Dining Experience
Welcome to the fifth edition
of Out and About, our
newsletter about Care with
Purpose in action at our
care residences.
In this newsletter, you’ll get to see a
snapshot of what we are achieving at
each of our residences with our Care
with Purpose care model with our
residents, staff, volunteers and families.
At Catholic Homes, we work on a new topic
each month. For November, our care
residences are focusing on creating a dining
experience for our residents.
The dining experience is all about creating a
positive, comfortable and dignified
atmosphere during meal times. This involves
ensuring residents are not rushed during meals
and can take their time to enjoy their meal and
socialise with other residents. Residents are also
given choices on what they would like to eat
and drink at each meal time with clearly
labeled items. The tables are beautifully set
with cloth napkins and glass drinkware to
create a dignified experience.

SERVITE VILLAGE
Around The World This month, the residents at Servite Village had
an exciting opportunity to trial Virtual Reality for
the first time! Virtual Reality is a simulation of a
three dimensional environment that can be
interacted with in a seemingly physical way.
Servite Village resident Dora Humphry
marveled at the statues in Gardens by the Bay
in Singapore, while Audrey Willis took a trip
down memory lane to her childhood home in
Dublin, Ireland. John Villiers visited Kununarra
where he used to work, and Kevin Williams
went swimming with dolphins underwater!
The Virtual Reality experience provided an
opportunity for our residents to travel around
the world in a realistic and tangible way, all in
the comfort of a chair. It also evoked past
memories, stories and their childhood.

SERVITE VILLAGE
Celebrity Heads The team at Servite Village are installing these
wonderful interactive wall boards around the
facility. Interactive walls provide opportunities
for our residents to be engaged in activities at
all times.

Off to Work Alice has been helpful in neatening up the baby
clothes, now we have a set of drawers to use.
Here is Gordon enjoying the new office corner
where Terry will be filing away our documents for
us. We can’t wait to see how it will turn out in the
coming months!
SERVITE VILLAGE
Resident of the
Month This month we celebrated our resident Agnes
Devlin! This is a new initiative organised by our
team at Servite Village where we celebrate
the life and history of one of our residents.
The residents enjoyed a lovely morning tea
while discussing the life history, interests and
hobbies of Agnes.
Agnes also made her famous gnocchi,
carefully shaping each one with a fork, which
the residents enjoyed for lunch.

Mosaic Masters This month our special achievement has been
to enjoy working out in the garden during the
nice weather.
We’ve refurbished our old courtyard into a
sensory garden with a variety of new plants,
hanging baskets and mosaics.
There’s been so many people who have helped
us out. Stephanie’s daughter arranged the
Mosaic materials and finishing’s, Maria put the
Mosaics together, Michael and Glenys planted
the plants and Carmela, Glenn, Jo and Harry
helped wash off the decorative stones.
Creating mosaics is a great activity for our
residents to use their fine motor skills. Why is that
important? Because this can translate to other
important everyday activities, such as using
cutlery for meals and using a toothbrush for
brushing their teeth.

Outdoor Paradise Refurbishing the courtyard has been a real
team effort, which has now paid off with the
beautiful sensory garden now in place.
Our residents are absolutely loving the space
which they use to spend time outside in the
courtyard to enjoy the sunshine and fresh
breeze, have outdoor lunches, gardening
and group activities.
If it looks like Apii and the residents are asleep
it’s only because we love to use the garden
for our new Mindfulness and Meditation
Group!
Outdoor areas that are filled with interest,
colour and activity provide sensory
stimulation via sight, smell, sound and touch.

TRINITY VILLAGE
Men’s Lunch A Hit
Gents at Trinity Village enjoyed fish n’ chips
(and a beverage) with Pavlova for dessert
while listening to the Beatles, a favourite
request! After lunch the gentlemen played
high card draw with our newest resident
Ray Routledge winning the pot.
Special mention to resident, Leita Etheridge
for helping us set up the tables beautifully
for the luncheon.

TRINITY VILLAGE
Artists in the House Take a look at these beautiful pieces of
artwork created by the talented students of
Mercy College.
Here are some more photos of the Trinity
Village residents unwrapping their gifts. Each
piece of artwork had a message from the
artist, sparking these great reactions.
The residents absolutely enjoyed showcasing
the artwork they received with each other.
A special thanks to the students, who'd be
proud knowing their art decorates our home!

TRINITY VILLAGE
Pinkies Up The ladies at Trinity Village enjoyed a lovely
Ladies’ High Tea this month.
Chef Mollie put on a delectable spread of finger
foods (savoury sausage role, pies, mini
sandwiches and mini cheesecakes). The ladies
were also offered their choice of a variety of
teas and or punch from our brand new punch
bowl.
The morning was spent enjoying one another’s
company while learning and reminiscing on the
topic of the punch bowl and high teas.
Special mention to Trinity resident, Shirley Barker,
who once again graced us with her talent for
flower arranging and table setting.
We love spoiling our residents with special
events, and so we will be hosting a Ladies’
High Tea every month.

ST VINCENT’S
Lesley’s Recipes
This month, the residents cooked and
prepared delicious mini quiches, a
personal recipe of St Vincent’s resident
Lesley Peacock.
Lesley used to run a catering company,
and has a vast knowledge about
cooking, nutrition and recipe ideas.
Needless to say, the mini quiches were
a crowd favourite at Happy Hour and
the residents enjoyed them greatly.
Lesley will be sharing one of her
personal recipes in this newsletter every
month, so keep an eye out for them!

ST VINCENT’S
Mini Quiches
Lesley’s Recipe Ingredients:
Puff pastry (optional)
1 egg, beaten
½ cup whipping cream
½ cup grated cheese - any
cheese that melts quickly -
mozzarella is excellent
any of the following:
Shredded chicken
Bacon, chopped & fried, or
bacon bits
Onion, chopped & fried
Mushrooms, sliced & fried
Spring onion
Cherry tomatoes, cut in half
Asparagus, chopped & fried
These are very easy to make. Puff pastry makes them much lighter than shortcrust. A
standard size muffin tin works for a snack or finger-food. Large muffin tins make each one
a whole meal.
Steps:
1. Lay out sheets of frozen puff pastry to defrost.
2. Have a muffin tin ready and with the rim of a glass cut out circles slightly larger than
the holes in the muffin tin.
3. Then with the base of the glass push the pastry circles down into each of the holes.
4. Cook for about 10 minutes at 200 degrees, watching that it doesn’t burn.
5. Remove from the oven and use the base of the glass push each pastry casing back
down into its hole again.
6. Spoon filling into each of the pastry casings. Add anything you like to the filling
mixture.
7. You learn as you go along which you prefer and what combinations of flavours
work best.
8. Turn oven down to 180 degrees and cook the mini quiches until the egg is set, that
is when you shake the tin the mixture no longer wobbles. Once again keep
watching so it doesn’t cook too long.
9. Serve and enjoy!

OCEAN STAR VILLAGE
Happy Hour Meet our barman, Ted Gumley!
Every Friday, Ocean Star Village resident Ted,
helps take orders and serve drinks for Happy
Hour. Ted begins with setting up the glasses on
the table and bringing out all the drinks.
He then goes on to ask every resident for their
order, prepares the drink and personally serves
it to them.
Job roles brings purpose and gives our residents
something to look forward to in their day. It
encourages the resident to continue to use skills
to remain independent and supports them to
feel needed and valued. Job roles recognises
our residents as occupational beings who are
complex and have different roles in life, not just
the role of “resident’.

Now that the weather is warming up, our
residents at Ocean Star are giving our
courtyard a makeover. Our residents hand
painted each pot and planted beautiful
flowers in each one. Watch this space as we
continue to transform our courtyard into a
stimulating and interactive area.
OCEAN STAR VILLAGE
Puzzle Maker Take a look at these wonderful handmade
puzzles of the beautiful dogs that visit our
facility!
Photos of Charlee & Chief and Budkis were
laminated onto wood, before being cut out
into pieces to create personal and familiar
jigsaw puzzles.
We found that our residents were more
motivated to complete the jigsaw puzzles with
the dogs they loved compared to other
generic puzzles.

CASTLEDARE VILLAGE
Balmoral
Makeover Balmoral has recently had a new
makeover!
With the help of Beryl and Win we
created some nice functional areas for
people to come and sit.
At the moment we seem to have a
garden and cooking theme happening
thanks to Melody. As you can see
Melody loves brightening up our tables
with floral arrangements she does daily.
It’s become a lovely area to enjoy
looking outside on a comfy couch with
family and friends; Bev and her family
friend enjoyed the first opportunity to
enjoy blanket and lounge set up.

Meet Lesley
Highlight an interesting quote (Heading 4)
NEXT EDITION
Monthly Topic In December, we will be focusing on room
service
St Vincent’s resident Lesley Peacock is one of
Catholic Homes’ most talented cooks yet.
Lesley was born and raised in Bunbury, Western
Australia and would go on to live a life full of
adventure and achievements. Lesley has worked
a variety of jobs in different fields throughout her
life.
In administration, Lesley worked as a receptionist
and telephonist at Bunbury Regional Hospital,
manager of the Bremer Bay Sports Club, and
personal assistant to two members elected to the
Gnowangerup Council.
However, Lesley’s passions lie in cooking and
hospitality. She recalls her experiences of cooking
for families at junior sports days at Bremer Bay,
working as the Cook Manager for P&O and
running her own catering company as the most
enjoyable and memorable.
Lesley now enjoys keeping her mind active, with
word puzzles, brain teasers, documentaries and
cooking shows.
