4X4 CULINARY MINNESOTA WINE SERIES The Arboretum and the Minnesota Grape Growers Association invited leading area chefs and wine experts to sample wines submitted as their best by Minnesota wineries. Four top Twin Cities chefs were asked to select four of their favorite Minnesota wines, and will create a four-course menu to pair with their selections. Join other food and wine lovers for evenings fi lled with the fi nest fl avors from Minnesota gardens and vines. Watch the chef prepare your meal and savor the selected wines. It is possible to bypass the garden seed industry and save your own seed from year to year... if you know what you need to do! In this special collaboration with the Seed Savers Exchange (www.seedsavers.org), you will learn the hands-on techniques needed for harvesting your seed. For example, wet seeded fruits, such as tomatoes, squash, cucumbers, and melons, need to be fermented before harvested. You will learn how to thresh and winnow for dry-seeded fruits such as beans, brassicas, and peas. You will also discuss how to store your seeds for this important part of creating your own perpetual garden with Shannon Carmody, who has been the public programs manager at Seed Savers Exchange since 2009.

Work with renowned horticulturalist Julia Bohnen, who will share the wisdom of her extensive experience gardening with native plant species. Create a landscape that tastes as good as it looks! You will discover how to create the edible landscape with a variety of plants, from the traditional to the unusual, with Emily Tepe, who is a research associate at the University of Minnesota Department of Horticultural Science and the author of the new “Th e Edible Landscape” (Voyageur Press, 2013). Tepe believes it’s unfair that tomatoes, kale and their savory companions are so often relegated to a hidden corner of the yard, jammed into stick-straight rows. Th ese plants can be beautiful, if they’re just given the chance. You will be inspired to grow more of your own food, no matter how small their space, and to do it in a way that looks spectacular! garden.



THE SCIENCE OF GARDENINGThe Science of Gardening is a new series of four classes

with accomplished horticulturalist and former U of M instructor Jim Calkins. Each are designed to be valuable

on their own, but when taken together, will give you the foundation of skills and understanding to take your gardening

to the next level. The classes are designed to make sense of the sometimes daunting college-level science of plants, making

lessons accessible to a full range of skill levels. Through a combination of hands-on lab and classroom presentation, you will

take home your “experiments” and be ready to embark on additional projects. Classes in this series are appropriate for ability levels from

new gardeners to master gardeners, hobbyists, professionals, and students looking to bolster their college science savvy.

Understand the biology of seeds, germination techniques, scarifi cation, stratifi cation and more. Work with experienced horticulturalist Jim Calkins, an acclaimed expert in propagation, to de-mystify how to use seeds to grow your plants, and take home several seed-based promises for spring growth.

Dividing your plants is only one way to asexually propagate your favorite plants. Learn how to make cuttings, layering and the role of specialized structures in certain plants. Learn from expert horticulturalist Jim Calkins how to propagate plants through this fascinating method of reproducing plants, and take home the results of your hands-on learning.

Gain the understanding of the diff erent methods of grafting and why some grafts work and some don’t. Much of the class will be spent on practicing and making a number of grafts with various plant materials. Work with expert horticulturalist Jim Calkins, and return home with your own grafted plants.

If you know your soil, you will know your garden. Make this your best growing season yet, from the soil up. Work with horticulturalist and former U of M instructor Jim Calkins to learn about the essentials of the earth in which you grow your garden. What are the components of soil? What lives in it? What do you want or need to have in it for the best possible garden? Examine how to enhance the qualities of soil with water, compost and mulch. You will have an opportunity to have your own analyzed.

PHOTOGRAPHYImmerse yourself in 1300 acres of rich subject matter, dramatic color, open spaces and abundant wildlife to capture stunning nature photographs. With the Arboretum as your inspiration and your laboratory, you will learn tips and techniques from renowned photographers. Your close-to-home photographic excursion awaits.

Participation in a photography workshop includes an invitation to participate in the Student Fine Art and Photography Exhibit and Sale in early December 2011 in the MacMillan Auditorium. Unique to the Arboretum, this holiday-season sale will feature greeting cards, prints, framed and unframed originals, and other art and gift items by 2011 Arboretum workshop participants. Media represented include watercolor, oil, pastel, drawing and photography.

You will photograph images found in nature throughout the Arboretum, and learn how to use them to create powerful self portraits. Instructor Jason Huntzinger

is best known for his atmospheric images of Duluth. After this workshop, your concept of a photographic self-portrait will never be the same. You will investigate

the idea of the photographic equivalent, concentrating on the work of Minor White, widely considered one of the great photographers of the 20th century.

Capture the Arboretum’s incomparable fall colors under John Gregor’s expert instruction (www.coldsnap.com). With a very small group, allowing for abundant personal attention, you will combine classroom training with fi eld exploration to help you see better pictures, capture images in raw mode, use proper white balance, fi ne-tune compositional skills and exposure, and address post-processing concerns. You will learn how to assemble a body of photographic work and prepare images for exhibition. Bring a digital camera and a USB-card reader for your camera. A laptop and fl ash drive are highly recommended, but not required.

Winter is one of accomplished photographer John Pennoyer’s favorite seasons for shooting the moon and night sky (http://www.impressionsofnature.net/), and this special photography session occurs on the evening of a full moon rise. Th rough tailored instruction, Pennoyer will discuss all aspects of winter photography: how to dress to protect yourself and your gear from the elements, winter light, correct exposure for winter landscapes, and shooting in very cold weather. You will spend plenty of time capturing winter landscape and full moon images on the grounds of the Arboretum.

Once the fi rst snow arrives many photographers put their camera away and don’t bring it outside again until spring. In this class, learn what can happen to readily available imaging media and what to do to keep them safe and accessible for generations to come. David Kopperl, long-time Arboretum volunteer, spent more than 30 years with Eastman Kodak Company predicting and assessing the light and album stability of processed photographs and was awarded a Technical Academy Award in 1999.

In the Four Seasons of Antonio Vivaldi, only two seasons are portrayed as pleasant: spring and autumn. What made autumn so delightful to him was the harvest of grapes to make wine. Th e concerto includes the cleverest depiction of drunkenness ever conceived in a musical score (and also the eff ects of drunken sleep). With acclaimed musicologist and pianist Daniel Freeman, Ph.D, you will explore how Vivaldi evokes a fox-hunting scene—the subject of the fi nal movement. Th e class will also include selected examples of music by Romantic-era composers that evoke aspects of the autumn season in the garden and countryside.

the countryside. Ludwig van Beethoven’s Symphony No. 6 of 1808, designated “Pastoral” by the composer himself, includes a narrative program in which he

brings to life just such an excursion out of Vienna. With acclaimed musicologist Daniel Freeman, Ph.D., you will take a journey through these musical depictions
