Cherry Ripe Balls can be stored in the fridge for a few days, or stored in the freezer (they don’t freeze solid because of the condensed milk so can be eaten straight from the freezer).

Ingredients:

-1 Packet Milk Arrowroot Biscuits-6 Regular Sized Cherry Ripe Bars-1 Can Sweetened Condensed Milk-2 Tbs Cocoa Powder-Desiccated Coconut

Method:

1. Crush all Milk Arrowroot biscuits in the food processor until they resemble fine crumbs. Pour into a large mixing bowl. Next process the 6 Cherry Ripe bars and add to the biscuit crumbs in the mixing bowl.

2. Add the condensed milk & cocoa powder and stir to combine.

3. Roll mixture into balls (approx 5cm in diameter).

4. Roll all balls in a bowl of dessicated coconut (use your discretion as to how much coconut to use). Put all balls single level onto a tray or plate and refrigerate or freeze until set. Transfer to a container and store as desired.

*Tip: to dress them up, mini cupcake cases can be purchased to present them in when entertaining for single serves*

Ingredients1 heaped tablespoon self raising flour1 heaped tablespoon cocoa1 heaped tablespoon sugar1 and a half tablespoons milk

Topping:1/2 tablespoon cocoa1 tablespoon brown sugar1 tablespoon hot water

Method1. Mix together self raising flour, cocoa, sugar

and milk in a coffee mug (or other small microwave proof jug).

2. Sprinkle on top extra cocoa and brown sugar and carefully pour on hot water.

3. Cook in microwave for 30 seconds. (Mixture should be combined and cooked. If undissolved cocoa exists, zap for an extra 10 seconds.)

4. Pour into a bowl or add ice cream or cream to the cup.

Ingredients2 large beetroots, cooked & grated4 eggs1⁄4 cup rice malt syrup (add more for sweeter cakes)1/4 cup coconut oil, melted 1 teaspoon vanilla powder1 teaspoon ground cinnamon 1 teaspoon gluten free baking powder

Pinch sea salt1⁄2 cup raw cacao powder1 1⁄2 cups almond meal

Method1. Wash, top and tail the beetroots then cook

them by boiling in a pot of water until tender. Allow to cool before peeling and grating. You may want to use rubber gloves to keep your hands clean.

2. Preheat oven to 160°C and line a 12-hole muffin tray with baking paper or patty cases.

3. Place grated beetroot, eggs, rice malt syrup, coconut oil, vanilla, cinnamon, baking powder and salt in a food processor and blend all ingredients well until smooth.

4. Transfer to a bowl and stir in the raw cacao powder and almond meal until well combined.

5. Pour mixture into the lined tray and bake for 35 minutes or until a skewer comes out clean and the tops are slightly crusty. This will vary depending on your oven so check them after 25 minutes.

6. Cool slightly in the tray then transfer to a wire rack.

Chocolate Macadamia Biscuits are the perfect homemade gift as well as being scrumptious for those afternoon teas entertaining at home! Stack biscuits and tie up with a ribbon to gift. The drizzled chocolate looks gorgeous and professional!

Chocolate Macadamia Biscuits

Ingredients:-1 Cup Macadamia Halves-125g Butter, Softened-1/2 Cup Caster Sugar-1 Egg-1/2 tsp Vanilla Essence-1 tsp Ground Cinnamon-1 1/3 Cups Self Raising Flour-50g Milk Chocolate, to drizzle

Method:1. Preheat oven to 180 degrees Celsius (160 fan

forced). Place macadamia nuts on a lined baking tray. Roast for 3-5 minutes or until light golden brown. Put aside to cool completely.

2. Reduce oven to 160 degrees Celsius. Line 2 baking trays with baking paper.

3. Using an electric mixer, beat butter & sugar in a large mixing bowl until light and fluffy. Add egg, vanilla and cinnamon and beat until just combined.

4. Add flour & roasted macadamia nuts to the mixing bowl, and stir until well combined using a wooden spoon.

5. Spoon level tablespoons of mixture, approx 4cm apart, onto prepared trays. Bake for 18-20 minutes or until lightly golden. Cool on trays for 5 minutes then transfer to wire rack to cool completely.

6. Melt the chocolate in the microwave then drizzle over biscuits using a teaspoon. Set aside for 30 minutes while you enjoy licking the bowl & spoon, ah I mean until the chocolate on the biscuits are set! Enjoy

IngredientsBuckwheat sprouts1 cup raw buckwheat kernels2 cups filtered water for soakingPancake batter1 cup soaked buckwheat kernels, rinsed1 cup filtered water1 tsp saltCoconut or olive oilOptional: 1 tsp cinnamon

Pancake filling ingredients¾ cup walnuts1 tbs coconut (or olive) oil1 level tbs cinnamon¼ cup maple syrup (plus extra for drizzling)6 ripe bananas (not over-ripe)(one per pancake), sliced1 lemon, cut into wedges

Buckwheat sproutsSoak buckwheat overnight in the filtered water. In warmer weather, soak the buckwheat for a few hours then keep it in the fridge overnight to prevent fermentation.

Pancake batterPlace buckwheat kernels in a blender with the filtered water, salt (and cinnamon if using) and blend until smooth. For a thin crepe-like texture add more water.Heat a frying pan over a medium to high flame and add 1 tsp coconut (or olive) oil.Gently tilt the pan to evenly coat with oil. This way the pancakes won’t stick and will be lightly golden. Spoon batter into frying pan, tilting pan to form a round, even pancake.The pancake will begin to form bubbles as the underside cooks first. Flip when ready.Reduce the heat slightly if the pancakes begin to cook too quickly or burn. After flipping the pancake, allow the second side to lightly brown.Stack pancakes onto a plate and keep warm in the oven at 150°C (300°F). Once you have your stack of pancakes ready, remove from the oven and fill each with the following mixture Banana, cinnamon, maple walnuts and lemon pancake filling.

Sprouted buckwheat pancakes with banana, lemon & maple cinnamon walnuts Pancake Filling Method:

Sauté the walnuts in the coconut oil for 1-2 minutes. Add cinnamon and continue to sauté for a further 30 seconds or so. Push walnuts around in frying pan to sauté and brown. Add the maple syrup until walnuts have a thin, even coating, and sauté until sticky. Remove from heat to prevent walnuts becoming too candied and crunchy.Fill each pancake with slices of fresh banana, a squeeze of lemon, a drizzle of maple syrup and sprinkle with the cinnamon walnuts. Keep maple syrup bottle close to hand – you may NEED more! You can add raw or vegan ice-cream and make this dish into a wonderful dessert.
