (donated by Willy Stemp)
• Subscriptions from Scan Magazine x 3 + tickets to Scandinavia Show for two from Scan Magazine
• 3 x cheese from Jarlsberg (donated by Tine and Norseland)
• 1 bottle of Linie Aquavit (donated by Amathus)
• 1 bottle of white wine and 1 bottle of red wine (from the DNK office)
Whilst the bar closed at 23:00, there was no sign of people wanting to leave and many stayed on until after midnight.

NORWEGIAN WOODMagne F exhibits in Londonby Berit Scott
Just when you thought A-ha was simply a great pop group, one of the group pops up as a visual artist of international dimensions. He returns for his third exhibiton in London, this time with a series of large-format woodcut prints.
Magne F – or Magne Furuholmen to those of us who can get our tongue around Norwegian names – has proved himself to be an accomplished graphic artist as well as a successful musician. His latest collection of woodprints has been on view throughout May at the Paul Stolper Gallery in Bloomsbury. This was also the venue for his previous exhibition “Alpha Beta”, which was featured in Northern Lights in September 2009.
DNK was represented at the Private View in early May, and on 7 May DNK members were generously invited to visit the gallery for an exclusive viewing and gallery tour. Over twenty of our members had accepted the invitation and were treated to complimentary drinks and an exclusive guided tour of the exhibition by gallery owner Paul Stolper. DNK is very grateful to him for this generous gesture.
Magne’s woodcuts – and indeed the title of the exhibition – owe a debt to The Beatles, whose music the artist grew up listening to. As a musician, Magne has found great inspiration in The Beatles’ music. And so, it’s perhaps not a huge surprise to learn that he has recently been commissioned to write the music for the film based on that same title by Norwegian best-selling author Lars Saabye Christensen. The film is due to be released in 2014.

Friday Drinks with a TwistIn April 2013 Den Norske Klub introduced “Friday Drinks with a Twist” for those of our members who believe the night is still young at 10pm. Den Norske Klub’s monthly Friday drinks in the Canning Bar at The In & Out were followed by a visit to the exclusive The Roof Gardens, where our members and their guests gained complimentary entrance. DNK members were greeted on arrival and given a tour of the beautiful Spanish Garden before making their way to a reserved table in the VIP area of the club.
Den Norske Klub would like to thank Business Development Manager Alicia Anderson for expanding The Roof Gardens guest list especially for Den Norske Klub’s first ”Friday drinks with a Twist.”
A SUPER-COOLKLUB BENEFIT by Berit Scott
If you have ever read page 2 of your Northern Lights in any detail, you will be aware of one of the special benefits your membership of DNK brings you. If you haven’t, you will be pleased to know that our members have free entrance to the glamorous private members’ club Kensington Roof Gardens at weekends - surely up there among the most desirable membership benefits our Klub has to offer!
On the last day of April, DNK members were invited to a special introductory visit to this famous West London landmark. On top of a building housing shops like Gap and M&S is a hidden world which feels a million miles away from the busy High Street just below.
Covering the two top floors of the seven-story building, Kensington Roof Gardens and Babylon restaurant occupy a supremely desirable site. The terraces feature several gardens, paved areas, lawns, a pond, a river with a hump-back bridge, bars and barbecues with outdoor seating areas, as well as a selection of live water birds – from ducks to flamingos – who are allowed to roam freely.
On this cool and windy evening, about two dozen DNK members took up the kind invitation from The Roof Gardens to visit their splendid premises. As we huddled on the terrace admiring the fantastic views across the rooftops of London, we were treated to a selection of drinks and high-class snacks on the house.
It was warmer inside, where we listened to the jazz band playing, as it does on Tuesday nights. Then Sales Coordinator Jason Window took our group on a guided tour, which proved to be an adventure into a most incredible, exclusive and exotic venue.
Babylon restaurant is open for lunch and dinner, and on Friday and Saturday evenings the club and bar areas are turned into an über-cool members-only night club. Under a special agreement DNK members and a guest may enter for free so long as they join the guest list by registering in advance.
DNK would like to express its thanks to Business Development Manager Alicia Anderson and Sales Executive Katharine Hall-Smith for having invited our members to this exclusive event.
