Sediment in wine is usually an indication of an old-vintage. But this bitter tasting butharmless residue is the byproduct of thewinemaking process and can also be presenteven in recent vintages that have undergonelittle or no filtration.
What is wine sediment? As red wine ages in
a bottle sediment is created over time by thebreakdown of pigments and tannin within thewine. Small amounts of these phenoliccompounds gradually settle at the bottom of the bottle. These phenolic compounds areanti-oxidants, suggested by some medicalresearch to be the reason for wine’s varioushealth benefits.
It is important to know that sediment is not
an indication of a fault in the wine and will notbe harmful if consumed. It’s even possible forwhite wine to leave bottle sediment in the formof crystal particles. This sometimes happens if the white wine is exposed to extremely coldconditions. These are tartrate crystals,sometimes found attached to the bottom of corks. To prevent this from occurring in winedestined for long distance shipping and
distribution and the inevitable coldenvironments, a wine processing step calledCold Stabilization is taken that removes thesetartrates in advance of filling the bottles,applying the cork closures and shipping outfor distribution.
For the consumer, the process of decanting
a wine will clear the wine of sediment when itis carefully poured into a separate vesselknown commonly as a decanter. Whenpreparing to decant an older wine that containssediment, allow the bottle to stand undisturbedin advance for about 24 hours, if possible, toallow microscopic solids to settle at the bottom
of the bottle. Be mindful not to shake orvibrate the bottle before uncorking it. This willstir up the sediment and make decanting moredifficult.
Then slowly pour the wine into a cleandecanter vessel and closely observe the winepassing through the neck of the bottle. As soonas the wine inside the neck shows sediment,stop pouring. Some restaurant wine stewards
will place a lit candle under the neck or hold aflashlight against it to make it easier to see thewine the instant it changes clarity.
You should end up with a few ounces of wine still in the bottle.
The unique shape of a decanter – wide glassbottom with a skinny neck – exposes a largesurface area of wine to air and starts the releaseof its fragrant aromas instantly. Let it stand for
at least 10 minutes before pouring into glasses.

Do not be intimidated for
any reason. That is rule number
one (and there are very few real
rules after that). For the mostpart, going wine tasting is about
the easiest thing in the world,
especially here in California
where wineries and tasting
rooms abound. You can find
wineries specializing in red
wines of all types, those that are
famous for their white wines
and others who pour sparkling wine. It is a matter of
doing a little research and planning your day. Most tasting
rooms open around 10 a.m. and close between 4:30 and
6 p.m.Before you start off pack a few essentials: Water
(plenty of water) and something to snack on – crackers or
a baguette. Many wineries have picnic areas and there are
plenty of delis and bakeries that can make up a lunch for
you, or make your own. Which brings us to eating and
drinking, the kind that doesn’t directly involve wine.Be sure to nibble during the day and make sure you
make time for lunch. Two tips: drink at least twice as
much water as you do wine, and remember that youdon’t have to drink everything poured into your glass.
There is a reason tasting bars have dump buckets and a
pitcher of water to wash out your glass.
That said, here are some tips that have proven to be
helpful and are designed to help make the sensory
adventure of wine tasting all the more enjoyable.Don’t be afraid to ask questions. Time and time again
I have heard knowledgeable winery workers say that
there is no such thing as a stupid question, and they
mean that.You can drink what you want, in the order you want.
If you only like reds, say so; if you don’t like sweet wines,
speak up. But the idea of starting with whites, then going
on to reds and then sweet wines is a good guide.
Zinfandel is red. I am sure you know that but it never
hurts to remind everyone.
If there is a particular wine you want to try and it is
not on the list, ask. There might be a bottle around that
was opened for a trade tasting or by the winemaker. Most
tasting rooms are happy to pour a little if you showenthusiasm.
If you plan to take wine home with you, either in the
car or on a plane, buy a
cardboard box with Styrofoam
wine inserts. Fill it during the
day and this keeps wine fromrolling around in the trunk.Check out the smaller
wineries. It is a revelation.
Take notes on the wines you
most enjoyed.
Take advantage of tours
when the winery offers them, but
keep in mind that they take
anywhere from 20 minutes to well over an hour, so one a
day is plenty.
Buy wines that you can only find at the winery. Theseoften include smaller (375 ml) bottles of limited
production Ports or dessert wines. Don’t buy a wine you
can get at a supermarket back home. You’ll pay more, and
besides, what’s the point?
Look for tasting rooms in towns. Many of these are
cooperative tasting rooms, where in one place you might
find wines from a dozen or more small-to-medium
premium producers. They are scattered throughout the
area and more are opening all the time.
Don’t give too much thought to ratings and vintages.It’s like art: if you like it, it’s a good wine. It is as simple as
that. Remember that you don’t have to do the driving. It
takes no more than a phone call to rent anything from a
Town Car or restored classic convertible to stretch limos
and a 20-passenger bus. All have drivers that will stow
your wine for you and the local companies know the
area. As to taking that wine home, ten people sharing one
of those impossibly long limousines is fine and fun, but if
you all plan to buy a couple of cases the trunk – which isno bigger than a normal luxury cars – is going to fill up
fast and you’re going to find yourself filling the interior
floor with boxes and using cases of Cabernet as footrest.
Tell the transportation company what you have in
mind and listen to their advice. They know the territory
and the people and personalities.Know your limits. If you get close to it let others taste
and you can listen. It beats ending the day in a blur, and
if need be calling a taxi is cheaper than the alternative.
And if at a seated tasting, don’t be afraid to leave a gratuity. It’s more than worth the five or ten dollars to get

One of the questions most asked when it comes to wine is how much of this does it take to make that, and so on. We won’tpretend that it’s simple, but here are some industr statistics that will give a prett good answer to that quer. As with an-thing agricultural, of course, the are all based on countless variables when it comes to acre ields, but this is a good startingpoint. The rest of the information varies little if at all.
What dos a that information on a win ab man?The U.S. Department of Alcohol, Tobacco & Firearms regulates wine
labels and requires that information be given in a straightforward
wa. Basicall, ou will want to look for the tpes of grapes grown,
where the grapes are grown and when the grapes were picked.
• Brand name• Designation for a special wine
• Vineyard or appellation known for its grapes might be designated
• Location where the grapes used were grown
• Grape Variety used
• Vintage year in which the grapes were picked
• Location where the wine was made and/or bottled(Not to be confused with the area the grapes are grown.)
• Alcohol content may be stated or the the label may simply say "Table Wine”

Paradigms change over time. For a number of decades,
heat was seen as a good thing for grapes; as long as there
was some cooling at some point in the day, that was goodenough for “big reds.” Fast-forward about forty years,
though, and the vital necessity of balancing altitude, heat
and ocean influence has become clear to produce com-
plex, nuanced wines capable of expressing their
environment, tasting fresh and full of flavor without being
overly flabby on the palate.
Coombsville, an area of about one thousand acres to
the south-east of Napa city and elevated several hundred
feet above sea level, is composed of volcanic soils exposed
to San Pablo Bay’s weather, creating an ideal balancingpoint between the Silverado Trail’s drier hills and Carneros’
wetter, colder, more clay-filled flatlands. The result is
longer, modestly warm growth periods without major tem-
perature swings, allowing for good ripening without
drying out and shrinking the crop. For this reason, many
major Napa Valley wineries have been using Coombsville
grapes to produce their sophisticated reds, including bot-
tlings by Ancien, Joseph Phelps, Merryvale, Meteor,
Newton, Realm, Relic and Viader.
Equally, because it has generally been seen as a place forgrapes rather than wineries, almost all who make wine in
Coombsville are family endeavors, and they produce small
bottlings of a wide range of releases in relative anonymity.
Here are four producers not to miss –not just because they
are small, “Old Napa” wineries, but also because they are
making fantastic wines and it’s time they got their due in
public rather than only acknowleged as a geographic iden-
tifier on someone else’s label.
Farella is produced by Tom and Frank Farella from
twenty-six acres of Cabernet Sauvignon, Syrah, Chardon-nay, Merlot and Sauvignon Blanc vines. Only ten percent
of the available fruit, 1,200 cases’ worth, is made into wine;
the rest is sold to Far Niente, Honig, Keenan, Lail,
Pahlmeyer and Realm. Farella wines place an emphasis on
layered complexity, blending Cabernet and Merlot together
in one bottling and Cab and Syrah in their other “ALTA”
bottling.
Porter Family Vineyards’ fourteen terraced acres of
mostly Cabernet and Syrah deliver only two to three tons
per acre, and fifty feet underneath them is the 17,000-
square-foot cave housing the winery. Everything is made in
small, two-ton batches, which is why their wines are so
highly regarded and in such high demand. These include
three Cabernet Sauvignons, Napa, Atlas Peak designate,
and “Time” special bottlings; the Cab/Syrah Cave Dwellers;
Chardonnay; the Cab/Merlot Sandpiper Red; Sandpiper
Rosé; and Syrah.
Sodaro Estate was founded by Don and Deedee So-
daro after an extensive search, and they planted 9.5 acresof the classical Bordeaux varieties: Cab, Cab Franc, Malbec,
Merlot and Petit Verdot. Prizing blending in their cave,
everything is produced in small lots to allow for the most
options with each vintage. “To realize an ideal,” as the win-
ery says, only two wines are released from the property:
the Felicity Cabernet and the Sodaro Estate Blend. Both
are not to be missed.
Tulocay Wines, founded in 1975, is one of the older
wineries in the valley and has seen a lot of others come
and go in the time since. Truly embodying what Napa waslike before the hubbub of international notoriety, their old
school philosphy of hospitality and winemaking places an
emphasis on comfort and ageability, as is reflected in their
hard-to-find bottlings of Cabernet Sauvignon, Chardon-
nay, Pinot Noir, two Syrahs and Zinfandel.
As should be clear, there is a lot more to the Napa Val-
ley than just what is most easily accessible from Highway
29 or the Silverado Trail. Do yourself a favor the next time
you want to taste wine and head off the acknowledged
paths to where the more well known wineries go looking
for grapes: Coombsville and its perfectly balanced climate
and wines. You’ll be glad you did – enjoy!

At first glance, this unassuming winery looks like just
another charming little family winery. But don’t be fooled. The
homey reception area picnic table is just the tip of the iceberg.
The real grandeur of this winery lies in a 17,000-square-foot,
state-of-the art cave that will leave you awestruck.
The Dome Tasting Room, carved out of compacted
volcanic ash, is breathtaking to say the least. Nearly thirty feet
high, the cave room required special sound buffers to reduce
the echoing produced by the unique acoustics. Sound,
however, is still amplified in the room center, creating a
magical sensation that is difficult to explain. As you enter this
astounding place and take your seat at the grand table, set
with gleaming wine glasses for your private tasting, you know
that something very special is about to happen. When the
wine is poured, the enchantment is complete. The Porter
family prides itself on making small lots of handcrafted wines

Bill Cadman, the owner of Tulocay Winery, is a treasure
of information about wine. He is also a witty, humorous
and thoroughly entertaining gentleman. Well, the
“gentleman” part might be a bit of a stretch. Bill is old-time
Napa, with not an ounce of pretentiousness about him.
Nowhere else can you sit down with someone as
knowledgeable or as approachable as Bill Cadman. He
simply does not have a snobbish bone in his body. Hisirreverent, light-hearted take on the business of
winemaking, however, belies his superior skills. This is
seriously good wine. He doesn’t even maintain a pour list.
He’ll just ask what you like and open bottles accordingly.
In 1972, Bill brazenly bought an old chicken farm and
began pestering the local wineries for a job. He started his
career by operating the crushers at Charles Krug. From
there he went on to enjoy a long history in the industry,
working for the likes of Robert Mondavi, Joe Heitz and
other giants of the winemaking world. In 1975, after
consuming copious amounts of wine one evening, he made
the presumptuous decision to open a winery himself. “My
friends looked at the old chicken coops and declared them
perfect for a winery. In my altered state, I agreed!” What
ensued was the creation of a refreshingly relaxed wine
country experience and a Pinot Noir that would launch his
career. He has been enjoying the heck out of life ever since.

Jamieson Ranch Vineyards is the southernmost winery in
the Napa Valley, allowing convenient access from many Bay

Hagafen, “the grapevine” in Hebrew, is a family winery just off
the Silverado Trail in Napa that opened in 2000. This boutique
winery owned by Ernie and Irit Weir produces ultra-premium
wines that have consistently earned awards and critical praise for
many years. Winemaker Ernie Weir believes that “fine wine starts
in the vineyard with careful vineyard management. My goal is to
showcase the best that our land can yield. Our small lot bottlings
start with superb fruit, and we seek to artisanally shape each toshowcase its uniqueness and the specific region from which it
originates. For these reasons, our total annual production is only
8,000 cases.” The winery’s organically grown vineyards yield
roughly half of the grapes used for their annual production.
Ernie first came to Napa in the 1970s and worked for
Domaine Chandon while attending UC Davis to study viticulture
and enology. In 1997, Ernie left Domaine Chandon to build the
Hagafen Cellars winery and tasting room. Their intimate tasting
room is a hidden little gem along the Silverado Trail with arelaxed atmosphere. The location is private and serene. With all
the attention their wines receive, Hagafen Cellars merits a visit
while in Napa Valley. Discover their hand-crafted wines poured
daily in their tasting room or in their rose garden patio.
While Hagafen is the winery’s main label, Prix Vineyards is the
exclusive Reserve wine series sold only at the winery and to wine
club members. These limited production wines define this small

In 2007, the Del Dotto family saw the culmination of a fifteen-year
dream in the completion of their Venetian Estate Winery and Caves.

The oldest family-owned winery in the Napa Valley, Nichelini wasestablished in the Chiles Valley District by Italian-Swiss pioneerwinemaker Anton Nichelini in 1890. Anton planted many of the sitesstill in use by the current generations of this family enterprise. Notonly is this one of the longest continuous winemaking families in theUnited States, but the scenic drive to Chiles Valley will take you back,mile by mile, to a simpler time. With the exception of the road, much
of what surrounds looks as it did one hundred years ago during thefirst heyday of winemaking in the North Coast.
Upon arrival, visitors are greeted by a snapshot of Napawinemaking circa 1900, including a gigantic Roman-style wine presswhich was used commercially until 1955. The vineyards are nearbyand range in age from two-decades to nearly ten decades – that’s whatcomes of caretaking the same set of rows generation after generation.Inside the 1895 seven-bedroom farmhouse, the bottom floor is now atasting room, and outside are picnic tables and a bocce court. Noreservations are required for groups of up to a dozen, and the winerydoes offer tours of the facility and barrel chai.
Another benefit of being in the wine business as a family for solong is the ability to make wines which speak from the winemaker’spassion rather than for large commercial distribution. The tastingroom is generally the only place to taste and purchase these fifty- toone hundred-case lots, and not many other locations anywhere, letalone in Napa, can give you access to heritage bottlings of old worldreds like Petite Sirah and Primitivo. What’s most impressive, though, isthe guiding philosophy the family will share with you while you arethere, tasting the wines and enjoying the locale: “We encourage you tostep back in time and let us take care of you.” Absolutely! winery to be in such a remote setting. While snaking
through the back roads, a sense of anticipation builds.
Something wonderful must be around the next turn.

into a faraway land. The outdoor ambiance is a blend of Old World Europe and California’s Hispanic influenced

The Trinchero family descendants designed and built a new
winery, tasting room and luxurious hospitality center in 2007
with views of the Howell and Spring Mountains on the
twenty-two acre site. The site has wine education programs

outdoor kitchens, culinary gardens and a wine cellar. The new
fermentation center design reflects New York’s Grand Central
Station and the barrel room has 1,400 French oak barrels. The
family’s history is displayed throughout the hospitality center
and tasting room.
You can enjoy A Taste of Terroir, which is a horizontal
tasting of single-vineyard Cabernets, and an introduction to the
appellations of Napa Valley. The sit-down comparative tastingtakes place in the downstairs cellar of the hospitality center and

the wine bar, you can sample four current releases ($15) or
select a Cabernet comparative tasting that includes the
Signature Cabernet ($30).
The Legacy Club offers members first access to the

There is a lot of history behind this winery. John
Ballentine emigrated in 1910 from County Tyrone, Ireland
to the Bay Area. His son Van grew up in the Napa Valley
helping to plant vineyards, prune vines and make wine.
The history of this winery also involves the Pocai family
from Italy. Over time, their winemaking, their families and
their fortunes intertwined. Even the devastating San
Francisco earthquake of 1906 played a part.Luck was also a major player, especially when it came
to the acquisition of some of the best vineyard land in the
entire Napa Valley. Luck can never be an underestimated
component when it comes to successful winemaking, a fact
that continues to this day.
When you enter the tasting room at this working
winery, you’ll find a long, stylish room with
chocolate-hued walls, an L-shaped bar and lots of stone
and wood. Windows on the north look out on vineyards,the floor is slate, the lighting modern, and you’re likely to
find yourself talking to the owners and their
always-friendly staff.
Today, all of the Ballentine wines are estate wines and
the wines available in the tasting room are wonderful

St. Cmnt Vinyard Words hardly do justice to St. Clement Vineyard and
Tasting Room. Set high above the Napa Valley floor in an
1870s Victorian house, St. Clement is at once regal and
inviting.
St. Clement Vineyard was a private residence until 30
years ago when it became a winery dedicated to producing
world-class wines.
The home itself was built in 1878 and is a remarkablepiece of California Victorian architecture. Think
period-appropriate paint, decor and details like carved arrows
in the eaves to ward off evil spirits!
More than 33 different soil series and 100 different soil
variations are represented in St. Clement wines. The grapes
are sourced from some of the best vineyards in the Napa
Valley from diverse AVAs such as Howell Mountain, Mount
Veeder and Rutherford. They are able to take these
exceptional grapes and produce St. Clement wines with
extraordinary depth and complexity.
Tasting fees are are $20 and guests can choose from a
menu that includes reds and whites. For those interested in
private tastings, St. Clement offers Big Reds of St. Clement
which features limited-production Cabernet Sauvignons from
a variety of Napa Valley vineyards. Private tastings are by
appointment only and are $35 per person.

For more than 130 years, Beringer Vineyards has reflected
the rewards of hard labor, agricultural pride and determined
viticultural stewardship.
German emigrant Jacob Beringer followed his brother
Frederick to the New World in 1868 to begin a new life.
Hearing of California’s warm, sunny climate, the brothers
headed west to Napa Valley. Vintage cellar worker, Jacob
Beringer was thrilled to find Napa’s rocky, well-drained soils
similar to those of his native Rhine Valley.
From the beginning, the Beringer brothers were vastly ahead
of the oenological times. Frederick and Jacob built a
gravity-flow winery and steam-powered grape crusher, then
enlisted the help of Chinese laborers to hand-dig tunnels within
the hills of Napa Valley. Today, these caves still perfectly cellar
and age wine in a stable 58-degree environment – one crucial
key to Beringer’s continued success in winemaking.
Beringer is world-famous for crafting classic wines from
Napa’s finest appellations and vineyards. Founder Jacob’s
foresight in recognizing the quality and potential of grape
growing in the Napa Valley is part of the living heritage of

Winding through picturesque fields, undulating
vineyards and oakstudded hills, one gets the feeling of
being transported back in time heading northeast away
from the Silverado Trail. There you will find Pope Valley
Winery established in 1897 originally as Burgundy Winery.
The winery itself seems to transport you back in time with
the original hand dug cave complete with hand hewn red
wood timbers. The original farmhouse still graces the
property, as well as a blacksmith’s workshop, complete with
the tools of the trade. The tasting room next to the winery
is welcoming and without pretense, offering a number of
limited production, winery only releases. The goal is not
just to provide an escape from the rest of the Valley but to
actually make you forget there is anywhere else at all. As
you can tell, Pope Valley the area and Pope Valley the
winery are very much alike: both are the true, authentic
“Old Napa” which so many people come to in search of.
Well, like all good things, it takes a bit of time, a
willingness to step away from where everyone is headed, in
order to find, but when you do, the results are all you
imagined and more. Head up and to the right and go taste

If you find yourself on the back roads leading to Summit
Lake Vineyards, chances are you are thinking yourself seriously
lost. No need to worry. One of the most good-natured
winemakers you’ll ever meet is waiting for you. He’ll also help
you find your way back down the hill.
Bob Brakesman of Summit Lake Vineyards personifies the
pioneer spirit that led many to this area to try their hand at
winemaking. His motivation was a love of wine, but hisknowledge didn’t go much further than how to extract a cork
from a bottle. However Bob and his late wife, Sue, had such
warm personalities that it wasn’t long before they were able to
cajole their way into getting some of the most learned minds in
the business to provide both practical information and
equipment to help them build their winery.
The land at Summit Lake didn’t seem to hold very much
promise. It was overgrown and rugged, but had been planted
decades ago with a small vineyard. While the couple was able tocoax the vines into producing a quality wine, the old plants just
could not produce the quantity of fruit needed. With the help of
friends, they planted more vines and began to build their
winery.
Today, Bob and his family produce several wonderful
wines, including a Cabernet Sauvignon, Petite Sirah, Zinfandel
Port and Rosé which are all estate grown, as well as their
Howell Mountain Zinfandel which “put them on the map.”

There is one very important element that truly

Madrigal Family Winery proves immigrant dreams
blossom with enough time, effort and patience. Chris
Madrigal’s grandfather came to Napa in the 1930s,
planting forty acres of apples, pears, walnuts and
vineyards halfway between St. Helena and Calistoga, the
future motherlode of California wine.
Chris, in turn, continued the family’s legacy with the
establishment of Madrigal Family Winery and its first 500cases of Petite Sirah in 1995. The growth since then has
helped to cement that legacy as the winery has become

If there ever was a benign cult, it would be that centered
around Napa Valley’s Frank Family Vineyards. Mention their
Chardonnay, Sangiovese, Zinfandel, any of their Cabernets or
other wines to someone who loves the grape and their eyes will
brighten showing their desire for a taste. Yes, their wine is that
good, and a visit to their northern-valley tasting room becomes
almost a pilgrimage.
The tasting room – in the impeccably restored Craftsman
house – has been rated among the top in the nation. And,
while praise for the winery, the wines and the tasting room may
be completely up-to-the minute, its history goes back more
than 125 years. In 1884, it was known as Larkmead Winery;
today, it is considered to be a prime example of California Wine
Country architecture, listed on the National Register of Histori-
cal Places.
The grounds are expansive, with a beautiful lawn, picnic ta-
bles, majestic oaks and trimmed hedges that complement the
winery and tasting room. Inside the tasting rooms, the businessof winemaking is balanced with good humor and as much infor-
mation as you want. Or simply enjoy the tastes. That is perfectly
fine with them.
As tasting room manager, Aaron Feaver says, “I want visitor’s
memories of the winery to be as much about their experience
here as the wines they taste.” These wines are pretty spectacular,

The 107 rooms of the 13th-century-styled castle containramparts, hand-painted frescoes, a torture chamber andlabyrinthine cellars amidst their 121,000 square feet, makingthe Castello a winery like no other anywhere in the UnitedStates. There’s even a chapel, too, and all this takes place insidea structure of imported European brick, wood and iron, as well
as more than 8,000 tons of Napa stone. As is to be expected, given the Sattui philosphy of wine,
there are lots of options – at least a dozen and a half at lastcount. These various offerings can be tasted as part of theGeneral Admission and Tasting or the Reserve Tasting, and wineand chocolate pairing is always an option, too, as isnon-alcoholic bottled grape juice for non-imbibers. Grapeseedoil and grapeseed flour are available for purchase. These arehealthy, antioxidant-rich products that are produced from theseeds of Castello’s wine grapes.
Touring options abound and definitely help to heighten the
experience. Reservations are likely required, so plan aheadaccordingly as you choose from a Tour and Tasting, Tour andReserve Tasting, Young Adult Tour, Royal Food and WinePairings in the Royal Apartment or Hiking Vineyard Tour. Eachtakes about two hours, including the wine tasting, and eachinclude barrel tasting in the Grand Barrel Room. owning and farming 45 acres in the Calistoga AVA
