Before use Beforeassemblingyourmixer,besurethe
powercordisunpluggedfromthepoweroutletandthespeedcontrolswitchisinthe‘0’OFFposition.
1. Pressthe‘tilt’button,locatedontopoftheneckofthemixer.Whilethebuttonisdepressed,holdthehandleandeasetheheadofthemixerback,seefigure1.Themixerheadwilllockintothistiltposition,seefigure2.
2.Selectthedesiredattachments,depending
onthemixingtasktobeperformed:beatersforwhisking,mixingandbeating,ordoughhooksforkneading.
Inserting the beaters3a.Beaterscanbeinsertedineithersocket,
asthebeatersareidentical.
Inserting the dough hooks3b.Toinsertthedoughhooks,placethe
doughhookwiththesmallwasherintotheleftsocket.Placetheotherdoughhookintotherightsocket.
Note:Ensurebothbeatersordoughhooksarefullyinsertedintothecorrectsocketsoryourmixingresultsmaybeaffected.
4. Placethe3litremixingbowlontotheturntableandlockintoplace,seefigure3.
5.Tolowertheheadofthemixerandbeaters/doughhooksintothebowl,depressthe‘tilt’button,holdthehandlewith the other hand and ease the head ofthemixerdown.A‘click’willindicatewhen the head has reached the correct position,seefigure4overpage.

3. Whenmixingiscomplete,turnthespeedcontrolswitchtothe‘0’OFFpositionandunplugthecordfromthepoweroutlet.
4. Holddownthe‘tilt’buttonandeasetheheadofthemixerbackuntilthemixerheadislockedintothetiltposition,seefigures1and2.
5.Toremovethebeaters/doughhooks,placefingerslooselyaroundthespindlesandpresstheejectbuttonlocatedatthefrontoftheheadofthemixer,seefigure5.

ShorteningsTheword,shortening,isatermusedtodescribeanyoneofthesolidfats(animal,vegetableoramixture)whichissuitableforgeneraluse.Somearemoresuitedthanothersforparticularrecipesandarethereforespecified.Wherethetermshorteningisused,selecttheonemostpleasingtoyourpalate.Itispossibletomixorsubstituteaccordingtoyourrequirements.Examplesinclude;Cottonseedoilandsoybean.
ButterButterismadefromapproximately80%milkfat(cream)andischurnedoveraperiodoftimetoproduceasolid(butter).Butterisusedtostabilize,texturizeandaddflavour.Buttermaybesaltedorunsalted,itisbesttouseunsaltedbutterforcakebaking.Clarifiedbutterhasthemilksolidsandsaltremoved,whichisidealforpastrymakingasitcanbeheatedtohighertemperaturesthanregularbutter.
Note:Margarinecanbeusedasasubstituteforbutter.Itismadefromvegetableoils,thereforeitmayaltertheendresult.Therearevarioustypesofmargarines,someofthesearebutter-margarineblendsandfatreduced.
YeastAraisingagentusedindoughs.Yeastisamicroscopiclivingorganismthatgrowsrapidlyinsuitablewarm,moistconditions.Theyeastplantfeedsonsugarandexpelscarbondioxidewhichexpandstheglutenframework.Whenfoamingyeastdonotallowthetemperaturetoexceed46°C,asthispreventskillingtheyeast.A26˚C-30˚C,draftfreeareaismostsuitableforthegrowthofyeastduringtherisingprocess.BothDryYeastandfreshCompressedYeastmaybeusedintherecipesincludedinthisbook.(NB.7gofdryyeastisequivalentto15gofcompressedyeast).
SubstitutesIfyoufinditnecessarytosubstituteingredientsinarecipe,checkthefollowingalternatives:
1 cup self raising flour =1cupplainflourand2teaspoonsbakingpowder.
1 cup plain flour and 1 teaspoon baking powder =1/2cupeachofplainandselfraisingflour.
1 tablespoon arrowroot =1tablespooncornflour.
Sultanas =equalmeasureofanyotherdriedfruit.

Wet IngredientsPlacethemeasuringjugonalevelsurfaceandcheckthemeasurementateyelevel.

Cheese and BreadcrumbsPackgratedcheeseandsoftbreadcrumbsintothecuppressinglightlytoobtainbestresults.
Fats and OilsThesimplestmethodtomeasurebutters,margarinesandshortingistocutorspoontherequiredamountfromtheblockorcontainerandthenweighitusingmetricscales.

1. Beforestarting,readtherecipecompletely.
2. Refrigeratedingredients,iebutterandeggsshouldbeatroomtemperaturebeforemixingbegins.Settheseingredientsoutaheadoftime.
3. Beforestartingyourrecipepreheatoven tobakingtemperaturerecommendedin the recipe.
4. Assembleallingredientsandutensils near the mixer.
5. Toeliminatethepossibilityofshellsordeteriorated/offeggsinyourrecipe,breakeggsintoaseparatecontainerfirst,thenadd to the mixture.

Donotoverbeat.Becarefulthatyouonlymix/blendmixturesuntiltherecommendedtimespecifiedinyourrecipe.Foldindryingredientsonlyuntiljustcombined.Alwaysusethelowspeed.Atanystageofmixing,overbeatingcancausetoughness,closetexture,lackofrisingorexcessiveshrinkage.Climaticconditions,seasonaltemperaturechanges,temperatureofingredientsandtheirtexturevariationfromareatoareaallplayapartintherequiredmixingtimeandtheresultsachieved.
10.Allrecipeshavebeenkitchentested,butshouldyoufinditnecessarytovarytheingredientsorthesizeofthetinetc.allowforavariationincookingtime.Alwaystestfordonenessinbakedfoodsbeforeremovingfromtheovenorthecookingappliance.
11.Duringmixing,ingredientsmaysplashtothesidesofthebowl.Toscrapethebowl,turnthebeatersandbowlControlDialstothe‘OFF’positionandusingaplasticorrubberspatula,scrapethebowl.NEVERUSEAKNIFE,METALSPOONORFORK,asthismaycausedamagetothebeatersandbowl.Alightscrapingaftertheadditionofeachingredientassistsinachievingefficientmixing.

Step 1: Preparing the yeastForthedryyeasttobeactivateditneedstoferment.Todothisplacewarmmilk,sugarandthetepidwaterintoabowl,adddryyeastandmix.Standinawarmplaceuntilmixturestartsfoamingiebubbles.Thisprocesswilltakeapproximately10minutes.Besurenottooverheatthemilkashottemperatureswillkillanddeactivatetheyeast.

1.Placethedryingredientsintothemixingbowlandpositionontotheturntable.Turnthespeedcontrolswitchtospeed1andthebowlcontroldialto‘LO’.Begintograduallyaddtheliquidingredientstothebowl.
Note:Youmayfinditusefultousearubberorplasticspatulatoscrapethedryingredientsfromthesideofthebowlduringthekneadingprocess.Donotusethespatulanearordirectlybehindthedoughhooks.Useonlyarubberorplasticspatulaandkeepitwellawayfromthemovingparts.
Safety Tip:Donotattempttofeedthedoughintothedoughhookswithyourhands,spatulaoranyotherutensilwhilethemixerispluggedintoapoweroutletorinoperation.
2.Astheingredientsstarttoformaball,scrapedownthesidesofthebowlifnecessarywithaplasticspatulaandremoveyourdough.
Safety Tip:Donotusethemixerneartheedgeofabenchortabletopwhereitmayfalloff.
3.Dependingonwhatrecipeyouaremaking,generallyyouwillneedtoaddmanualkneadingtoyourdough.Placedoughontoawellflouredworkbenchorsurfaceandkneaduntildoughissmoothandelastic.Thisshouldtakeapproximately10-15minutes.
4.Afterkneadingplacedoughintoalargewellgreasedmixingbowl.Placethebowlinawarm,draft-freeareaandcoverwithalightclothuntilthedoughdoublesinsize.
5.Plungefistintothecentreoftherisendoughtopunchoutexcessair.Foldouteredgesintothecentreandturndoughoutontoalightlyflouredboardforshaping.Placedoughintotinsforbaking,orcutandshapedoughformakingbuns,rolls,etc.
6.Finalrisingofdough.Coverthedoughwithalightclothandplaceinawarm,draft-freeareauntildoubledinsizeagain.Glazeandbake.

Reasons for Poor Results
Sponge Cakes ShrinkUnbalancedingredients,overbeatingofeggwhites,suddenchangesoftemperatureordraughtwhentakingfromtheoven.
Cakes Do Not RiseMostlyduetogrossoverbeating,butcanalsobecausedbytoohotanovenduringthefirstpartofcooking.
Cakes Sink in the CentreToomuchfat,raisingagent,liquidorsugar;toolittleflour;undercookingorslowcooking.
