CHUPPAL LAMB KARI (Leg of lamb cubes skewered and cooked in a spicy, flavorful tamarind curry.
Specialty: Tamil Nadu, India)
The base curry is prepared by wet grinding whole spices like cinnamon sticks, cardamoms, cloves, black
peppers, coriander, fenugreek seeds, ginger, tamarind, red onions, garlic and coarsely chopped
tomatoes. Once the base curry is ready the skewered lamb is sautéed slowly over a medium heat.
CHETTIAR LAMB (Leg of fresh lamb cubes cooked in ginger flavored curry sauce. Specialty: Tamil Nadu,
India)
At first, the cubes of fresh leg of lamb meat are marinated in the mix of turmeric and ginger paste and
kept aside for a couple of hours. The base is prepared with cloves, roasted Urad daal (lentil) powder,
black pepper, fennel seeds, mustard seeds, cinnamon, red onions, garlic and tomatoes.
DUM KA GOSHT (Leg of fresh lamb cubes in the curry prepared from ground lamb, tomatoes &
onions.Specialty: Hyderabad, India)
Naturally grown, fresh lamb’s leg is first cut into cubes and rubbed with spices like turmeric, dry
coriander, cardamom powder, black pepper and fresh paste of garlic and kept aside for a couple of
hours. The heat is reduced and the pot is covered with a very heavy lid and sealed with wheat dough
around it so that no aroma is lost with the steam.
ACHAARI MURAGH (Boneless free-range chicken sautéed in a fennel, mustard and fenugreek seeds
flavored sauce. Specialty: Hyderabad, India)
The chunks of free-range chicken are sautéed with the blend of mustard oil to evaporate any moisture.
The base is prepared separately in a heavy iron wok called kadhai, with red onions, garlic, ginger, cumin
seeds, onion seeds, yellow mustard seeds, paste of raw mangoes, coriander seeds and many other
spices. The previously tempered chicken is added to the base and sautéed until well cooked.
CHICKEN CHETINAD (Boneless free-range chicken cooked in coconut; curry leaves & mustard seeds
flavored curry. Specialty: Tamil Nadu, India)
The marinated chicken is tempered with cracked black peppercorns, fennel seeds, mustard seeds, curry
