Muga Reserva, Rioja 2015Traditional Rioja, reliably delivered by Muga. 2015 was an outstanding vintage here, as demonstrated by the youthful fruit, fi rm but ripe tannins and baking-spice complexity which can handle piquant stuffi ng or sides. Red Wines for Duck and GooseHigh in fat and big on fl avour, these demand bright acidity to underpin the fruit concentration also needed to do fowl justice. Italy, with its distinctive dryness and lovely opulent fruit, scores well.

Aglianico del Vulture Armand, Alovini 2016A Wine Champion in our blind tastings this year, this brooding delight from a beautifully balanced vintage upholds aglianico as southern Italy’s greatest grape variety. Crozes-Hermitage Domaine de Thalabert, Paul Jaboulet Aîné 2013An icon of the northern Rhône, rightly held in the same regard as La Chapelle by Jaboulet owners, the Frey family. This is densely packed and concentrated with black fruit and well-judged oak from 500-litre casks which favour fruit over wood. Outstanding now, but famously ageworthy. Drink now to 2028. 13%ref CT-RH38431£26 bottle | £312 dozen

Red Wines, Red Meat Honey glaze and clove studs makes a festive ham a tricky customer, but a red that packs plenty of lively, insistent fruit and spicy undertones should cope. Beef, lamb and pork, whether simply cooked or spiked with exotic fl avours, have just two demands – concentration and grip.

Red Wines for Fish or Vegetarian DishesIt’s not colour but weight that ensures harmony between plate and glass: bright, medium-bodied reds lift oily fi sh and the earthy fl avours of seasonal fungi, roots and pulses too.

Geyerhof StockWerk Zweigelt, Kremstal 2017This Austrian classic has a hint of violet among its bright, juicy, crushed red-fruit fl avours, and a twist of blackcurrant and spice which will add a vivacious note to baked gammon. A great Boxing Day staple too. Drink now to 2021. 12%ref CT-AA2651 s£12.95 bottle | £155 dozen

The Society’s Exhibition McLaren Vale GSM 2015Made exclusively for us by d’Arenberg’s peerless Chester Osborn, the time-honoured and ample-bodied triumvirate of grenache, shiraz and mourvèdre is pitch-perfect with a saddle of venison, leg of lamb or spiced gammon. Drink now to 2022. 14.5%ref CT-AU19671 s£13.95 bottle | £167 dozen

Susana Balbo Private Edition Blend for The Wine Society 2016Balancing the fi rmness of petit verdot, blackcurrant fruit of cabernet sauvignon and savoury cedar notes of cabernet franc, this bold Argentine respectfully suggests a prime rib of beef. Decant for a couple of hours before serving. Drink now to 2022. 13.5%ref CT-AR3631£13.95 bottle | £167 dozen

Marqués de Casa Concha Etiqueta Negra DO Puente Alto Cabernet Sauvignon 2016Exclusive to us, a sophisticated, cedary and elegant blend of cabernet sauvignon (60%), cabernet franc (32%) and petit verdot (8%), grown at high altitude and matured for 16 months in barriques. A versatile Chilean red for mains and cheeseboards. Decant. Drink now to 2033. 13.5%ref CT-CE10311£16.50 bottle | £198 dozen

Gigondas Première Cuvée, Cave de Gigondas 2015A full-bodied, savoury red Rhône that has gained complexity and suppleness after a few years in our cellar. Pair the plummy, spicy fl avours with pigs in blankets or spicy sausage rolls and samosas. Drink now to 2021. 15%ref CT-RH53891£17 bottle | £204 dozen

Rosso di Montalcino, PoggioAntico 2016Ripe, spicy and brimming with youthful fruit, this baby Brunello is a delightful preview of a great vintage, eager to please and charming but with time in hand. If you can’t wrestle a Tuscan wild boar, try a stuffed shoulder of good pork. Decant. Drink now to 2021. 14%ref CT-IT24721£24 bottle | £288 dozen

Chinon ‘Le Logis de la Bouchardière Les Clos’, Domaine Serge et Bruno Sourdais 2015From an 80-year-old vineyard, a strikingly concentrated, but eminently drinkable cabernet franc for whole fi sh; or vegetable gratins. Drink now to 2024. 13%ref CT-LO13771£12.50 bottle | £150 dozen

Sancerre Rouge, Domaine Serge Laloue 2017This delicate Loire pinot noir is the last word in elegance, with precise red-fruit fl avours that will lift the unctuous fl esh of poached salmon or the richness of creamy wild mushrooms packed into a brioche bun. Drink now to 2023. 13%ref CT-LO15091£18.50 bottle | £222 dozen

Slow Wine: Reds for ContemplationSome wines hit the palate running, slip down effortlessly and take their leave: others need to be savoured slowly. Decant these two for a couple of hours in advance and give yourself time to enjoy their evolution in the glass.

Château Citran, Haut-Médoc 2010Like the peacock on the label, this is claret to grab your attention and retain it, while its elegance and complexity kick in. Generous and long, and lifted by a refreshing blood-orange tang and savoury edge it’s a blend of 55% merlot, 42% cabernet and 3% cabernet franc, from the outstanding 2010 vintage. Drink now to 2024. 13.5%ref CT-CM23141£24 bottle | £288 dozen
