MarkyMark Beef Rump illet SteakFollowing in his blaze of glory after being
crowned San Pellegrino World Young Chef of the Year, Mark Moriarty tells us how it feels to be world number one and what’s next.

It isn’t easy to go and compete on a world scale against much bigger countries with bigger teams and support, but we went over with our small team and we beat all of them, and I am very thankful.”
“The competition was a great experience. I said win or lose, I was just going to really enjoy myself. I mean how many 23 year olds can say that they’ve not only represented Ireland but the UK as well in a world competition? I was and am feeling pretty good!”
“When I’m creating a dish, the process always starts with asking myself what hasn’t been done before and then when I have an idea I go through a lot of trial and error. There is no point in being unique if it’s no good. It is all about the story behind the dish too, but at the end of the day I look at; what would I like to cook, what tastes really good, and what would I want to eat more of every time I try it. That’s the creative thought process behind it.”
“For the next year, I have an ambassador role as the San Pellegrino World Young Chef of 2015, which involves a lot of travelling and I have a number of events coming up which are about representing Irish food abroad and showcasing it. I am also continuing to do my pop-ups – The Culinary Counter – I have one in Selfridges next, then in Christchurch Cathedral in October and in Melbourne in November. I am also going to bring it around the world and do 12 pop-ups in 12 different cities in 2016.”
“I just want to focus on the next 12 months and do the best job I can while I hold the title and being an ambassador for Irish food. When I hand over the title then I’ll see what opportunities there are at that point and take it from there. Who knows?”

Rump Fillet of Irish Nature Beef with salt baked parsley root, horseradish & shallot
Ingredients:
500g Rump Fillet2 parsley roots, peeled200g salt500g rye flour150-200ml egg white200g fresh horseradish1 bag washed spinach, picked1 box flat leaf parsley, picked1 litre cream4 shallots1 clove garlic100g butterLemon juiceSaltPepperBeef Jus, to garnish
Method:
1. Cook the beef rump in a water bath at 54˚C for 50 minutes. Remove and roast in a hot pan until brown on all sides. Rest for 10 minutes and then carve.2. Mix the salt and rye flour together and bind in a mixer with the egg white. This is your salt dough in which to bake the parsley root. 3. Peel the parsley root into a natural shape wrap in the dough. Cook this at 180˚C for 45mins until softened and set aside for service.4. Blanch the parsley and spinach and refresh in iced water; squeeze out excess water. 5. In a pot, soften some shallot and garlic in butter, before adding the cream and reducing by half. 6. Add the blanched spinach and pars ley to this and blend to a smooth purée. Season and set aside for service.7. Keep some parsley leaves and raw shallot rings back. Dress these in some light dressing for garnish.
To serve:
1. Place the warmed purée onto a hot plate.2. Warm the salt baked parsley root in the oven; grate some fresh horseradish on top of this and build the parsley and shallot salad on top; place on the plate.3. Once the meat is rested, carve it, season the exposed meat and place on the plate along with some beef jus.

Wild Irish Game is the longest established large and small game processing company in Ireland. Established in Glenmalure, Coun-ty Wicklow in 1997, the company remains totally Irish owned and family run. From the outset, founders Michael Healy and his late wife Jane built a firm reputation for unrivalled standards of excellence, con-sistency and dependability with suppliers and customers alike. Joined in later years by the next generation, in 2014 the Healys joined forces with the Doyle family of Ballymooney Foods, expanding the scope of the business while retaining the same level of personal attention and professional integrity as before.
“Pallas are a phenomenal company to work with; they have the customer base and the transportation to get around the country,” said Michelle Healy, head of sales for Wild Irish Game and Michael’s daughter. The opportunity came around to work with Pallas when they came down and saw us and said they wanted to get our product out to their customer base. The suggestion was made three years ago that I join the Pallas Food reps to go to their customers
base as the game specialist and promote our product and answer any customer questions.”
“We mostly supply to high-end restaurants, but we do also offer affordable products to other restaurants, hotels and cafés who want to keep their costs down, but while offering their customers something differ-ent as a special on the menu, for example, our venison sausages,” explained Michelle.
“Venison is probably the favourite game meat, followed by wild pheasant. Some of our customers are michelin starred chefs and they will use some of our stronger products like woodcock, snipe or grouse, which have more intense game flavours, but they have the culinary skills to bring out the best and customer base that enjoys it.”

addedValueGammon is a versatile ingredient that can add great value to your menu.Here are some interesting cooking ideas to make the most of your gammon.
The traditional way Weigh your meat to calculate cooking times. Put the meat in a large pan, cover with cold water and bring to the boil. Cook for 30 minutes per 450g/1lb. Skim any white froth off that comes to the surface as it cooks. Drain, reserving the stock if you wish to use it, and leave to cool a little. Remove the top layer of skin, leaving a thin layer of fat around the meat. Score the fat, then brush with the glaze of your choice. Place in a roasting tin and bake at 220ºC/200ºC fan for 20-30 minutes (based on a 5kg ham) or until the glaze is golden.
The Spanish wayRepeat above instructions, but score the skin in a diamond pattern and pierce the centre of each diamond with a clove. In Spain they often glaze the gammon with quince paste.
The slow wayDon’t pre-boil your gammon and instead slow cook it. Glaze your gammon with a sticky sauce, like smokey barbecue or honey and mustard, and slowly cook it in the oven for four hours until extremely soft and tender.

Here are three different ways to use flour tortillas.
1 Light-base pizzas Simply place the flour tortilla on a baking tray, add your pizza toppings of choice and cook in a hot oven until the edges are golden, approximately 10 minutes.
2 Mexican LasagnaInstead of Bolognese use chilli con carne, instead of lasagna sheets use flour tortillas, and layer it up and top with cheese. You can also add salsa and guacamole as layers or serve on the side.
3 Baked Tortilla Chips Cut the tortillas into pyramid shaped chips. Place on a baking tray and sprinkle with the desired seasoning (chilli, paprika, salt and pepper). Bake in a hot oven util crispy and golden and serve with a dip (hummus, sour cream & chive, guacamole).
